AUTHENTIC ENCHILADA SAUCE

Authentic Enchilada Sauce image

Rich and robust and a thousand times better than store-bought, this authentic enchilada sauce packs some serious FLAVOR!

Provided by Kimberly Killebrew

Categories     condiment     Sauce

Time 50m

Number Of Ingredients 12

3 ounces dried ancho peppers
3 ounces dried guajillo peppers
2-3 or more dried arbol peppers (OPTIONAL: for heat)
1 medium white onion, peeled and cut in half
2 ripe tomatoes, halved
4 cloves garlic, peeled
4 cups boiling water or chicken broth (for even more flavor)
we love Aneto 100% All-Natural Chicken Broth from Spain ((it's the BEST!))
1 teaspoon sea salt
1 teaspoon dried Mexican oregano
1 teaspoon ground cumin
Small piece of semi-sweet chocolate (optional)

Steps:

  • Start with that all important step: Roasting! Heat a heavy non-stick skillet (I like to use cast iron) over medium-high heat. Don't add any oil. Lay the dried peppers on the skillet and toast them for a minute or two on each, just until they become very fragrant. It's better to under-toast than to over-toast them as they will become very bitter if scorched. Remove and set aside. Next place the onion, garlic and tomatoes on the skillet and toast until lightly browned.
  • Remove the stems from the peppers (using gloves if you're using hot peppers), slice the peppers open and remove and discard all of the seeds and the membranes (contrary to popular belief, it's the membranes not the seeds that are hot, the seeds are bitter). Place the peppers in a bowl.Pour the boiling water over the peppers, cover the bowl and let them sit for 20-30 minutes until soft.
  • Place the peppers and their liquid along with the onion, tomato, garlic and all remaining ingredients (except for the chocolate if using) in a blender and blend until completely smooth.Note: At this point determine for yourself whether your sauce needs to be strained. I use a Vitamix blender which does an excellent job of blending the sauce to a very smooth puree, so I don't bother straining it.
  • Time to cook the sauce: Heat a tablespoon or so of oil to a pot then add red sauce. Simmer it uncovered for about 30 minutes. Add a little more water if you prefer it thinner. The sauce should be the thickness of heavy cream.Optional: For an added flavor touch, add a small piece of semi-sweet chocolate at the end and stir until melted. If the sauce is very bitter, add a touch of brown sugar. SEE NOTE.
  • Store in the fridge for up to 2 weeks or freeze it for several months. I like to freeze about a cup of it per freezer bag so I can conveniently grab a bag as needed.Makes approx. 5-6 cups.

AUTHENTIC MEXICAN HOT SAUCE

Authentic Mexican Hot Sauce image

This is my version of my favorite taco wagon's 'earthy' hot sauce of which I can never get enough. It is a little time consuming, but well worth it. I put it on everything from eggs to tacos, quesadillas, and salads. You can use any combination of chiles (cascabel, chipotle, Californian, New Mexican). For a hotter sauce, you can use all hot New Mexico chiles or add a few dried arbol chiles. For a tangier sauce, add the juice of 1 lime.

Time 1h10m

Yield 12

Number Of Ingredients 9

1 dried guajillo chile
1 dried chile negro (pasilla) pepper
2 dried New Mexico chile pods
1 ½ cups warm water
2 cloves garlic, pressed
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon packed brown sugar
1 teaspoon white vinegar

Steps:

  • Remove stems and seeds from the guajillo chile, pasilla chile, and the New Mexico chile pods.
  • Heat a cast-iron skillet over medium heat. Toast the chile pods in the skillet until lightly brown, about 2 to 3 minutes. Transfer the chile pods to a small bowl and pour the warm water over them. Allow chiles to soak about 40 minutes.
  • Remove the guajillo and New Mexico chiles from the water. Use a spoon to scrape the pulp from the skin. Discard the skin. Place the pulp of the guajillo chile and the New Mexico chiles in a food processor with the pasilla chile and the water in which the peppers soaked. Puree in the food processor until all ingredients are combined. Add the garlic, cumin, salt, brown sugar, salt, and vinegar. Puree the mixture until smooth.

  • Place tomatoes, onion and garlic cloves in a large stockpot or saucepan. Cover with water, place the saucepan lid on, and cook over high heat until it starts boiling; once the water starts boiling reduce heat to simmer. Cook until tomatoes are soft and skins are peeling.
  • Carefully, place only the tomatoes, onion and garlic in a blender and puree until you have a very smooth sauce. (Add a few tablespoons of water to the blender, only if your blender is having a hard time processing the sauce)
  • Using a strainer, pour into glass jars. Once they’re completely cool, store in your refrigerator. The sauce will last about 4 days. Use as needed for your soups or other recipes.
