4 cups masa
4 cups chicken broth
3/4 cup shortening
4 tablespoons (1/4 cup) salted butter
1 tablespoon baking powder
1 teaspoon kosher salt
1 tablespoon olive oil
2 pounds lean ground beef
1 onion, chopped
1 red bell pepper, seeded and chopped
1 jalapeno, sliced
1 poblano pepper, seeded and chopped
1 tablespoon chili powder
2 teaspoons ground cumin
Pinch kosher salt
Pinch freshly ground black pepper
4 cloves garlic, chopped
One 15-ounce can chopped tomatoes
1 cup low-sodium beef broth
2 tablespoons tomato paste
One 15-ounce can red kidney beans, drained and rinsed
Butter, for greasing the skillet

Steps:

  • For the crust: Mix the masa with the broth in a large bowl and stir to combine. In a mixer, beat the shortening, butter, baking powder and salt. Add the masa mixture to the mixer bowl in 3 additions and beat until combined and soft. Cover and refrigerate while you make the filling.
  • For the filling: In a large skillet over medium-high heat, add the oil. Cook the beef, breaking up any lumps, until it is no longer pink, 8 to 10 minutes. Remove to a bowl using a slotted spoon. Remove all but 1 tablespoon of the grease from the skillet.
  • Add the onion, bell pepper, jalapeno and poblano to the skillet and season with the chili powder, cumin, salt and pepper. Cook until just beginning to brown. Add the garlic and cook for 1 minute. Add the tomatoes, broth and tomato paste and bring to a boil. Add the beans and return the meat to the skillet. Bring to a simmer and simmer for about 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Grease a 10-inch cast-iron skillet with butter. Line the skillet with a little over half of the masa mixture and press. Add the filling, then spoon the rest of the masa mixture over the top. Bake until the top is golden brown, 25 to 30 minutes.

2 lbs ground beef
1 can corn (undrained (or you can use 2 cups of frozen corn and 1/4 cup of water))
2 boxes corn muffin mix (+ ingredients listed on the box)
16 oz salsa (14-16 oz)
1 cup Cheddar cheese (shredded)
*Feel free to add whatever else you like- olives (green onions, diced tomatoes etc.)

Steps:

  • Heat the oven to 375°F.
  • Brown the ground beef over medium-high heat. Rinse and drain.
  • Add the corn and salsa to the beef- mix until combined.
  • Pour the beef mixture into a 13 x 9 casserole pan.
  • Sprinkle with cheese.
  • In a separate bowl, mix the corn muffin mix according to the package directions. Spread the batter evenly on top of the beef mixture.
  • Bake for 25-30 minutes or until the topping is golden brown.

Made from scratch, yet quick and easy, Tamale Pie is an old school casserole with layers of seasoned beef or chicken, cornbread, and melted cheese.

3/4 cup cornmeal
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
4 tablespoons melted butter, (cooled)
1/3 cup milk
14.75 ounce can cream style corn
1 pound lean ground beef, (such as sirloin)
10 ounce can enchilada sauce, ((read label to make sure it's gluten free))
1 cup salsa
1 teaspoon chili powder
1 1/2 cups shredded colby jack cheese

Steps:

  • Preheat oven to 400ºF. Grease a cast iron skillet with butter or spray a pie plate, 11X7 pan, or 9X9 pan with cooking spray.
  • Whisk together cornmeal, sugar, baking powder, and salt. Add egg, melted butter, milk, and cream style corn. Whisk to combine. Pour into prepared baking dish and bake for 20 minutes, or until toothpick comes out clean and edges are golden brown. Remove from oven and decrease oven temperature to 375ºF.
  • Use the handle of a wooden spoon to poke holes all over the cornbread surface. Pour 1/2 can enchilada sauce on top and spread evenly over cornbread. Set aside.
  • While cornbread is baking, begin to make filling. In a large skillet brown beef over medium high heat and drain, if necessary. To the browned beef stir in remaining enchilada sauce, salsa, and chili powder. Bring to a boil and simmer, uncovered, for 5 minutes until thickened.
  • Spread beef filling over cornbread. Top with cheese and return to 375ºF oven for 15 minutes, or until cheese is bubbly. Let sit for 5-10 minutes before cutting. Serve with additional salsa, cilantro, sour cream, and sliced avocado.

½ cup chopped green bell pepper

1 cup frozen corn

1 tablespoon chili powder
1 teaspoon minced garlic
1 teaspoon ground cumin

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring to a low boil, about 5 minutes. 1 medium onion, finely chopped
1 clove garlic, minced
Kosher salt
2 tablespoons tomato paste
1 1/2 tablespoons chili powder
1/2 teaspoon ground cumin
1 1/2 cups green or red enchilada sauce
1 cup canned black beans, rinsed and drained
1 cup frozen corn kernels, thawed
1/4 cup chopped fresh cilantro
1 1/2 cups shredded Monterey Jack cheese
3 cups self-rising cornmeal
2 1/2 to 3 cups buttermilk
2 tablespoons corn oil
4 scallions, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a 10-inch cast-iron skillet over medium-high heat. Add the beef, onions, garlic and 1 teaspoon salt and cook, stirring and breaking up any clumps with a wooden spoon, until the meat is brown and the onions are softened, about 6 minutes. Add the tomato paste, chili powder and cumin and cook, stirring, about 1 minute. Stir in the enchilada sauce, beans, corn and cilantro and season with salt. Bring to a simmer. Remove from the heat and sprinkle with the cheese.
  • Add the cornmeal to a mixing bowl. Mix in the buttermilk and oil. You want the mixture to be thick but pourable. Stir in the scallions. 1 teaspoon salt
1 (16 ounce) jar salsa
½ teaspoon dried oregano

2 eggs
⅔ cup milk, divided
4 ounces shredded Cheddar cheese, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef in a Dutch oven over medium-high heat until meat starts to brown and release juices, about 5 minutes.

1 teaspoon garlic powder

Steps:

Steps:

  • Warm the olive oil in a heavy or nonstick saucepan.
  • Add the onion and garlic, cover, and cook on medium heat for about 10 minutes.
  • Add the cumin, coriander, oregano, enough water to prevent sticking,and the carrots, cover, and cook for 5 minutes.
  • Add the bell peppers, zucchini, and chile, cover, and cook for another 5 minutes.
  • Stir in the tomatoes and beans, cover, and simmer for 5 to 10 minutes.
  • Remove from the heat.
  • Add salt and black pepper to taste.
  • Preheat the oven to 400*.
  • Prepare a 2-qt. nonreactive casserole dish with cooking spray or a very light coating of oil.
  • Spread the vegetable-bean mixture in the bottom of the dish.
  • If you are using the Cheddar cheese, sprinkle it evenly on top.
  • Set aside.
  • In a mixing bowl, thoroughly combine the cornmeal, flour, salt, baking powder, and baking soda.
  • In a separate bowl, beat egg whites till starting to peak, then gently stir in buttermilk, and oil.
  • Gently fold the wet ingredients into the dry, stirring, just until mixed.
  • Pour the batter directly on top of the vegetable-bean mixture, pressing it down a little with a spatula.
  • Bake for 30 to 35 minutes, until the top is golden and a knife inserted into the topping comes out clean.
  • Garnish with minced scallions, chopped cilantro,and, if you like, nonfat sour cream.

1 (10 ounce) can rotel, drained
1 cup cream-style corn

sliced black olives
shredded cheese

Steps:

  • preheat oven to 350.
  • brown the meat breaking up all large crumbles.
  • drain the fat from the meat.
  • add the rotel and the salsa verde and stir well making sure everything is mixed.
  • in a small bowl mix the cornbread mix and the cream corn just until moist and mixed.
  • spoon the meat mixture into a 1 1/2 quart baking dish.

5 1/2 cups water
Coarse salt and freshly ground pepper
1 1/4 cups yellow cornmeal
1/2 ounce (1 tablespoon) unsalted butter, plus more for dish
1/4 cup extra-virgin olive oil
1 medium onion, coarsely chopped
3 garlic cloves, coarsely chopped
1 medium green bell pepper, cut into 1/4-inch dice
1 serrano chile, finely chopped
1 1/2 pounds ground dark turkey meat
1 can (14 ounces) plum tomatoes, undrained, coarsely chopped
1/2 cup homemade or store-bought low-sodium chicken stock
1 teaspoon ground cumin
3/4 teaspoon dried oregano
1/4 teaspoon cayenne pepper
8 pimiento-stuffed green olives, rinsed and coarsely chopped
4 ounces grated Monterey Jack cheese (1 1/4 cups)
1 ripe avocado, peeled, halved, pitted, and diced
2 vine-ripened tomatoes, chopped, or 3/4 cup cherry tomatoes, quartered
1/2 cup coarsely chopped fresh cilantro
1/2 cup finely chopped red onion
Crisp lettuce leaves

Steps:

  • Bring water to a boil in a medium saucepan over high heat. Add 2 teaspoons salt. Whisking constantly, add cornmeal in a slow, steady stream, switching to a wooden spoon when cornmeal becomes too thick to whisk. Reduce heat to medium, and cook, stirring often, until thick and creamy, about 15 minutes. Stir in butter, cover, and keep warm over low heat.
  • Preheat oven to 350 degrees. Lightly butter a 2-quart baking dish. Heat oil in a large skillet over medium-high heat, then add onion, garlic, bell pepper, chile, and a pinch of salt. Cook, stirring often, until onion is light gold and vegetables are tender, 10 to 12 minutes. Add turkey, and cook, breaking up large pieces with a wooden spoon, until cooked through, 5 to 7 minutes. Stir in tomatoes and juices, stock, cumin, oregano, and cayenne. Reduce heat to medium, and cook, stirring, until most of the liquid has evaporated and mixture resembles chili, about 10 minutes. Stir in olives, and season with salt and pepper.
  • Spread 1 1/2 cups cornmeal into bottom of prepared dish with a wet spatula. Spread turkey mixture on top, then spread remaining 2 1/2 cups cornmeal on top. Sprinkle with Monterey Jack. Bake until golden brown and cheese is melted, 35 to 40 minutes. Let stand for 15 minutes. Serve with avocado, tomatoes, cilantro, red onion, and lettuce.

This hearty and delicious meat pie with tamale topping is a long-time family favorite of ours and based upon a versatile recipe from the 1976 Better Homes and Gardens New Cookbook. You may change things up to suit your tastes by making this with or without olives, with or without beans, with added green chiles and/or chopped tomato. For more spice, include some hot pepper-jack cheese or chopped jalapenos. Easy OAMC instructions are included.

1 1/4 lbs lean ground beef
1 cup chopped onion
1 cup chopped green pepper
1 (16 ounce) can tomato sauce
1 (15 ounce) can corn, drained
1/2 cup sliced ripe olives
1 garlic clove, minced
1 tablespoon sugar
1 teaspoon salt
2 -3 teaspoons chili powder
1 dash pepper
1 (15 ounce) can black beans or 1 (15 ounce) can refried beans
1 1/2 cups grated cheddar cheese
3/4 cup yellow cornmeal
1/2 teaspoon salt
2 cups cold water
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Cook meat, onion, and green pepper in a large skillet until meat is browned; drain fat.
  • Stir in tomato sauce, corn, olives, garlic, seasonings, and beans; simmer, stirring occasionally, about 10 minutes until thick; stir in cheese then remove from heat.
  • Meanwhile, stir cornmeal, salt, and cold water together in a saucepan; cook over medium-high heat (please be careful as hot cornmeal mixture may spatter) for a minute or two, stirring constantly, until thick; remove from heat and stir in butter.
  • Turn meat filling into a 9x13" baking dish that has been lightly coated with no-stick cooking spray; spoon cornmeal topping evenly over entire top of beef filling.
  • Bake at 375° for about 40 minutes until cornmeal topping is set and beef filling is bubbly; serve topped with salsa and sour cream.
  • NOTE: Family-sized portions of the cooked beef filling freeze excellently in Ziploc freezer bags - To serve: Just thaw, turn meat filling into a prepared baking dish, quickly make and spoon on a proportional amount (for a frozen half-batch to be baked in an 8x8" pan, prepare topping using 1/2 cup cornmeal and 1 1/3 cup water) of cornmeal topping, bake and enjoy!
