- Cut watermelon into small pieces and place in a blender. Add 1 cup water and 1/8 cup sugar; puree until smooth. Pour into a pitcher.
- Add remaining 2 cups water. Sweeten with additional sugar, to taste.

My DH is from Mexico and this is a staple there on hot days. The first time I tried it I was hooked (didn't even get sick from the water...lol). This is a great change for those hot days, just drink and enjoy.

- In batches, blend water, sugar, watermelon and ice in a blender.

EASY AGUA DE SANDIA (WATERMELON WATER)
This Agua De Sandia (Watermelon Water) is fresh, sweet, zesty and SO refreshing! Delicious for sharing at a gathering or enjoy while reading your favorite book! It's easily made into an adult beverage to share with friends.

- In a blender add 4 cups of the watermelon chunks with 1 cup of water. Blend on high speed until the mixture is smooth. Transfer drink to a pitcher (see note)
- Note: If the watermelon has seeds, pass the juice thru fine mesh strainer to remove the blended seeds.
- Repeat process with remaining watermelon.
- Add the ½ cup sugar and lime juice to the pitcher. Mix well and taste for sweetness. Add more sugar according to taste.
- Pour into a tall glass filled with ice and garnish with fresh watermelon (optional). This drink is best if consumed within 1 to 2 days max.

SANDIA LOCA
Spanish for "crazy watermelon," this refreshing Mexican snack can incorporate a variety of different fruits, vegetables, candies and spices to satisfy your sweet and savory cravings. This version combines watermelon, pineapple, strawberries, mango, jicama, chamony and tamarind candies - among other ingredients.

- Cut a small slice from the base of the watermelon to stabilize it, and then cut the watermelon in half horizontally. Cut 4 stars from the top half of the watermelon, and then save the remaining watermelon for another use.
- Cut the flesh of the pineapple into 4 stars. Cut the remaining flesh into 1-inch cubes.
- In the base watermelon, score 2 lines down the center of the flesh lengthwise, creating a central strip of watermelon. Scoop out the watermelon flesh on either side of the strip with a large spoon and cut into large chunks.
- For the fruit skewers: Thread 4 strawberries on a 6-inch wooden skewer and the remaining 4 strawberries on another 6-inch skewer. Thread each watermelon star on a 6-inch skewer. Thread each pineapple star on a 6-inch skewer.
- Put the watermelon chunks, pineapple chunks, mango slices and jicama batons in a large bowl. Add the chamoy, tajin, lemon juice and hot sauce and toss to combine. Pour the fruit into the cavities of the watermelon. Then decorate with the star skewers and the tamarind candies. Sprinkle with more tajin over the top and serve.
WATERMELON AGUA FRESCA- SANDIA
This agua fresca can be used as a template for any soft fruit: cantaloupe, mango, papaya, pineapple, strawberry, guava... the list goes on and on. Start by mashing the fruit and add water to make 1 gallon. Don't be tempted to throw this in the blender, as the best aguas always have bits of fruit floating throughout. You should make it a little stronger than you think since chilling dulls the flavor and ice will dilute it. Extra agua can be frozen into paletas. Please adjust the sugar to you liking. - Combine the water and sugar to taste in a saucepan and boil until the sugar dissolves. Cool.
- Peel the watermelon, remove as many seeds as possible, and mash with a potato masher (or pulse in a food processor) until the fruit is fairly smooth. Add the water and lime juice. Taste and adjust with more sugar, lime, or water as desired. Serve over ice.
