Heat the butter or oil in a small skillet, and saute the green onions and red peppers until just soft. Add to the cous cous. Bring the chicken broth to a boil, and pour over the cous cous. Stir, cover the bowl, and let the cous cous steam, about 15 minutes. Fluff with a fork, and add more butter if desired. To serve, spread the cous cous on a large platter. Arrange chicked thighs evenly over cous cous, then top with the sauce. Garnish with fresh parsley and green onions.

ROASTED CURRIED CHICKEN WITH COUSCOUS

Roasted Curried Chicken with Couscous image

A great blend of exciting and subtle flavors that are infused into the chicken during cooking, making every bite juicy and lively. As 'lively' as the flavor is, it is also great as a winter comfort food. I like to make the chicken just a bit on the spicy side, as when it is served with a side of mildly spiced couscous it mellows just enough. Makes the whole house smell delicious!
