1 cup canned pumpkin
¼ cup rolled oats

Steps:

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
Place 4 cups oatmeal in the bowl of a food processor; pulse until finely ground. Transfer to a mixing bowl.
Stir in grated apple. Mix in canned pumpkin and egg until well combined; mixture will be thick and slightly sticky.

1 apple, peeled, cored, and finely shredded
4 tablespoons water or vegetable stock

Steps:

Preheat oven to 400°F. In a large bowl, combine all ingredients and form them into dough. Roll out the dough and cut out your favorite shapes for the cookies. If you do not have a cookie cutter, don't worry, use anything that can form a shape. Place the cookies on a greased cookie sheet. Since there is no leavening agent used, you can put the cookies very close together. Bake for 15 minutes. For crunchier cookies, turn off the oven and leave the cookies in there for another 30 minutes. Cool cookies on a wire rack. Store in a seal-tight container
