PAPER-WRAPPED CHICKEN
I eat this quite a bit at our local Chinese restaurants, so I recreated it at home and made it even tastier. These are time-consuming, and I recommend using oil in the deep fryer that is ready to change as the marinade will ruin it for cooking anything else. I've also done this technique successfully with squid. I've also added in very thinly sliced onion and green peppers to the marinade and it was really good.

Steps:
- Mix the teriyaki sauce, garlic, ginger, and red pepper flakes in a bowl; stir in the chicken pieces until thoroughly coated.
- Cover the bowl and refrigerate the chicken 3 to 4 hours to overnight.
- Remove a piece of chicken from the marinade and place into the center of an aluminum square.
- Fold the square diagonally over the chicken piece in a triangle shape; fold up the open edges of the triangle several times and press tightly together to seal the chicken into the foil. Repeat with remaining chicken pieces. Discard the used marinade.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Gently add the sealed foil packets to the hot oil and fry until the chicken is tender and cooked through, 2 to 4 minutes. Drain the packets on paper towels and allow to cool slightly.
- To serve, tear open the packets along the sealed edges.

RICE PAPER WRAPS

Steps:
- Put the noodles in a pan of water and bring to the boil, simmer for 3 mins, then cool under running water. Drain thoroughly.
- Cut the carrot into matchsticks using a knife or a mandoline. Cut the avocado into strips and the cucumber into thin sticks. Soak 2 of the rice paper wraps in cold water for 1-2 mins until floppy.
- Lift 1 sheet of rice paper out of the water, shake gently, then lay it carefully on a board. Place 2 prawns in the centre, with a mint leaf between them. Add a strip of avocado, pile some noodles on top, then add a layer of carrot and cucumber. Fold the bottom half of the rice paper over, then fold the sides in and tightly roll it up. Repeat using the second wrapper and soak 2 more to make 2 more rolls.
- Make the rest of the rolls up using the remaining 4 wraps and the shredded chicken instead of prawns. Serve the rolls with the sweet chilli sauce for dipping.

DEEP-FRIED PAPER-WRAPPED BEEF

- 1. Cut beef against the grain in slices 1/2 inch thick, then in rectangles 1 by 1 1/2 inches. 2. Mince garlic, and combine with soy sauce, sherry, sugar, salt, prepared mustard, pepper and sesame oil. Mix well, then add to beef and toss gently to coat. Let stand 1 hour, turning meat occasionally. 3. Drain well, discarding marinade. Then wrap beef in paper envelopes (see HOW-TO, _Paper Wrapping). Meanwhile, heat oil. 4. Add beef a few envelopes at a time, and deep-fry until done (about S minutes). Drain on paper toweling and serve beef hot in wrappers. NOTE: The wrappers help hold in flavor and retain heat. BUILD YOUR OWN RICE PAPER WRAPPERS
This dish is great to serve for 2 or more guests - they'll have fun building their own Asian rolls! It's a good idea, as the host, to prepare 6 or 8 ahead of time but it is important that they are covered with a damp cloth so as not to allow the rice paper to dry out. They are light, delicate and very, very tasty. You may wish to vary some of the ingredients by using some toasted sesame seeds, bamboo shoots or Peking duck.

- Arrange the shredded lettuce or bok choy in the centre of a large serving platter, board or tray.
- Place the carrots, cucumber, bean sprouts, spinach, mango, mushrooms, peanuts, herbs, shrimp and chicken in individual piles or bowls around the lettuce or bok choy.
- Place a small, damp terry cloth towel on each serving plate to make the rolling of the wrapper a little easier- your guest can also use it to wipe their fingers as they build their personal rice paper wrappers.
- Fill a medium-sized clean bowl with warm water in which you and your guests can dip the rice paper for 2 to 3 seconds until soft and limp.
- Gently remove and place the rice paper onto a damp terry cloth towel on your serving plate.
- Fill your rice paper wrapper with your choice of ingredients.
- Fold in the ends and roll.
- The key is not to overfill each wrapper.
- Serve a choice of dips such as Garlic Dipping Sauce (#72050), Ginger Sauce (#72051) , sweet and sour, or hot chilli dips.

_PAPER WRAPPING

- Use a heavy tissue, rice paper, parchment-type, or wax paper. Do not use aluminum foil. (The wrapping must be porous.) Cut the paper in 4-inch squares. Place each square with the lower corner pointing toward you. Grease paper with a drop of oil (peanut or sesame, lard or chicken fat). Place the meat or chicken well below the center line of the square. Fold up the lower corner to cover the meat. Then fold the lower section once more (to the center line). Next, fold the left corner over and the right, envelope-style. Finally, fold the remaining top corner down, like an envelope flap, and tuck its end in securely. Repeat until all meat or chicken is paper-wrapped.NOTE: Paper-wrapping, used with deep-fried foods, acts much like a batter coating in insulating ingredients against the hot oil. (If the meat is cut in narrow strips, 2 pieces may be enclosed in each wrapping.
