- Heat oven to 400ºF.
- Cover rimmed baking sheet with foil; spray with cooking spray. Mix oil and dry rub until blended.
- Spread potatoes onto prepared baking sheet. Drizzle with oil mixture; toss to evenly coat potatoes. Spread to form even layer on baking sheet.
- Bake 45 min. or until potatoes are crisp and golden brown.

These started out as breakfast for Christmas morning. I added all the goodies that I liked on a baked potato. Another great thing is that this can be made ahead of time. - Pierce potatoes with a fork; rub with oil if desired. Bake at 400° for 1 hour and 20 minutes or until tender. Let stand until cool enough to handle., Cut each potato in half lengthwise. Scoop out the pulp, leaving a thin shell. Place pulp, butter and cream cheese in a large bowl and mash. Fold in green onions, bacon, cheese and pepper. Spoon into potato shells. Place on baking sheet. Bake at 350° for 20-30 minutes or until heated through. Sprinkle with additional cheese. Let stand 3-5 minutes.

TWICE BAKED POTATOES
These potatoes still taste buttery and rich but are much lighter than the full fat version by using a small amount of butter to saute sweet leeks and some chive flavored reduced fat cream cheese. This is a great side dish for any time of year and for special gatherings, like Thanksgiving. Simply double the recipe, or halve the potatoes after the first bake and the dish serves more.

- Preheat the oven to 375 degrees F. Rub the potatoes with the oil and season generously with kosher salt. Place on a baking sheet and bake until the potatoes are very tender on the inside and crisp on the outside, about 1 hour, 15 minutes. Let stand 5 minutes.
- Meanwhile, heat the butter in a large nonstick skillet set over medium heat. Add the leeks and season with salt and pepper, cook until soft, about 6 to 8 minutes. Add the garlic and thyme and cook until fragrant, 1 minute. Cool slightly.
- Cut lengthwise, opening down the center of each potato, stopping about 1-inch from each end. Scoop out the insides into a large bowl, keeping about 1/4-inch shell of potato next to the skin.
- Add the leek mixture, cream cheese and milk to the potato and mash well with a fork until combined but slightly chunky. Stir in the chopped parsley. Spoon the filling back into the potato shells, about 1/2 cup of filling for each potato and place back on the baking sheet. Bake until heated through and the tops are lightly browned, 20 to 25 minutes. Garnish with extra parsley.

- 1. In a large skillet over medium heat, cook bacon until crisp. Remove bacon and set aside on paper towels to drain excess grease. Remove grease from pan, reserving 1 tablespoon.
- 2. Place potatoes in hot bacon grease and fry for 5 minutes until heated thoroughly. Remove hot potatoes from heat and place in a large serving bowl.
- 3. Crumble bacon and add to potatoes along with fried onions, walnuts, mayonnaise, goat cheese, A1 steak sauce, mustard and salt. Mix until ingredients are thoroughly combined and cheese is melted.
- Serve.

- Position oven racks in the middle and bottom third of the oven and heat to 350ºF. Line the half sheet pan with aluminum foil and set aside.
- Wash the potatoes thoroughly with a stiff scrubbing brush under cold running water. Dry the potatoes thoroughly with a kitchen towel. Using a fork, poke 8 to 12 holes all over each spud so that moisture can escape while cooking. Place the potatoes in the bowl and coat well with the oil. Sprinkle with the kosher salt and place the potatoes directly on the middle rack of the oven. Place the half sheet pan lined with aluminum foil on the rack in the bottom third of the oven to catch any drips. Bake until the skin feels crisp but the flesh feels soft and the interior of the potato has reached between 205 and 210ºF, about 1 hour and 15 minutes.
- Remove the potatoes from the oven with oven mitts. Using the fork, create a dotted line from end to end on the top of each potato and crack the spud open by squeezing the ends towards one another; watch out for the steam. Serve immediately.
