- Combine the squid, vinegar, and water in a small pot over medium heat; season with salt and pepper. Cook for 10 minutes.
- Meanwhile, heat the olive oil in a saucepan over medium heat; cook and stir the onion and garlic in the hot oil until softened, 5 to 7 minutes. Stir the tomato and soy sauce into the mixture. Pour the squid mixture into the saucepan and bring to a simmer; cook together another 20 minutes.

Steps:
- In a cooking pot, pour in the water, vinegar, and soy sauce. Bring to a boil.
- Add in the squid. Simmer for 5 to 7 minutes. Set aside.
- In a separate cooking pan, pour and heat the cooking oil over low to medium heat.
- Add in the garlic, onions, and tomatoes. Saute until cooked through and aromatic.
- Add the squid into the cooking pan. Then pour in the liquid mixture used to cook the squid. Bring to a boil and simmer for 5 minutes.
- Season with salt and pepper. Stir until well mixed.
- Transfer to a serving tray or serving bowl. Serve and enjoy!

Steps:
- To clean Pusit, pull out the head and the innards will come out with it.
- Keep aside ink sack discard entrails.
- Remove the teeth and keep aside head and tentacles.
- Remove the membrane from the body and wash out entrails.
- Final wash squid and drain.
- Slice body into ½" crosswise if you bought Large Size Squid (Pusit).
- Cut tentacles in proportion to sliced body.
- In a casserole put Pusit including the ink sack and the rest of the ingredients,
- Add 1 to 2 cups of water simmer for 30 minutes or more until it is soft but firm and sauce thickens.
- Season with salt.
- Serve hot with lots of rice.

- Holding the squid firmly, pull the head from the body including internal parts and tentacles. Pull out the clear cartilage inside the tube and discard.
- Under cold running water, wash the inside and out to remove any debris or excess ink. Drain well and pat dry.
- In a pot over medium heat, combine squid, 2 cloves of the garlic, vinegar, water, and the bay leaf. Bring to a boil, uncovered and without stirring, for about 3 to 5 minutes or just until squid changes color. Remove from heat and drain, reserving about 1 cup of the liquid.
- In a pot over medium heat, heat oil. Add onions, ginger, the remaining 1/2 of the garlic. Cook until softened.

- Clean the squids (see illustration); save the ink sacs. Cut the squids into rings about a quarter of an inch thick. Place in a strainer to allow excess liquid to drain off. Alternatively, pat the squids dry with paper towels.
- Heat the cooking oil in a shallow pan. Saute the garlic, shallots, pepper, bay leaves and finger chilies until softened and aromatic, about five minutes.
- Add the squid to the sauteed aromatics. Stir. Pour in two tablespoons of vinegar and two tablespoons of fish sauce. Throw in the ink sacs and stir. Bring to a gentle boil.
- Cook the squids just until they change color (squid turns tough with overcooking). Turn off the heat, cover the pan tightly and allow the squid to cook in the residual heat for another two to three minutes.
