4 cups all purpose flour (or Pastry flour)
1 tsp salt
3/4 cup cold salted butter
3/4 cup cold vegetable shortening
3/4 cup cold 7 Up

Steps:

  • In a medium-size mixing bowl, use a whisk to sift together flour and salt.
  • Use a pastry cutter, 2 knives or a food processor to cut butter and shortening into flour until it resembles peas.
  • Add 7 Up mixing until the dough comes together.
  • Turn out onto a lightly floured non-stick surface. Divide in half or into thirds, then form into disks. (You may yield Two 10 inch pie crusts or three 8-9 inch pie crusts, divide according to how you plan on using it.)
  • Chill for at least 30 minutes or until firm.
  • To use: On a lightly floured non-stick surface, roll chilled dough into desired size. Press into pie plate. Flute edges using thumb and forefinger method or press with the tines of a fork.
  • May be blind baked and filled or used as the basis for pies and quiche with baked fillings. (See Cook's note for how to blind bake)

Steps:

  • Combine the flour and salt in a large mixing bowl. Add the lard and cut in with a pastry blender until coarse crumbs form. While mixing, add the 7-UP. Mix until a dough forms. Divide the dough into 5 balls. Roll out each ball into a crust and use as desired. The dough can be refrigerated or frozen.

This is a recipe I tweaked from cdkitchen.com. It originally called for lard, but I don't care for it, so I subbed half butter, half shortening. I made this for a Colonial Apple Pie, and it was delicious! The 7-Up sounds strange, but you don't taste it at all. It just makes the crust flakey.

2 3/4 cups all-purpose flour
3/4 teaspoon salt
1/4 lb shortening (Stash it in the freezer for a few minutes.)
1/4 lb cold unsalted butter, cubed (Stash it in the freezer for a few minutes.)
3/4 cup carbonated lemon lime beverage such as 7-up

Steps:

  • In a bowl, combine salt and flour.
  • Cut in shortening and butter using a pastry cutter until you see pea-sized globs.
  • Slowly pour in the 7-UP, and stir to combine.
  • Split dough in half, form into rounds, and wrap in plastic wrap.
  • Chill in the fridge 30 minutes to an hour before using.
  • Use in recipes that call for a single-crust pie.

At first glance, you might think these are just giant mozzarella sticks. But a bite reveals that they are so much more--a pasta hors d'oeuvre with a crunch on the outside and the soul of a mozzarella stick within.

8 dry manicotti shells
1 cup ricotta
1/4 cup grated Parmesan
1 clove garlic, grated
1/2 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
5 large eggs
Kosher salt and freshly ground black pepper
8 mozzarella cheese sticks
3/4 cup all-purpose flour
1 cup plain breadcrumbs
Canola oil, for frying
Warmed marinara sauce, for serving

Steps:

  • Cook the manicotti shells according to the package directions for al dente. Strain and place on a baking sheet to let the noodles cool to room temperature, about 15 minutes. Meanwhile, mix the ricotta, Parmesan, garlic, Italian seasoning, red pepper flakes, 1 egg, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl until smooth. Spoon into a large resealable plastic bag and snip 1/2 inch off of one of the corners.
  • Push 1 mozzarella stick into the center of each noodle. Pipe the ricotta mixture into the center of each noodle (you may have to pipe into both ends to fill the whole noodle). Place back on the baking sheet.
  • Set up a breading station with three shallow dishes: Stir together the flour, 1/4 teaspoon salt and a few grinds of pepper in the first dish. Beat the remaining 4 eggs in the second dish and add the breadcrumbs to the third dish. Coat a noodle in the flour, then dip into the egg, letting any excess drip off. Finally, press into the breadcrumbs. Transfer to the baking sheet and repeat with the remaining noodles.
  • Heat 1/2-inch of oil in a large skillet over medium-high heat and line a plate with a paper towel. Drop a few breadcrumbs into the oil; if they sizzle, the oil is hot enough. Working in batches, fry the noodles, flipping halfway through, until golden brown and the cheese is melted and starting to ooze through the sides, about 4 minutes total. Transfer to the lined plate and repeat with the remaining noodles, making sure to heat the oil back up between each batch. Serve with marinara sauce on the side for dipping.

1 tablespoon olive oil, plus more for drizzling
2 lemons, halved
3/4 cup ricotta
2 tablespoons mayonnaise
1 clove garlic, finely grated
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh mint
1/2 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
Paprika, for dusting
Assorted raw vegetables such as cucumbers, bell peppers, carrots, celery and radishes, for dipping

Steps:

  • Heat the oil in a small skillet over medium-high heat. Place the lemons in the skillet cut side down and cook without moving until golden brown, about 3 minutes. Squeeze the juice of 2 of the halves into a medium mixing bowl. Add the ricotta, mayonnaise, garlic, chives, mint, Worcestershire and cayenne and stir to combine. Season with salt and pepper to taste. Transfer the mixture to a small serving bowl and drizzle with olive oil then dust with paprika. Serve with the remaining charred lemon on the side and the vegetables for dipping.
