THE ORIGINAL POTATO SALAD
This recipe is right off the Hellman's mayonnaise jar. To me, it's so good it rivals my mother in law's potato salad, which I think is the best there is. It's a plain and simple potato salad, but it's delicious! Add pimentos, olives, or green peppers depending on what you like in your potato salad.

A REALLY SIMPLE POTATO SALAD
I just made Kittencal's Starter Potato Salad and it reminded me of a potato salad I used to make a lot. What I like to do is cook the frozen peas and fresh carrots in the same pot, so as to make it easier for me not to cook three different ingredients three different times. and don't worry about the horseradish, if it's too spicy put in a little bit less. I just like it because it adds some color to the mayo dressing and it adds kick to the salad. For the potatoes you can use either P.E.I potatoes or Idaho potatoes, both are good.

Steps:
- Peel the potatoes first, and then boil in water for 30-40 minutes, or until soft. Let cool, before cubing them.
- In a large bowl combine the potatoes with the peas, carrots, and pickled.
- In a smaller bowl combine the mayonnaise, horseradish, salt and pepper to taste, basil and oregano. (If you think the horseradish is a little too much, use a little less. I use 1 tablespoon because that is my taste preference).
- Add the mayonnaise mixture a little at a time and mix well. If you like it to be creamier make a little more mayonnaise.
- Serve chilled.

CLASSIC POTATO SALAD RECIPE BY TASTY
This simple summer side dish staple is easy to master with this recipe! Gold potatoes are tossed in a creamy-tangy mixture of mayo, pickle relish, and mustard, with diced red onion and hard-boiled eggs for extra texture. Pro tip: add the dressing to the potatoes in thirds, allowing 5 minutes between each addition, for the creamiest texture.

- In a small bowl, stir together the white vinegar, remaining teaspoon of salt, and the sugar until the sugar and salt have dissolved.
- While the potatoes are still hot, pour the vinegar mixture over and toss to coat. Let the potatoes sit for 5 minutes to cool slightly.
- Add ⅓ of the egg mixture to the potatoes, tossing to coat completely. Let sit for another 5 minutes, then toss with another ⅓ of the egg mixture. Just before serving, toss with the remaining egg mixture.
- Enjoy!

SUPER SIMPLE POTATO SALAD
This is a recipe I learned from my mother. It is tasty and simple with a real down home feel. There are few ingredients, but the flavors mesh perfectly without tasting too "busy". I hope you enjoy. Quick tip: Peel and quarter potatoes before boiling if you are in a hurry. It takes a little bit of the flavor away from the spuds, but saves tons of time in cooling and prep! You could also boil spuds the night before and leave them in the fridge overnight--that's what I do!

Steps:
- Boil potatoes, with skins on, until just tender. Drain and let cool.
- When potatoes are cooled, peel and cut into bite-size pieces. Place in a large bowl.
- Coarsely chop eggs. Add eggs and pickle chunks to potatoes.
- Gently toss in mayonnaise. (Start with less mayo, and add more as needed to obtain consistency you prefer.) Be sure to toss lightly to avoid breaking up the potato too much.
- Add salt and pepper to taste. Also add onion, if using. Stir gently again, just to combine.
- At our house, we usually serve a small bowl of onion on the side so people can add as much as they like, or none at all.

REALLY GOOD, SIMPLE, FRESH POTATO SALAD- NO MUSTARD- NO RELISH
This recipe was given to me by an elderly woman who had brought lunch to another elderly woman that I was taking care of. I don't know know the origin of this type of potato salad, and tried to search Zaar to make sure I wasn't duplicating, but admit that I did not search all 1200 potato salad recipes. I have never tasted a potato salad that was so good, so I got the recipe from her. The amounts are approximate as she just told me the ingredients, and I eyeball it, of course it also depends on how much you want to make, so adapt it accordingly. She did insist however that you have to use Hellmann's mayo. My husband, who Never eats potato salad eats and actually enjoys it. It has a nice mellow flavor and texture with-out the typical relish and mustard, I'm sure all of the eggs contribute to that. I took it to a church potluck and got raves about it. It is definitely not low fat, not sure how it would adapt. Another example that sometimes simple IS better. Hope you enjoy!

Steps:
- Peel and dice potatoes, Boil in salted water until tender.
- Hard boil eggs, peel, chop. (obviously lol).
- Finely chop onion.
- *1-2 ribs of finely diced celery is nice, but was not in the original recipe.
- A dash of garlic powder or garlic salt is nice too.
- Judge the amount of Mayo to your taste and # of potatoes, but do add it until it is nice and creamy.
- Mix all ingredients together when warm, serve fresh with-out chilling, if you can, it is good chilled too, but particularly creamy when warm-to room temperature.
- It is also best to use the hardboiled eggs right after cooking, it's ok if they are slightly cooled from peeling, but best in this, if they are freshly cooked.
- Most of the prep time is attributed to the peeling and chopping of the potatoes.
- *Of course, because of the Mayo you won't want to leave it out too long.
- I have also heard (unknown it it's true, but I never take the chance) not to serve anything that has Mayo in it, with Sterling Silver servers.
