1/2 teaspoon pepper
2 Cornish game hens (1 1/4 to 1 1/2 pounds each), halved lengthwise
Lemon and lime wedges

Steps:

  • Prepare barbecue (medium heat). Combine olive oil, 4 teaspoons chopped thyme, garlic, lemon peel, lime peel, honey, salt, and pepper in baking dish. Stir marinade to blend well.
  • Place hen halves on work surface and cover with plastic wrap. Pound gently with mallet to flatten slightly. Place hen halves in marinade in dish. Using fingers, rub both sides of hens with marinade. Let marinate 20 minutes at room temperature.
  • Grill hen halves until just cooked through and skin is lightly charred, brushing with remaining marinade, about 12 minutes per side.
  • Arrange hen halves on plates. Garnish with lemon wedges, lime wedges, and fresh thyme sprigs.

4 Rock Cornish hens, about 1 pound each, split in half and backbone removed
Salt and freshly ground pepper
2 tablespoons finely chopped fresh rosemary or 1 tablespoon dried
4 tablespoons vegetable oil
4 tablespoons coarse Dijon-style mustard
1/4 teaspoon cumin
1 tablespoon fresh lemon juice
2 teaspoons Worcestershire sauce
1 tablespoon dry white wine
1/2 cup fine fresh bread crumbs
2 tablespoons melted butter

Steps:

  • Preheat broiler to high.
  • Place hens on a flat surface and pound them with a meat pounder or mallet. Sprinkle the hens on all sides with salt, pepper, rosemary and oil.
  • Combine mustard, cumin, lemon juice, Worcestershire sauce and white wine in a small bowl and set aside.
  • Arrange hen halves neatly in one layer, skin side down, on a baking dish and place them under the broiler about 3 inches from source of heat. Broil about 8 to 9 minutes; turn halves and broil about 3 minutes more.
  • Turn off broiler and set oven heat to 450 degrees.
  • Brush mustard mixture on both sides of the hens. Brush with pan drippings and sprinkle both sides with bread crumbs. Put hens in oven skin side up and bake 15 minutes. Transfer to a serving plate and pour butter over the hens.

1 onion, diced
1 clove garlic, minced
8 tablespoons (1 stick) butter
One 10 3/4-ounce can beef broth
1 bay leaf
1/4 teaspoon dried thyme
2 tablespoons sherry

16 ounces fresh mushrooms, sliced

Steps:

  • Wash, pat dry, and salt and pepper hens. Place in long, flat baking dish. Sauté onion and garlic in butter. Add remaining ingredients except the mushrooms. 1/2 tablespoon extra-virgin olive oil
1 small leek, white and pale-green parts only, halved lengthwise, thinly sliced into half-moons, and rinsed well
3 ounces shiitake mushrooms, stemmed, wiped clean, and coarsely chopped
1 garlic clove, finely chopped
1 teaspoon coarse salt
1 tablespoon chopped fresh sage, plus leaves (optional), for garnish

1/2 teaspoon dry mustard
1/2 teaspoon dried thyme

  • Preheat oven to 350 degrees. Spread out diced bread on a rimmed baking sheet; toastin oven, turning occasionally, until light brown and dry, 10 to 12 minutes. Set aside.
  • Raise oven temperature to 450 degrees. In a large nonstick skillet, heat the oil over medium-high heat until hot but not smoking. Add leek, mushrooms, garlic, and 1/2 teaspoon salt.   • Arrange birds on a roasting rack in a large roasting pan. Roast until golden brown, about 30 minutes. Reduce oven temperature to 350 degrees, and continue roasting until an instant-read thermometer inserted into thickest part of thighs (avoiding bone) registers 170 degrees, 15 to 20 minutes more. Transfer rack with birds to a rimmed baking sheet, and let rest.
  • Set roasting pan on top of stove across two burners; set heat to medium-high. Add port and remaining 1/4 cup broth; deglaze pan, scraping up any browned bits from bottom with a wooden spoon. Add remaining 1/4 cup dried cranberries; cook, stirring, until sauce reduces slightly, 2 to 3 minutes.
  • Place birds on a serving platter, and drizzle sauce over them. Garnish with sage leaves, if desired, and serve.
