STRIKER'S POTATOES O'BRIEN
I'm tired of buying this at the store, so I decided to make my own. In my opinion, this is the best way to prepare potatoes for a typical breakfast. This recipe lasts a long time in the freezer. Just pull the bag out of the freezer and toss as much as you want onto a hot pan or griddle. Add more vegetable oil when cooking if needed. Enjoy.

Steps:
- Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 10 minutes. Drain, then set aside until cool. Once cool, cut into 1/2-inch dice.
- Combine the potatoes, green bell pepper, red bell pepper, and onion in a mixing bowl. Drizzle in the vegetable oil, and gently stir until evenly coated. Spoon the mixture into resealable freezer bags. Store the mixture in the freezer.
- To prepare, cook the frozen mixture in a nonstick skillet over medium-high heat until crispy and golden brown, stirring occasionally, about 20 minutes.

AIR FRYER HASHBROWNS
These air fryer hash browns use a mix of russet potatoes, pepper, onion and spices to create a great healthy side dish for any time of the day.

Steps:
- Add diced potatoes, pepper, onion and avocado oil into a large bowl. Toss together until potatoes are fully coated.
- Add in salt, garlic powder, onion powder and black pepper and toss everything together until seasonings are evenly coated on peppers, onions and potatoes.
- Add to air fryer basket and cook at 400 degrees for 20 minutes tossing half way through.
- Remove from air fryer basket and serve hot.

Crispy and delicious air fried hash browns

Steps:
- In a bowl, place frozen hash browns and add garlic, paprika, salt and pepper. Mix to combine ingredients.
- Spread a thin layer of frozen hash browns on the air fryer basket. Spray a little bit of nonstick cooking spray. Depending on the size of the air fryer, you may need to do this in two batches.
- Set temperature to 400F for 10 minutes.
