3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
  • Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

1 (28 ounce) jar pasta sauce (good quality and preferably natural)
8 ounces no-boil lasagna noodles
15 ounces part-skim ricotta cheese or 1 lb drained and mashed soft tofu
3 cups lightly steamed vegetables (any veggies ie broccoli, mushrooms...)
8 ounces part-skim mozzarella cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Spread a thin layer of sauce on the bottom of a 9"x13" casserole.
  • Cover with a layer of noodles (3 or 4 noodles should be enough).
  • Place ricotta in a bowl and add about 1/4 cup of water, stirring until blended.
  • Spread 1/3 of this mixture over the pasta (you can use a cake spatula).
  • Spread 1/3 of the remaining pasta sauce over the cheese.
  • Spread 1/3 of the vegetables over the sauce.
  • Sprinkle 1/3 of the mozzarella over the veggies.
  • Repeat twice starting with the noodles and ending with the mozzarella.
  • Cover and bake until the noodles are tender (35 to 40 minutes).
  • Remove cover and bake 5 minutes until cheese starts to become golden.
  • Remove from oven and allow to stand for 5 minutes before cutting into squares.

¾ onion, diced
5 (10 inch) flour tortillas
1 cup salsa
2 cups shredded Cheddar or Colby Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9-inch pie pan with non-stick cooking spray.
  • In a saucepan, cook refried beans and onions (to soften them) on medium-high heat for about 5 minutes.
  • Place one tortilla in the bottom of the greased pan. Spread about 1/3 cup of the bean mixture over it. Layer a few tablespoons of salsa over this. Then, place another tortilla over the salsa, and add more of the bean mixture. Follow the beans with a big handful of cheese, spreading evenly. repeat layers, spreading the ingredients evenly over the tortillas. On the top layer, make sure to use lots of salsa and cheese!
  • Bake until the cheese is melted, approximately 15 to 20 minutes.

1 medium onion,diced
1 envelope taco seasoning mix
3/4 cup water
12 small corn tortillas
1 cup black beans, drained and rinsed
1 cup canned corn, rinsed and drained
1 (4-ounce) can chopped green chiles, drained
2 (10-ounce) cans medium enchilada sauce
1 (8 ounce) carton sour cream (regular or nonfat
1 (16-ounce) can spicy or regular refried beans(regular or nonfat)
1 (8-ounce) package shredded Mexican cheese blend (regular or nonfat)

Steps:

  • Preheat the oven to 375°F (190 degrees C). In a large non stick skillet, add olive oil over medium heat , add onion and cooked until translucent, add turkey and brown, breaking it up into crumbles as it cooks, about 10 minutes. Stir in taco seasoning mix and water, bring the mixture to a boil, and reduce heat to low. Simmer turkey mixture until thickened, about 5 minutes. Stir in chopped green chilies, black beans and corn and remove from heat. Spread a scant 2/3 cup enchilada sauce evenly over the bottom of an 8x10-inch baking dish; top sauce with 4 tortillas, overlapping. Spread tortillas with half the sour cream, half the refried beans, half the turkey mixture, and 1/3 the cheese blend. Top with another 2/3 cup enchilada sauce and 4 more tortillas. Firmly press down on tortillas to compact the layers beneath. Repeat layers, spreading remaining sour cream, refried beans, turkey mixture, 1/3 the cheese blend and 2/3 cup enchilada sauce onto tortillas. Top with remaining 4 tortillas; press down as before. Finish layering casserole with remaining 2/3 cup enchilada sauce and remaining 1/3 the cheese blend. 1 cup sour cream (regular or low-fat)
1 cup shredded Monterey Jack cheese (regular or low-fat), divided
1 cup shredded Cheddar (regular or low-fat), divided
1/2 cup mild, medium or hot salsa
1 (4-ounce) can chopped green chiles
2 tablespoons chopped fresh cilantro leaves
1 teaspoon ground chili powder
1/4 teaspoon cayenne pepper, or to taste
8 (6-inch) corn tortillas, cut into 6 wedges

Steps:

  • Preheat oven to 350 degrees F.
  • Coat an 11 by 7-inch baking pan with cooking spray.
  • In a large bowl, combine chicken, sour cream, 3/4 cup of the Monterey Jack cheese, 3/4 cup of the Cheddar, salsa, chiles, cilantro, chili powder, and cayenne pepper. Mix well and set aside.
  • Arrange half of the tortilla pieces in the bottom of prepared pan, overlapping pieces slightly to cover the surface. Top with half of the chicken mixture and smooth over with the back of a spoon to even the top. Layer remaining tortillas over top, and spoon over remaining chicken mixture. Top with remaining 1/4 cup each of Monterey Jack and cheddar cheeses.
  • Cover with foil and bake 30 minutes. Uncover and bake 30 more minutes, until top is golden and bubbly. Let stand 5 minutes before serving.
  • To reheat, bake in a preheated 375 degree F oven for 15 minutes.

3 large roasted chickens
1 package(s) flour tortillas, medium sized
3-4 cup(s) sour cream
3 cup(s) mexican blend shredded cheese
1 cup(s) chunky salsa

Steps:

  • Start by preheating the oven to 375 Degrees. You will need a large casserole dish.
  • Get a large bowl to mix all ingredients well. Shred the roasted chickens and place in the bowl, also with the sour cream, cheese, and salsa.
  • Spray the casserole dish. Cut tortillas in half and then half cross wise to create 4 small triangles. Place the tortillas overlapping each other to form a layer.
  • Spread mixture in even layers and top with tortillas in between each layer like you would a lasagna. Top with lots of cheddar cheese and place in oven!
  • You may also use corn, chopped olives, or other ingredients that go well with these items. This casserole feeds even more people if you serve smaller servings of the lasagna with nice portions of beans, rice, and chips!!!

12 (5- to 6-inch diameter) corn tortillas
Chopped tomatoes, optional

Steps:

  • In medium bowl, stir together cheddar cheese soup, milk and half the fajita seasoning, mixing until mixture is smooth. In skillet over medium-high heat, cook ground beef, crumbling with fork, until browned. Pour off any fat. Stir mushroom soup, water, chili powder, oregano and remaining fajita seasoning into ground beef, mixing well. Increase heat and bring mixture to a boil. Reduce heat to low and continue cooking for 5 minutes. Remove skillet from heat. Place 3 tortillas in bottom of a shallow, 2-quart baking dish, overlapping slightly and covering bottom as much as possible. Spread 1 cup beef mixture over tortillas in dish. Add another layer of 3 tortillas and another cup of beef mixture. Repeat layers with 3 more tortillas and another cup of beef. Top with remaining tortillas. Spread cheese soup mixture over tortillas. Bake at 350°F for 30 minutes, or until hot and bubbling. Let stand at room temperature for 10 minutes. Sprinkle with chopped tomatoes and sliced green onions, if desired. Serve hot.
