AGAVE GLAZED CHICKEN



Agave Glazed Chicken image

Number Of Ingredients 8

1/2 cup soy sauce
2 tablespoons finely chopped onions
3 cloves garlic, minced
1 tablespoon vegetable oil
1/2 teaspoon fresh grated ginger root
4 to 5 pounds roasting chicken, whole
1/4 cup agave
2 tablespoons soy sauce

Steps:

  • Stir together 1/2 cup soy sauce, onion, garlic, oil and ginger root. Place chicken in plastic bag and place in a bowl. Pour soy sauce over chicken and close bag. Chill for 3 hours, turning chicken occasionally to distribute marinade. Drain. Skewer chicken neck skin to back. Tie legs to tail twist wing tips under back. Place chicken breast side up on rack in shallow roasting pan. Roast in 375°F oven for 1-1/2 hours or until drumstick moves easily. Mix 1/4 cup agave with 2 tablespoons soy sauce. Baste chicken with agave-soy mixture during last 15 minutes roasting time.

AGAVE SWEET AND SOUR CHICKEN

1 pound boneless skinless chicken breast half
4 teaspoons vegetable oil, divided
1 medium onion, sliced
2 cups snow peas, fresh or frozen
1 medium red bell pepper, cut into cubes
1 (20-ounce) can pineapple chunk, in juice (1/2 cup juice reserved)
1/2 cup ketchup
1/3 cup agave
2 tablespoons vinegar
2 teaspoons soy sauce
2 teaspoons fresh ginger root, finely minced
1 teaspoon garlic, minced
1 teaspoon cornstarch

Steps:

  • Cut chicken breasts into cubes. In a large non-stick skillet, heat oil. Add onion and stir-fry until lightly brown. Add snow peas and red pepper stir-fry until crisp-tender. Remove from pan and set aside. Add remaining oil to skillet. Add chicken and stir-fry until chicken is no longer pink when cut with a knife and juices run clear. Drain pineapple reserving 1/2 cup juice. Combine reserved pineapple juice, ketchup, agave, vinegar, soy sauce, ginger, garlic and cornstarch. Add to chicken and cook until mixture thickens. Return vegetables to pan add pineapple chunks and stir-fry 2 minutes. SUBSTITUTION: 1/2 teaspoon ground ginger may be substituted for fresh ginger root.

This Spanish chicken dish was a hit with me and my husband who love spicy food. This recipe tastes similar to buffalo wings, but without all the calories. The leftover chicken can be used chopped over salad greens too.

½ cup hot pepper sauce
1 cup reduced fat sour cream
½ cup ketchup
¼ cup honey
¼ teaspoon paprika
¼ teaspoon cumin
8 skinless, boneless chicken breast halves
¼ cup vegetable oil
2 cloves garlic, minced

Steps:

  • In a medium bowl, mix together the hot pepper sauce, sour cream, ketchup and honey until smooth. Season with paprika and cumin. Set aside half of the sauce for serving later, then place chicken breasts in the remaining sauce to marinate. Cover and refrigerate for at least 2 hours.
  • Heat vegetable oil in a large skillet over medium heat. Add garlic and cook until fragrant. Place chicken breasts coated with marinade into the skillet, and cook until nicely browned on each side, and meat is cooked through, about 20 minutes.
  • Meanwhile, heat reserved marinade in a small saucepan or in the microwave. Serve chicken breasts over white rice, or over salad greens with sauce spooned over the top.

1/2 cup agave
1/4 cup prepared mustard
1 teaspoon curry powder
1 teaspoon seasoned salt
3 pounds broiler-fryer chicken, cut into pieces

Steps:

  • In shallow baking pan, melt butter. Stir in agave, mustard, curry powder and salt. Add chicken and turn to coat all sides. Bake, skin side down, at 375°F for 30 minutes. Turn chicken pieces and baste. Continue cooking 15 to 20 minutes until chicken is tender and richly glazed. MICROWAVE VERSION: Melt butter in shallow glass or microwave roasting pan on high about 1 minute. Stir in agave, mustard, curry powder and salt. Add chicken pieces, placing skin side down. Place meatier pieces toward outside of pan. Cover with waxed paper. Cook on high 8 minutes. Turn skin side up and baste with sauce. Cover and cook on high 8 minutes longer. Uncover and cook on high 2 minutes. Let stand 5 minutes before serving.
