AIR FRYER TOSTONES (WHOLE30, PALEO)
Steps:
- Cut off ends of green plantains.
- Carefully use your knife to score the skin of the plantain then peel off the skin.
- Cut the plantain into 1 inch coins.
- Toss the plantains in enough avocado oil to coat.
- Line your air fryer with the plantains in a single layer.
- Air fry at 400F for 5-6 minutes.
- Remove plantains, then flatten with something with a flat surface (bottom of a cup, plate, bowl, or small skillet).
- Toss the flatten plantains with more avocado oil and kosher salt.
- Place the flatten plantains back into the air fryer in a single layer (you may have to cook in batches) and air fry for 5 minutes at 400F.
- Flip the tostones and then air fry for an additional 4-5 minutes at 400F or until golden brown.
- Serve tostones immediately!

These paleo air fryer tostones make the most addicting snack while being extra easy and crispy in the air fryer! You can use minimal amount of oil for this Whole30 and vegan recipe without any frying or splattering.

Steps:
- Preheat air fryer to 400 degrees F for 5 minutes, and combine water and salt in a large bowl.
- Cut the ends off the plantains and make a vertical slit through the skin, so you can easily remove the peel.
- Cut the plantains into 1-inch thick slices.
- Toss the plantain slices with 2 tsp coconut oil.
- Cook in the air fryer in a single layer for 5 minutes.
- Immediately remove the plantains and smash each slice with the bottom of a jar or a mug while they are hot.
- Dip the flattened slices in salt water quickly and set aside.
- Brush each flattened slice generously the rest of the coconut oil (3 tsp) front and back.
- Place back in the air fryer for 5-8 minutes, gently flipping them halfway through, until they are golden and crispy.
- Sprinkle with lime juice, if using, and sea salt.
- Serve immediately alone or with your favorite dip like guacamole.

AIR FRYER TOSTONES
Tostones are made with green (unripe) plantains and are a very popular side dish in many Caribbean and South American countries. The traditional method is to twice-fry the plantains in oil, but this air-fried version of my Puerto Rican family's recipe is much lighter as it uses olive oil spray instead of deep-frying.

Steps:
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Slice tips off the plantain. Make a vertical cut in the skin from end to end, making sure to cut only through the thick skin and not into the plantain flesh. Cut plantain, still with the peel, into 1-inch chunks. Peel the skin off each chunk starting at the slit you made.
- Place the plantain chunks in your air fryer basket and spray them with olive oil spray. Air fry for 5 minutes. Meanwhile, prepare a bowl of salted water.
- Remove the plantain pieces from the air fryer with tongs. Smash to about 1/2-inch thickness using a tostonera (plantain smasher). Soak the smashed tostones in the bowl of salted water while smashing the rest.
- Remove the tostones from the salted water and pat dry with a paper towel.
- Return tostones to the air fryer in batches, filling the basket with a single layer each time. Spray the tops with olive oil spray and season with salt; air fry for 5 minutes. Flip with tongs and spray the other side with olive oil spray. Season with salt. Air fry until golden brown and crisp, 4 to 5 minutes more.

- Preheat the air fryer to 350 degrees. Cut your chicken breast into strips about 1 inch thick, and 3 inches long.
- In a smaller bowl, whisk together egg and water. In a flat bowl or plate, mix together almond flour, pecans, Italian seasoning, garlic powder, and sea salt.
- Dip each chicken strip into egg mixture, then into almond flour mixture, shake off any excess. Carefully place each chicken strip into the basket of your air fryer. Repeat with remaining chicken.
