TUNA BURRITO
Steps:
- In a mixing bowl, combine together drained tuna, sweetcorn, finely chopped celery, minced onion, mayonnaise, rice, salt and pepper. Mix well. Taste and add more seasoning, if needed.
- Thinly slice cucumber and place about 10 slices in the center of tortilla (10-inch/25-centimeters), in a row. Cover them with about a quarter of the tuna filling. Sprinkle with cheese (optional) and roll into burrito (check process photos above this recipe card).
- Wrap the ends in aluminum foil and cut in half (see note 6).
- Enjoy!

TUNA BURRITO
Steps:
- Preheat the oven to 350F.
- In a small bowl, mix the tuna with the cumin, chili powder and lime juice.
- Heat the oil in a large pan over medium-high heat. Add the onions and peppers and cook for ten minutes or until softened and a bit charred. Don't stir too often. Turn the heat down to medium-low, add the garlic and cook for 2 minutes longer. Season with salt and pepper.
- To build the burritos, divide the refried beans evenly amongst the tortillas. Top with the rice, tuna, sauteed peppers and onions, cheese and cilantro.
- To wrap the tortillas, fold the bottom of the tortilla up and over the filling. Roll it in tightly towards yourself. Fold up the two sides on either end and finish firmly rolling the burrito to the top.
- Add the burritos seam side down to a baking dish and cover with tinfoil. Bake for 20 minutes. Remove from the oven and let cool for 5 minutes.
- Cut each burrito in half and serve with sour cream and salsa.

- 1. Chop the cilantro. 2. Mince the onion. 3. Cut the fish into small pieces. 4. Heat the olive oil in a large frying pan over medium heat. Add the onion, fish, chili powder, and garlic salt. 5. Stir the ingredients with a wooden spoon. As the fish begins to cook, use the spoon to break it into flakes. 6. Lay each tortilla on a sheet of foil (make the sheets a few inches wider than the tortillas). On top of each tortilla, place 2 tablespoons fish, 1 tablespoon black beans, 2 tablespoons cheese, and 1 teaspoon cilantro. Roll up the burritos and seal with foil. 7. Place the foil-wrapped burritos directly on the rack of a preheated 350°F oven for 20 minutes or until heated through. Serve immediately.

SEARED AHI TUNA WITH BLACKBERRY-PASSION FRUIT MARINADE
This is a great summer dish. The marinade is great for grilling tuna, too. I usually serve this with a spinach salad with my passion fruit-dijon vinaigrette or my fennel salad. You can serve it with steamed white rice or over lettuce, thinly sliced cabbage, or fennel. Pair it with a passion fruit lemonade, a fruity cocktail, or a glass of light and fruity wine.

Steps:
- Crush blackberries in a bowl until smooth. Add passion fruit juice, soy sauce, lemon juice, honey, parsley, sea salt, and pepper and stir until marinade is thoroughly mixed.
- Place tuna in a glass dish and pour marinade over top; flip several times to coat. Cover the dish with plastic wrap and marinate in the refrigerator for 2 hours.
- Remove tuna from the marinade and shake off excess. Discard the remaining marinade.
- Heat a nonstick skillet over medium-high to high heat. Sear tuna in the hot skillet for 1 to 1 1/2 minutes per side.
- Remove from the skillet and slice into 1/4-inch thick slices.

I've had this dish at many different restaurants. Almost all had done a great job at the preparation as its an easy meal to make. Garlic mashed potatoes really complete this dish.

Steps:
- Melt the butter in a bowl or plate large enough to hold the tuna steak Place tuna steak in bowl, coating both sides with butter Sprinkle half of cajun seasoning on each side of steak For an extra spicy treat, add black pepper.
- I recommend cooking this outdoors on your grill.
- Cooking indoors will generate excessive smoke.
- Heat your grill to the highest possible temperature Turn off burners (to avoid flame up) then immediately add steak Cook for 2 minutes on first side Flip and cook on other side for 1 minute.
- (The steak will be very pink inside - yum!) Remove and serve immediately as it will cool quickly.
- I recommend serving over garlic mashed potatoes with either wasabi mustard or wasabi mustard/mayo mix.
