1 pound skirt steak
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon steak seasoning
2 tablespoons olive oil
Olive oil for pan

Steps:

  • Dry your steak off with paper towels or a kitchen towel. Then season your steak with salt, black pepper, and steak seasoning.
  • Place your pan onto the burner, and turn on your heat to medium-high. Allow the pan to get hot for about 2 to 3 minutes. Add the olive oil.
  • Then add our steaks, sear both sides for about 2 to 3 minutes, then transfer to a preheated air fryer, at 400 degrees F, air fryer setting, and cook for 5 minutes. flipping halfway. (This will give you a medium steak)
  • Let rest for a couple of minutes before slicing.
  • Plate, serve, and enjoy!

1 onion, sliced into strips
1 bell pepper, seeded and sliced into strips

Steps:

  • Combine olive oil, salt, garlic powder, cumin, jalapeno chili powder, chili powder, and coriander in a resealable plastic bag. Add steak, onion, and bell pepper, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
  • Line an air fryer basket with a sheet of perforated parchment paper. Add marinated onions, peppers, and steak.
  • Air fry for 5 minutes at 400 degrees F (200 degrees C). Remove the air fryer basket and shake to ensure even cooking. Air fry until steak is cooked through, about 4 minutes longer.

Skirt steak is an inexpensive cut of beef taken from the diaphragm muscle. It ranks with filet mignon as my favorite juicy and tender cut. It comes in long, narrow strips about 3/4 lb. each. The grain runs across the narrow side and so for serving the steak should be cut into serving-size pieces with the grain so that it can then be cut into bites against the grain.

2 pounds beef skirt steak
2 tablespoons lemon juice
⅓ cup prepared spicy brown mustard
1 pinch salt and pepper to taste
1 cup blue cheese dressing

Steps:

  • In a small bowl, stir together the lemon juice and mustard. Trim away most of the fat from the steaks, and rub with the mustard marinade. Place into a resealable bag, and marinate in the refrigerator for at least 1 hour, and up to 24 hours.
  • Preheat a grill or large skillet for medium-high heat.
  • Grill or fry steaks for about 5 minutes per side, or to your desired degree of doneness. Remove from the heat, and let the meat rest for 5 to 10 minutes to let the juices settle. Cut each steak along the grain into 3 or 4 pieces. Serve with blue cheese dressing.

Juice of 1 lime
1 4-ounce can green chiles, diced
4 cloves garlic, minced
¼ cup fresh cilantro leaves, chopped
1 teaspoon kosher salt
1 teaspoon cumin
1 teaspoon oregano
½ teaspoon paprika
½ teaspoon black pepper
1 pound skirt steak (or flank steak)

Steps:

  • In a measuring cup, combine olive oil, soy sauce, brown sugar, lime juice, chiles, garlic, cilantro, salt, cumin, oregano, paprika, and pepper. Place the steak in a gallon-size zipper bag and pour the liquid into the bag. Seal and marinate for at least 4 hours (or overnight), turning the bag at least once.
  • Remove the steak from the marinade and allow it to come to room temperature for at least 20 to 30 minutes.
  • Preheat your air fryer to 400 degrees.
  • Place the skirt steak in the air fryer and cook for 3 minutes. Flip the steak, then cook for an additional 3 minutes (for medium-rare; increase time to 8 minutes total for medium, 10 to 12 for well).

1 tablespoon vegetable oil. I used Avocado oil.
1/2 teaspoon salt and pepper, or to taste.
1 teaspoon steak seasoning of choice. My favorite steak seasoning is Longhorn Steakhouse signature seasoning or Vegeta seasoning with no MSG.

Steps:

  • Rub the steak with oil and coat both sides with salt, pepper and spices
  • Preheat air fryer to 425F/220C for at least 5 minutes. This will ensure that the basket gets hot
  • Place the steaks in the air fryer basket/tray
  • Cook on air fry mode 6 minutes (flipping halfway) for medium-rare. Or 8-10 minutes (flipping halfway) for a medium.
