When the leaves begin to turn their bright fall colors and the brisk air ushers in autumn, the Oyster season in the Chesapeake Bay begins. Oysters are prepared every way imaginable, fried, roasted, grilled, steamed or simply eaten raw with a dash of hot sauce or lemon. Oysters may be fried either individually or using several bound together in batter, known as a fritter- this is a typical (and delicious) recipe for oyster fritters.

Steps:
- Using a whisk, beat the eggs in a small bowl. Add the milk and whisk until a bit frothy. In a second, larger bowl, mix the flour, baking powder, salt and pepper. Add in the egg mixture and mix until you have a smooth batter. Fold in the oysters and their liquor until they are evenly coated.
- Heat the vegetable oil in a large skillet until very hot. Ladle out 3 or 4 oysters and fry until golden brown on both sides, about 4 - 6 minutes. Remove and drain. Serve with tartar sauce or lemon slices and enjoy the first oyster harvest of the fall.

Steps:
- Rinse oysters, and cut any that are too large in half.
- Mix well the flour, egg, salt and pepper.
- Should be like pancake batter.
- Add more milk if necessary.
- Heat oil to very hot, (375) in a large skillet.
- Dip oysters in batter, let drain a few seconds.
- Carefully drop oysters in hot oil.
- Fry for about 4 minutes, until golden brown.

AIR FRYER OYSTERS
Steps:
- Drain oysters and pour on to a few paper towels to pat them dry.
- In a shallow bowl combine flour, cajun seasoning, salt, pepper and mix together.
- In a second bowl whisk together eggs and hot sauce.
- In a third bowl pour in the Panko breadcrumbs.
- One at a time dip each oyster in flour, then egg mixture, then roll to coat in Panko.
- Spray air fryer basket with non stick spray and lay coated pieces in one layer into basket.
- Cook at 350 degrees F for 4 minutes, then shake basket gently and cook for an additional 4 minutes. Serve with a squeeze of lemon on top.

AIR FRYER FRIED RAVIOLI ON A STICK
Steps:
- Place flour in a medium bowl. In a small bowl, beat eggs. In a shallow dish, mix breadcrumbs, 1/2 cup of the Parmesan cheese, oregano, thyme, and House Seasoning.
- Add ravioli to flour, toss to coat, and gently shake off excess. Dip each ravioli in egg, shaking off excess. Roll each ravioli gently in breadcrumb mixture. On a skewer, thread 3 breaded ravioli. Spray both sides with oil.
- Working in batches of 4, place skewers in air fryer basket. Set temperature to 400 degrees, and air fry for 4 minutes. Turn skewers, spray with oil, and air fry for 2 minutes more. Repeat with remaining skewers. Sprinkle with Parmesan cheese, and serve warm with warm pesto on the side.
AIR FRYER SOUTHERN FRIED CHICKEN

- Season chicken well with House Seasoning. In a medium bowl, beat together eggs and The Lady & Sons Signature Hot Sauce. Place flour in a shallow dish. Dip chicken pieces in egg mixture, then dredge in flour. Place on a baking sheet lined with parchment paper.
- Working in batches of 4, spray tops of chicken with oil and place in air fryer basket. Spray chicken again. Set temperature to 350˚F, and air fry for 15 minutes. Turn chicken, spray with oil, and air fry for 10 minutes more. Turn chicken, spray with oil, and air fry for 10 minutes more. Turn chicken again, and spray with oil. Increase temperature to 400˚F, and air fry for 7 minutes. After chicken has reached an internal temperature of 165˚F, remove to a serving platter and cover to keep warm. Repeat with remaining chicken.
