SLOW COOKER BLACK BEAN AND KIELBASA SOUP



Slow Cooker Black Bean and Kielbasa Soup image

A hearty soup recipe with dried black beans and kielbasa.

12 oz. pkg. kielbasa, sliced
cooking oil
1 lb. dried black beans (soaked overnight, see below)
1 small white onion (diced)
2 carrots (diced)
2 celery stalks (diced)
1 red bell pepper (diced)
1-2 jalapenos (diced)
2 heaping Tbsp. minced cilantro
2 garlic cloves (minced)
1/4 tsp. pepper
1 tsp. oregano
1/2 tsp. cumin
3 chicken bouillon cubes
16 oz. jar salsa
7 cups water
1 bay leaf

Steps:

  • Soak the beans overnight (at least 8 hours) in water, or use the quick soak method.
  • After the beans have soaked, drain them and add to the slow cooker.
  • Set a medium sized skillet over medium high heat on the stove top. Add a bit of cooking oil. Add the sliced kielbasa and brown them on both sides. Add to the slow cooker.
  • Add the remaining ingredients to the slow cooker. Stir.
  • Cover and cook on low for 8-9 hours without opening the lid during the cooking time.
  • Remove bay leaf and serve.
  • Enjoy!

1/2 package (20-oz size) 15- or 16-dried bean soup mix, sorted and rinsed
1 package (16 oz) smoked kielbasa sausage, cut lengthwise in half, then cut crosswise into slices
2 cartons (32 oz each) Progresso™ chicken broth (8 cups)
4 medium carrots, chopped (2 cups)
3 medium stalks celery, chopped (1 1/2 cups)
1 large onion, chopped (1 cup)
2 tablespoons tomato paste
1/2 teaspoon salt
1 teaspoon dried thyme leaves
1/2 teaspoon pepper
1 can (14.5 oz) diced tomatoes, undrained

Steps:

  • In 5- to 6-quart slow cooker, mix all ingredients except tomatoes.
  • Cover and cook on Low heat setting 8 to 10 hours.
  • Stir in tomatoes. Increase heat setting to High. Cover and cook about 15 minutes or until hot.

I love Black Bean Soup, but had never made it for my husband, I wasn't sure if he would like it or not. But he ate more than I did, he loved...

2 lb dry black beans,washed & picked through for sand pebbles
4 stalk(s) celery, chopped
2 large onions, chopped
6 clove garlic, minced or chopped
4 large carrots, peeled & chopped
2-4 small sweet peppers, chopped
2 1/2 lb smoked kielbasa sausage ( or choice of your favorite)
2 tsp coarse black pepper
1 1/2 tsp kosher salt, or to taste
1 Tbsp cumin
1 Tbsp mesquite fijata spice mix (or liquid smoke if desired)
garnish- chopped onion, salsa, sweet peppers, shredded cheddar cheese, sour cream, or jalapeno peppers as desired
2 bay leaves (remove before serving)

Steps:

  • 1. Pick through dry beans, for rocks or sand pebbles & debris, then wash and add to a large pot, cover with water, cover with a tight fitting lid, and bring to a rolling boil, and boil for about 15 to 20 minutes, then lower heat to a simmer and continue to cook until beans are soft and tender, about 3 1/2 hours to 4 hours till liquid is thick and rich. Add more water as needed to keep beans covered.
  • 2. As beans begin to come to a boil, chop all of the vegetables, you can also add jalapeno peppers if desired, but we do not care for spicy food in our household, so I didn't use them. I had almost 8 cups of chopped vegetables when I was done.
  • 3. Add the chopped vegetables to the pot, and continue to cook over low heat.
  • 4. Add all of the spices, stir and continue cooking. Stirring occasionally to prevent beans from sticking.
  • 5. During the last half hour or so of cooking, cut up the smoked polish Kielbasa, and add it to the soup pot. Cover with a lid and continue to cook for about 20 to 30 minutes, stirring occasionally.
  • 6. Ladle and serve with your favorite corn Bread or Tortillas, and add your favorite garnishes. Enjoy.

2 tablespoons vegetable oil
2 links andouille sausage (6 ounces), cut into 1/4-inch-thick slices (1 heaping cup)
1 bunch scallions, sliced (1 cup)
1/4 cup thinly sliced celery (from 1 stalk), plus leaves for serving
1/2 teaspoon dried thyme
1 can (14.5 ounces) diced fire-roasted tomatoes with chiles, such as Muir Glen
2 cans (each 15 ounces) black beans
Kosher salt and freshly ground pepper
2 tablespoons sour cream, for serving
Watercress, for serving (optional)

Steps:

  • Heat oil in a medium saucepan over medium-high; add sausage and cook, stirring, until crisp, about 3 minutes. Transfer to a plate. Add scallions, celery, and thyme to pan; cook until tender, about 4 minutes. Stir in tomatoes; bring to a boil and cook 3 minutes. Drain and rinse one can of beans, leaving the second in its liquid; add both to pan with 1 cup water.
  • Return to a boil, then reduce heat to low and simmer 15 minutes. If desired, remove 1 cup of mixture and purée in a blender or food processor until smooth, about 15 seconds, then return to pan. Season with salt and pepper.

4 cups (2 pounds) dried black beans
2 celery ribs, chopped
1 medium onion, chopped
1/2 cup chopped green pepper
1 tablespoon canola oil
3 garlic cloves, minced
2 smoked ham hocks
7 cups water
2 cans (4 ounces each) chopped green chilies
2 teaspoons chicken bouillon granules
1/2 teaspoon sugar
3 bay leaves
1 teaspoon chili powder
1 teaspoon ground cumin
Pinch pepper
1 pound fresh kielbasa or Polish sausage links
1 can (14-1/2 ounces) diced tomatoes, undrained

Steps:

  • Soak beans according to package directions. Drain and rinse beans, discarding liquid., In a Dutch oven, saute the celery, onion and green pepper in oil until tender. Add garlic; cook 1 minute longer. Add the beans, ham hocks, water, chilies, bouillon, sugar and seasonings. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until beans are tender., Meanwhile, in a large skillet, cook kielbasa until a thermometer reads 160°. Cut in half lengthwise; slice into 1/4-in. pieces. Add kielbasa and tomatoes to soup., Remove ham hocks; cool slightly. Remove meat from bones; cut into cubes. Return to soup and heat through. Discard bay leaves.

1 pkg kielbasa, smoked or polish sausage (if you want a healthier version, its fine to use turkey sausage-i do!)
1 medium onion, quartered and sliced thin
3 cans beans- any kind will do...a mix is even better (i like black eyed peas, small butter beans and either pinto or northern beans)
1 Tbsp brown or spicy mustard
1/2 to 1 Tbsp cider vinegar (to taste-to give it a little tang)
montreal steak seasoning...or salt,pepper and a little garlic powder

Steps:

  • 1. slice sausage links in half lengthwise then cut into 1/2 inch chunks
  • 2. slice onion as indicated in ingredient list
  • 3. spray either crockpot or medium to large saucepan or soup pot with cooking spray; add sausage and onion
  • 4. pour in the beans, liquid included; add vinegar and mustard- stir to combine (if this is too sour, you can add a tiny bit of sugar to take the edge off); stir in Montreal or other seasonings
  • 5. add just a bit of water to make more 'stew' like but not like a brothy soup- just enough to separate the ingredients a little bit- DO NOT cover the mixture with water
  • 6. turn crockpot on (low if you'll be gone all day, high if you need it in a couple hours) or cook on stove-once it gets to a boiling point, turn heat down and let simmer until flavors blend...re-season to taste
  • 7. ** if you prefer a thicker stock once its done cooking, add a bit of cornstarch/water or use Wondra/gravy flour to thicken....Enjoy!

  • Place a large, heavy-bottomed stockpot over medium heat. Add the kielbasa pieces and cook, stirring frequently, until the kielbasa has rendered quite a bit of fat and taken on some brown colour. Use a slotted spoon to transfer the kielbasa to a rimmed plate or bowl. Drain all but 1 to 2 tablespoons of the kielbasa fat from the pan. Return the pan to the heat and add the onions, carrots and celery. Add a pinch of salt and stir to coat all of the vegetables. Cook over medium heat, stirring often, until the onions are translucent, about 8 minutes. Add the garlic and crushed red pepper flakes, stir well, and cook for another minute.
  • Use your hands to break up the whole tomatoes over the pan. They don't have to be perfect, but should at least be broken down to bite size. Add the juice from the can along with the chicken stock, beans and their liquid, bay leaf, and thyme leaves. Bring to a boil, then lower the heat to a simmer. Simmer the soup until the carrots and celery are tender, about 10 to 15 minutes. Return the kielbasa to the pan and add the frozen or fresh spinach to the pot. Cook just until heated through.
