Diabetic Zucchini Bread (Low Sugar, Low Calorie, Low Fat ) image

I got a similar version of this recipe from a friend but had to tweek it for my fiance' who is diabetic. It is not 100% sugar free (less then 1 gram per serving) and very low in fat and calories without sacrificing taste, ENJOY!!

3/4 cup egg white, beat (or egg substitute)
1/2 cup unsweetened applesauce
1/2 cup fat-free margarine, melted
2 cups zucchini, shredded
1/2 cup carrot, shredded
6 tablespoons Splenda brown sugar blend (3/4 cup reg. brown sugar)
3/4 cup Splenda granular
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
2 teaspoons vanilla extract
1/4 cup walnuts, chopped
2 cups whole wheat flour

Steps:

  • Preheat oven 350 degrees.
  • Grease and flour two medium loaf pans.
  • In a bowl combine egg, brown sugar, sugar, apple sauce, and margarine.
  • To bowl add baking powder, baking soda, cinnamon,nutmeg, salt, and vanilla.
  • Add flour slowly.
  • Add shredded carrots, zucchini and nuts.
  • Beat mixture (by hand or mixer).
  • Pour loaf into pans.
  • Bake 45 mins or 'til toothpick comes out clean.

1 small onion, thinly sliced
2 medium tomatoes, chopped
2 cloves garlic, minced
1 tablespoon minced fresh parsley

1 1/2 cups sliced zucchini

1 tablespoon parmesan cheese

Steps:

  • In a skillet over medium heat, heat oil.
  • Add the onion and saute for 4 minutes.
  • Add the tomatoes, garlic, parsley, and basil.
  • Cook for 3 minutes Add the zucchini and cook for 5 minutes.
  • Season with salt and pepper and sprinkle with Parmesan cheese.

2 -3 zucchini, unpeeled and sliced
1/4 cup olive oil, divided
1 (15 ounce) jar marinara sauce (or the equivalent amount of homemade)
1/2 cup red wine
1 clove garlic, minced
1/4 teaspoon basil leaves, crushed
1/8 teaspoon dried oregano, crushed
1 cup shredded monterey jack cheese (4 ounces)

Steps:

  • Saute zucchini in 3 Tablespoons olive oil until lightly browned; drain.
  • Place in 1-1/2 quart casserole.
  • Combine marinara sauce, wine, remaining oil, garlic, basil and oregano in small saucepan; stir well.
  • Simmer for 15 minutes, stirring occasionally.
  • Spoon sauce over zucchini; mix well.
  • Sprinkle cheese over sauce; cover.
  • Bake at 325 degrees for 30 minutes.
  • Bake, uncovered, for 5 minutes longer.

1/2 cup all-purpose flour
1 teaspoon onion salt
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1 egg, lightly beaten
1/3 cup 2% milk
1 teaspoon canola oil
4 cups Corn Chex, crushed
Oil for deep-fat frying

Steps:

  • Cut zucchini in half widthwise, then cut each half lengthwise into eight wedges; set aside. In a large bowl, combine the flour, onion salt, oregano and garlic powder. Combine the egg, milk and oil; stir into the dry ingredients just until blended. Dip zucchini wedges in batter, then roll in crushed cereal., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry zucchini wedges, a few at a time, for 3-4 minutes or until golden brown. Drain on paper towels; keep warm.

Yummy! Easy and delicious. Try to use homemade marinara or buy some from your local italian food place. This is also great with just the zucchini or just the shrimp. You can use spaghetti, linguine, shells, bowties etc. and it works great. Use whole grain pasta for a healthier meal.

1/2 lb large shrimp, shelled and deveined
1 zucchini, sliced paper thin
3 cups dry penne pasta
2 garlic cloves, sliced thin
2 tablespoons extra virgin olive oil
2 cups marinara sauce
2 teaspoons sugar
1 tablespoon fresh oregano (optional)
1 tablespoon fresh basil (optional)
salt and fresh pepper, to taste

Steps:

  • Boil water to cook the pasta and cook accordingly. In the meantime, heat olive oil over medium heat. Add garlic, zucchini and a pinch of salt and pepper. Saute for 5 minutes. Add shrimp and another pinch of salt and pepper. Add marinara sauce, oregano, basil and sugar and set flame to as low as possible. When pasta is done cooking add to the shrimp-marinara mixture. Mix well and simmer on low about 5 minutes or so. Serve.

  • Wash zucchini and cut into approximately 3/4-inch thick slices. Set a large pan or skillet over medium-high heat, add olive oil to the pan, and heat until shimmering. Add butter, allow to melt, and swirl pan to combine the two. Arrange zucchini slices in pan in a single layer, season with garlic salt and pepper, and allow to cook undisturbed for a couple of minutes before checking their undersides. Once golden brown, flip zucchini slices over and brown the other side.
  • While zucchini is cooking, stir fresh chopped herbs and sugar into marinara sauce. Once zucchini is browned on both sides, slowly pour marinara sauce over zucchini, evenly covering it all. Do not stir. Reduce heat to low, cover pan, and simmer for 10 minutes or until zucchini is to your desired tenderness. Top with grated Parmesan and serve hot.
