Mom's Best Dipping Sauce for Steamed Artichoke image

This rich dipping sauce comes courtesy of my wonderful brother-in-law ... a very good cook! I had this at his house and blackmailed my sister into sneaking out the recipe to me. Worth it!!!

Number Of Ingredients 6

1 cup mayonnaise (NOT Miracle Whip)
1/2 tablespoon Worcestershire sauce
1/2 tablespoon balsamic vinegar
1/2 tablespoon lemon juice
1/2 tablespoon tarragon
1/2 tablespoon minced garlic

Steps:

  • Mix all ingredients together in a glass or ceramic bowl.
  • Cover tightly with plastic wrap.
  • Chill for at least one hour.

4 fresh artichokes
1/4 cup olive oil
10 cloves garlic, minced
2 teaspoons minced fresh thyme or 1 teaspoon dried thyme
1 tablespoon fresh lemon juice
1/2 cup butter

Steps:

  • Cut stems and top 1 1/2 inches from artichokes.
  • Cut away first outside row of artichoke leaves.
  • Using scissors, cut off pointed tips of leaves.
  • Place Artichokes in steamer.
  • Steam artichokes until knife pierces base easily, adding more water if necessary, about 25 minutes.
  • Heat oil in heavy medium saucepan over medium heat.
  • Add garlic and thyme; cook 1 minute.
  • Add lemon juice and butter.
  • whisk until butter melts.
  • Season with salt and pepper.
  • Serve artichokes warm with seasoned butter.
  • Dip leaves and pull off flesh with teeth and dunk heart when you reach it.

  • Bring a large pot with 3" salted water to a boil. Cut the artichoke stem smooth and even so it can stand up on it's own. This is easier to do if it's cut closer to the base.
  • Insert a steaming basket into the pot along with the artichoke, preferably standing upright (just set the artichoke upright in the water if you don't have a steaming basket).
  • Reduce the heat to a simmer and cook ~35-45 minutes or until tougher outer leaves pull off easy and flesh is soft.
  • Gently melt the butter in the microwave or stovetop and combine remaining ingredients and mix.
