AIR FRYER ZUCCHINI
This Air Fryer Zucchini is soft in the middle and golden-brown and crispy on the outside. Serve with marinara sauce or ranch dressing for dipping!

Steps:
- On a large shallow plate, whisk together breadcrumbs, parmesan, flour, ranch mix, and salt until well combined.
- In a medium sized bowl, whisk together eggs until fully combined.
- Coat zucchini slices in the egg, then the panko mixture.
- Preheat air fryer to 350 degrees F and spray the basket with cooking spray.
- Place as many zucchini slices in the air fryer basket as you can without overlapping them (I could fit 16), then air fry for 10-15 minutes (I did 12), flipping halfway through.
- Keep air fried zucchini in a warm oven while you make the remaining zucchini!

KETO ZUCCHINI FRIES

Steps:
- Slice off the edges of the zucchini. Then, slice the zucchini in half.
- Cut each half into 8 fries. You should get 16 fries from each zucchini.
- Set the zucchini in a colander over a paper towel to catch water from the zucchini /
- Then, add a tablespoon of salt.
- Mix the zucchinis with your hands or a large spoon to help the coat the zucchinis with salt.
- Wait 20 minutes to let the moisture of the zucchinis get pulled out. This helps make the zucchinis more crispy.
- Pat the zucchinis with a dry towel or paper towel to remove excess water and some of the salt.
- You can even rinse the zucchinis and pat dry if salt is a concern.
- In a small bowl, add 1 egg per zucchini.
- In a plate, add 1/2 cup of grated parmesan cheese.
- With one hand, grab the zucchini and dip it into the egg. Let the egg drip off and add it to the parmesan plate.
- With the other hand, pat the cheese into the zucchini.
- Lift it with the designated cheese hand and add it to the air fryer basket. Keep the zucchinis spread apart so that they are not touching.
- Set the air fryer to 375 degrees F for 15 minutes.
- Flip the zucchini fries over at the 10 minute mark.
- Serve Immediately.

- In a small bowl, combine the paprika, garlic powder, onion powder, salt, and pepper. - Preheat air fryer to 400˚F.
- Combine Panko crumbs, Parmesan cheese, Italian Seasoning, paprika, salt, and pepper in a medium shallow bowl; whisk to combine.
- Place egg in a separate bowl.
- Dip each zucchini stick in egg and then dip into the Parmesan mixture, making sure all sides are well coated.
- Place zucchini fries in a single layer inside the air fryer basket. You will have to do this in batches since all the zucchini fries will not fit into the Air Fryer basket at once.

- On a large plate, combine flour, salt, pepper, and Italian seasoning.
- In a separate, small bowl, whisk eggs together. Set aside.
- In a medium-sized bowl, combine bread crumbs and parmesan cheese.

- In a bowl, mix together the crumbs, cheese and herbs, set aside.
- Wash the zucchini well; leave unpeeled. Cut in half cross wise, then cut into wedges not more than 1 cm (1/2 inch) thick.
- Spray top rotating pan of Actifry.
- Put egg white in a shallow bowl or place. Put a small amount of the crumb mixture on another plate. (Important! Only work with a small amount of crumb mixture at a time, otherwise it will all get matted and unusable.)
- Dip a zucchini wedge in the egg white to coat, then in the crumbs to coat, pressing down well. Then put in Actifry pan. Repeat till all wedges are coated. If Actifry pan has gotten full, then put the prepared wedges on a plate to wait (don't stack.) Refill the crumb mixture plate with a bit more crumb mixture as necessary. If your hands are getting globbed up, wash and dry them to start fresh.
- Spray lightly the wedges that are in the air fryer. Cook for 7 minutes; with tongs turn them over, and cook for another 7 minutes. Take all these out, put somewhere with a cover over them (such as a microwave plate cover) to keep warm, then do the second batch of wedges the same. When you're read to serve, carefully add the first batch back in, and give them all another minute or two to get piping hot.
- Makes enough for 4 as a generous side dish.
- Serve each serving hot with its own allotment of dipping sauce made from 2 tbsp fat free Greek yoghurt mixed with 1 tbsp low-fat Blue cheese or ranch dressing (any plain fat-free yoghurt will do, but Greek makes the dip thicker.) Sriracha sauce is also good with these.

- In a shallow dish, whisk together flour and a large pinch each of salt and pepper. In a second shallow dish, beat together one whole egg and yolk of second egg. Discard extra egg white.
