Taking its name from the word for the meatballs that float in its rich broth, this great one-dish meal is arguably the national soup of Mexico. Make a big pot for a casual party, keeping it warm on the stove top. Adding the cilantro pesto to each serving produces a wonderfully fresh taste.

3/4 cup short-grain white rice
1 1/2 cups water
4 tablespoons vegetable oil
2 white onions, diced
1/2 lb ground pork
1/2 lb ground beef
1 egg
1 teaspoon ground cumin
1 teaspoon dried oregano
1 1/2 teaspoons salt
1 teaspoon fresh ground pepper
1 garlic clove, minced
1 zucchini, diced
2 carrots, peeled and diced
2 ripe tomatoes, peeled, seeded and diced
6 cups chicken broth
1/2 cup coarsely chopped fresh cilantro
1 fresh mint sprig, stemmed and chopped
2 limes, juice of
2 tablespoons olive oil
2 tablespoons water
1/2 teaspoon salt

Steps:

  • Place the rice in a heatproof bowl. Bring the water to a boil and pour it over the rice. Let soak for 40 minutes, then drain; set aside.
  • Meanwhile, in a sauté pan over medium heat, warm 2 tablespoons of the vegetable oil. Add 1 of the diced onions and sauté until soft, about 5 minutes. Remove from the heat and let cool.
  • In a bowl, combine the pork, beef, cooled onion, soaked rice, egg, cumin, oregano, 3/4 teaspoon of the salt and 1/2 teaspoon of the pepper. Using your hands, mix well and form into 1-inch balls.
  • In a large soup pot over medium heat, warm the remaining 2 tablespoons vegetable oil. Add the remaining diced onion and sauté until soft, about 5 minutes. Add the garlic, zucchini, carrots and tomatoes and cook, stirring, until fragrant, about 5 minutes. Add the chicken stock, stir well and bring to a boil. Carefully slip the meatballs into the pot, reduce the heat to low and simmer uncovered until the meatballs are fully cooked, about 45 minutes. Stir in the remaining 3/4 teaspoon salt and 1/2 teaspoon pepper.
  • While the soup simmers, make the cilantro pesto: In a mini food processor or a blender, combine the cilantro, mint, lime juice, olive oil, water and salt. Process to a paste.
  • Ladle the soup into warmed soup bowls and top each serving with a dollop of cilantro pesto. Serve at once.

This recipe multiplies up very easily, and sometimes I use the beef broth that doesn't need to be diluted. Just make sure to keep the liquid in a roughly 50% tomato soup 50% beef broth proportion. We usually have King's Hawaiian Bread with this. I prefer sweet sausage but you could use hot or make the meatballs from hamburger, etc. The type of meat you use will change the flavor of the soup.

This soup reminds me of when I was young, staying home from school. My grandmother would make this for me. It is so good and flavorful. It is great for a cold rainy day, or any day you feel like it. You can substitute any of the veggies for ones you like better. My grandmother would also make Mexican rice and scoop some into my bowl to make it even better!

1 pound ground beef
1 bunch cilantro, finely chopped
1 small onion, chopped
4 cloves garlic, minced
1 pinch garlic salt
1 pinch onion powder
salt and ground black pepper to taste
4 (14.5 ounce) cans chicken broth
4 large carrots, cut into 1/2 inch pieces
3 stalks celery, cut into 1 inch pieces
3 potatoes, cubed

Steps:

  • Place the ground beef, 1/2 of the cilantro, 1/2 of the chopped onion, the garlic, garlic salt, and onion powder in a bowl. Sprinkle with salt and black pepper, and mix gently until combined. Form the meat mixture into golf ball-sized meatballs.
  • Spray a large skillet with nonstick spray, and brown the meatballs carefully over medium-high heat; remove the meatballs and set aside (the meatballs do not need to be fully cooked; they will finish cooking in the soup). Cook and stir the remaining onion in the same skillet over medium-low heat until translucent, about 10 minutes.
  • Pour the chicken broth into a large pot, and stir in the onion; add the carrots, celery, and potatoes. Bring to a boil over high heat; reduce heat and simmer until potatoes are nearly tender, about 15 minutes. Add the meatballs and the remaining cilantro; simmer for 30 minutes. Season to taste with salt and black pepper.

1 large onion, chopped
4 large garlic cloves, minced
1 1/2 tablespoons chili powder
1 28-ounce can plum tomatoes
1 14 1/2-ounce can beef broth
1 pound lean ground beef
1/2 teaspoon dried oregano, crumbled
Chopped fresh cilantro
Sour cream (optional)

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add onion and three garlic clover and sauté until tender, about 5 minutes. Stir in 1 tablespoon chili powder and cook 1 minute longer. Add tomatoes with their juices and beef broth. Cover and simmer 5 minutes. Puree mixture in blender or processor in batches; return to saucepan.
  • Season beef with salt and pepper. Mix in remaining garlic clove, 1/2 tablespoon chili powder and oregano. Form beef into 1-inch meatballs. Return soup to gentle simmer. Add meatballs to soup and simmer until meatballs are just cooked through, about 5 minutes. Ladle soup into bowls. Garnish soup with chopped fresh cilantro and serve with sour cream if desired.

2 quarts water
1 pound ground beef
½ cup uncooked white rice
1 egg
2 tablespoons dried oregano
2 teaspoons garlic salt
2 teaspoons ground black pepper
¼ teaspoon ground cumin
½ cup all-purpose flour
3 potatoes, peeled and cubed
salt and pepper to taste

Steps:

  • Pour the water into a large pot over high heat and bring to a boil.
  • Meanwhile, in a large bowl, combine the ground beef, rice, egg, oregano, garlic salt, ground black pepper and cumin. Mix well and form into 1 inch meatballs.
  • Roll the meatballs in the flour, coating well, and carefully drop them in the boiling water. Reduce heat to low and simmer for 45 minutes, stirring frequently, and making sure soup does not get too thick.
  • Add more water, if necessary, and add the potatoes to the soup. Simmer for 1 more hour, or until potatoes are tender. Season with salt and pepper to taste.

1 large onion, finely chopped
2 garlic cloves, finely chopped
1-1/2 cups tomato sauce
8 cups beef broth
1-1/2 pounds lean ground beef (90% lean)
1/3 cup uncooked long grain rice
1 large egg, lightly beaten
1 teaspoon salt
1 teaspoon pepper
1 tablespoon 2% milk
1/8 teaspoon ground cumin
1/8 teaspoon saffron threads or 1/2 teaspoon ground turmeric
10 saltines, crushed
Optional: Tostadas, shredded cabbage and cilantro

Steps:

  • In a Dutch oven, cook onion, garlic and ½ cup tomato sauce with olive oil until onion is tender. Add broth and ½ cup tomato sauce; bring to a simmer., Meanwhile, in a large bowl, mix ground beef, rice, egg, salt, pepper, milk, cumin, saffron, crushed crackers and remaining ½ cup tomato sauce until combined. 1 large egg

Steps:

  • Make the meatballs: In a large bowl, combine the ground beef, ground turkey, rice, egg, garlic, salt, pepper, cumin, and cilantro and gently mix together until well combined. Use an ice cream scoop or your hands to shape the meatballs into 1½-inch balls, about the size of a golf ball. You should have about 25 meatballs.
  • Heat a large Dutch oven over medium heat. Add the canola oil and warm for about 1 minute. Working in batches, add the meatballs in a single layer and brown on all sides, about 5 minutes total. Transfer to a baking sheet and repeat with the remaining meatballs.
