A little sweet, a little briny, this fall-inspired dish will warm your tummy. I like to round out the meal with quinoa pilaf or garlic toast.

12 ounces precooked chicken sausage links (4 links)
1 medium sweet apple, such as Gala, peeled and cut into oversized matchsticks
1/2 large red onion, sliced thin (about 2 cups)
1/4 large red cabbage, sliced thin (about 4 cups)
2 tablespoons apple cider vinegar

Steps:

  • Heat a large, wide-based pot over medium heat. Add 2 teaspoons neutral high-heat cooking oil, like canola, rice bran or grapeseed oil. When the oil is shimmering, add the sausage and brown on one side, about 3 minutes. Turn and brown another side, 2 to 3 minutes. Turn and brown another side if possible, about 2 minutes. Remove from the pan.
  • Add the apple, onion and cabbage to the pan, scraping the bottom of the pan with a wooden spoon as the water releases from the vegetables. Cook until wilted, stirring occasionally and reducing the heat to medium-low as needed, about 10 minutes. Add the vinegar, 1/4 cup water (or broth for added flavor, if you have some) and 1/4 teaspoon each salt and pepper. Place the sausage on top. Partially cover and simmer until the fruit and vegetables become wilted and are fork-tender, about 5 minutes. Slice the sausage on a cutting board and serve over the fruit and vegetables.

You are going to love these quick and easy 5 ingredient grilled hot chicken sausages! They're perfect for those super busy weeknights and the whole family will love the unique twist in this grilled dish-that's ready and on the table in less than 30 minutes.

1 package (12 oz al fresco chicken sausages, buffalo style & blue cheese flavor (4 links))
1/4 cup hot sauce (plus 2 tablespoons for serving)
2 tablespoons mayonnaise
4 sausage buns
1/4 cup pickle slices (3 per sausage)

Steps:

  • Heat up grill (I used a gas grill and set it on high heat)
  • Score chicken sausages, cutting a 1/4 inch deep slit on a bias on the top of each sausage with a knife. Put sausages in a bowl and pour hot sauce over the sausages.
  • When your grill is heated up, put sausages on the grill, and grill, turning once, for 10 minutes, so that both sides of the chicken sausages are browned.
  • To assemble the hot chicken sausages spread 1/2 tablespoon of mayonnaise on a bun, place chicken sausage inside bun, sprinkle a little more hot sauce over the sausage and top with 3 pickle slices, then enjoy!

One-Pan Chicken, Sausage, Peppers, and Potatoes image

I'm showing you how to make a quick and easy, one-pan, stovetop version of one of our most popular recipes of all time, Chicken, Sausage, Peppers, and Potatoes, which involved the same ingredients roasted in the oven. I like to serve mine over toast, but it would be incredible over rice, potatoes, or pasta as well.

2 tablespoons olive oil, or more as needed
1 sweet Italian sausage, casing removed
3 small Yukon Gold potatoes, cut in half
3 boneless, skinless chicken thighs, cut into 2-inch pieces
1 teaspoon kosher salt, or to taste
freshly ground black pepper to taste
1 pinch cayenne pepper
1 teaspoon dried Italian herb blend
1 small red onion, sliced
1 cup sliced red bell pepper
½ cup chicken broth
½ lemon, juiced
2 slices Italian bread, toasted
1 tablespoon chopped fresh Italian parsley

Steps:

  • Pour 2 tablespoons olive oil into a nonstick skillet. Break up sausage into small pieces and add to the pan; add potato pieces sporadically, flesh-side down. Place chicken pieces throughout the pan, smooth side down. Season with salt, black pepper, and cayenne. Sprinkle over Italian herbs. Scatter over sliced onion and bell peppers. Sear over high heat until sausage starts to brown, about 5 minutes.
  • Reduce heat to medium-high, cover, and cook until potatoes are just tender, about 5 minutes. Add broth and cook until reduced by at least half.
  • Stir and squeeze over lemon juice. Taste and adjust if needed. Serve over toasted bread and top with parsley.
