WASABI GUACAMOLE WITH PICKLED GINGER

- Mix 1 teaspoon each wasabi powder and water; set aside 15 minutes. Halve and pit 3 avocados; scoop the flesh into a large bowl and mash with a fork. Add the juice of 2 limes, 2 tablespoons chopped pickled ginger plus 1 tablespoon brine from the jar, 1 finely chopped seeded jalapeno, 3 thinly sliced scallions, 3 tablespoons chopped cilantro and 1 teaspoon kosher salt. Add the wasabi mixture and stir to combine. Season with salt. Serve with rice crackers.
WASABI AHI TUNA TARTARE
An easy sushi inspired tuna appetizer for two. I use 100% cold pressed unrefined peanut oil because it retains a strong peanut aroma and taste. The furikake does all the heavy lifting in this recipe.

- Place the tuna in a small bowl. Pour peanut oil over, sprinkle with the wasabi fumi furikake, and wasabi powder. Stir well, cover, and refrigerate until serving.
- To serve, press half of the mixture into a 1/2 cup container and unmold onto a bed of greens. Repeat for second portion.

- In a medium bowl, combine the tuna, cucumber, avocado, green onion, red pepper flakes and sesame seeds. Pour in the lemon juice, sesame oil and soy sauce, and stir carefully to blend so as not to mash the avocado. Place this bowl into a larger bowl that has been filled with ice. Chill in the refrigerator for 15 minutes, but no longer - the terrific freshness of the fish will be lost.
- Once chilled, remove the bowl from the ice, and invert onto a serving plate. Serve with toasted bread or your favorite crackers.

- Combine tuna, peanut oil, furikake, and wasabi powder in a bowl. Cover and refrigerate for at least 3 hours.
- Mix water and 1/2 teaspoon wasabi powder together in a medium bowl. Stir in mayonnaise, chives, and lime juice. Cover and refrigerate for at least 3 hours.

TEDDY'S MOMMY'S PAN SEARED AHI TUNA WITH WASABI SAUCE
This is a combination of two recipes I found while looking around on the internet. One didn't have the sesame seeds and one had the sauce I wanted. So I mixed ideas. If your tuna isn't bright red and it flakes apart you won't want to use it for this dish. I am finding if it isn't the right color and isn't fresh it does not taste right. I have purchased steaks in individual plastic packs that have been pre-frozen from the fish counter with good results. In the picture you see it with a vegetable it is Recipe #91301.

- Grate Daikon radish first, prep two plates with the radish laid out in a thin layer large enought to place a tuna steak on, leave out so it can get to room temperature (it isn't as good cold).
- Mix together all sauce ingredients and set them aside.
- Rinse tuna under cold water and pat dry.
- Place sesame seeds, coriander, salt, and pepper into a bowl large enough to dip the steaks into. Mix the ingredients well.
- Dip both sides of steaks into spice mix pressing down lightly to help the spices stick to the steaks.
- Warm sesame, and regular oil in deep 10" (I use a non-stick) frypan over medium high heat(gas 8) until they're shimmery.
- Carefully place both steaks into oil.
- Keep an eye on the side of the steaks, when they start to slightly brown turn them over and brown the other side.
- When done transfer steaks to cutting board and slice into 1/2" strips.
- Then place on beds of daikon radish and pour half of sauce over each steak.
- I usually serve this with a side of jasmine rice, or my recipe for wasabi mashed potatoes.

WASABI GUACAMOLE
Clipped this out of our local paper awhile back. It sounds so yummy. I have not made it as yet but I am putting it here for safe keeping. Be sure to use freshly made wasabi paste available at sushi bars, large supermarkets or Asian markets. Because the wasabi and the avocado are the same color, be sure to mix the ingredients well.

- Halve the avocado, remove seed. With a paring knife, crisscross through the flesh; using a teaspoon, scoop out the diced flesh into a medium-sized bowl. Add the lime juice.
- Using a fork or pastry blender, mash the avocado, leaving some texture. Add the wasabi paste, ginger, cilantro, garlic and a pinch of salt (to taste). Mix well.
- Taste and adjust seasoning, adding more wasabi and salt if needed.
- Serve with tortilla chips or deep-fried won ton triangles. Makes about 1 cup.

- Marinate the Ahi tuna steaks in soy sauce and chili flakes. The soy sauce should cover the steaks. Use more if needed. Chill in the refrigerator for 1 hour.
- Mango salsa: Dice the mango, bell pepper and onion. Combine all ingredients in a bowl and mix well. Salt to taste. Chill in the refrigerator for 1 hour.
- Wasabi-avocado cream: Blend all ingredients in a food processor until smooth or mash with a fork.
- Ahi tuna steaks: Take tuna out of the marinade and pat dry with paper towels. Spray/brush with vegetable oil.
- Heat a cast iron pan and sear tuna steaks for 2 minutes per side for medium or 4 minutes per side for well-done.
- Spoon wasabi-avocado cream and mango salsa on the plate and lay Ahi tuna steak on top.
- Serve and enjoy.

- For the Wasabi Ginger Butter Sauce:.
- Put shallot, ginger, wasabi and rice vinegar in sauce pan on medium high heat and allow vinegar to reduce to about 1 tablespoon. Add cream and reduce by one half. Add shoyu and turn heat to low. Whisk in butter cubes one at a time until incorporated. Remove from heat.
- For the Tuna:.
- Cut ahi into pieces as long as a nori wrapper and 1 inch thick. Spread nori sheets out. Line with spinach. Place one piece of ahi on each sheet. Season with salt and pepper. Top again with spinach. Roll and seal with water.
- Beat eggs with water and flour. Consistency should be the same as pancake batter. Put flour in one plate and panko in another. Roll wrapped ahi into flour, then into batter mixture and then into the panko breading making sure all parts are covered. Deep fry in hot oil. Turn constantly to allow even browning. Remove and slice.
- Place about 1 ounce of Wasabi-ginger Sauce on plate. Slice ahi rolls into pieces and arrange on sauce.
