- Cook pasta according to package directions. , Meanwhile, in a large skillet, cook the sausage, green pepper, onion and mushrooms over medium heat until meat is no longer pink; drain. Stir in Alfredo sauce. Drain pasta and stir into skillet; heat through. Sprinkle with Parmesan cheese.

Steps:
- In a large pot with boiling salted water cook fettuccini until al dente. Drain.
- In a large skillet cook sausage until brown. Drain and set aside.
- To make the Alfredo sauce, melt butter in medium saucepan over low heat. Add heavy cream and Locatella cheese and cook, stirring frequently, until mixture comes to a soft boil. If desired, add parsley.
- Pour Alfredo sauce over fettuccini noodles and top with the cooked sausage.
- Serve immediately as sauce will separate upon cooling.

SAUSAGE AND SPINACH FETTUCCINE ALFREDO RECIPE
This easy fettuccine alfredo recipe features a silky smooth sauce made with butter and parmesan cheese, cooked sausage, and lightly wilted spinach. You need less than 20 minutes to make it and there isn't a splash of cream in sight.

- Add sausage to a wide skillet over medium-low heat. Cook, breaking up the sausage with a wooden spoon until crispy; about 10 minutes. (While the sausage cooks, move on to cooking the pasta.)
- Meanwhile, bring 3 quarts of water to a boil in a large pot. Add one tablespoon of salt and the fettuccine. Cook, stirring once or twice, for 3 minutes less than the suggested cooking time on the package. The pasta will finish cooking when making the sauce. Reserve 1 1/2 cups of the pasta cooking water then drain pasta.
- Add parmesan cheese, butter, spinach, 1 cup of reserved cooking water, and the drained pasta to the skillet with the cooked sausage. Set the skillet over low heat. Use tongs to toss the fettuccine, butter, and cheese around the pan for one minute. Take the pan off of the heat then cover the skillet with a lid. Leave for one minute.
- Uncover the skillet, toss the pasta a few more times in the sauce. If the pasta looks dry, add a splash more pasta water. If it looks wet, don't worry, the pasta absorbs some the extra moisture as it cools.
- Serve fettuccine with a few grinds of pepper and a sprinkle of extra parmesan cheese on top.

FETTUCCINI ALFREDO WITH SAUSAGE

- Cook fettuccine per package directions al dente.
- While the fettuccine cooks, heat a large skillet and add the oil. Heat the oil until it shimmers and fry the sage leaves (it only takes a few seconds), in batches, until all are fried. Leave the oil in the skillet and transfer the bay leaves to paper towels to dry.
- Separate the sausage into bite-size chunks and sauté them in the oil just until cooked through (don't overcook or sear). Add the minced garlic and cook 15-30 seconds or until the garlic softens and blooms. Transfer the sausage to a plate and set aside.
- Pour off the fat from the skillet while trying to preserve as much garlic as possible. Add the cream and bring it to a low boil while scraping the bottom of the pan. Reduce the heat and return the sausage to the skillet, and season with salt & pepper, to taste. Remove from the heat.
- Drain the pasta and place it on a large serving platter or bowl. Pour the sauce over the pasta, toss gently and sprinkle on the fried sage leaves.
- Garnish with grated Parmigiana.
- Enjoy!

SAUSAGE & PEPPERS PENNE ALFREDO
Penne pasta served with hot Italian sausage, bell peppers, and onions in a creamy Alfredo sauce. This is a recipe that I created on the fly. Ingredient measurements are "best guess" because I pretty much just threw everything in to taste. Feel free to adjust to your taste and enjoy!

Steps:
- Slice sausage into 3/4 inch slices.
- Cut onions and peppers in to thin strips (julienne slices).
- Mince 3 to 4 cloves of garlic or measure out 1 Tbsp of pre-minced garlic.
- Chop basil into small strips (about 1 inch in length).
- Prepare pasta based on packaged instructions.
- Fry sausage in oil over medium-high heat until all pieces have turned brown.
- Add peppers and onions, season with salt and pepper to taste, and fry with sausage for 2 minutes.
- Add garlic and fry for 1 more minute.
- Dust the mixture with 2 Tbsp of flour (this step is optional, and will create a thicker sauce) and stir for about 1 1/2 to 2 minutes.
- Add chicken broth and stir mixture for about 30 seconds.
- Turn heat down to medium-low and add cream. Stir to combine.
- Slowly bring cream to a boil and let simmer for 5 minutes over medium-low heat, stirring occasionally.
- Add Parmesan cheese and stir until cheese is melted into mixture.
- Garnish with fresh basil and serve over pasta.

I was looking throught my freezer and cabinets and came across some Italian Sausage and jarred Alfredo sauce. And since I didn't want the usual Italian sausage with red sauce,and wasn't in the mood for regular alfredo. This is what came out of the dark corners of my brain :)Please feel free to use red,green or yellow peppers. - Preheat oven to 375°F. Spray a 9x13-inch baking pan with cooking spray and set aside.
- Cook pasta according to package directions and drain.
- Meanwhile, in a skillet, brown and crumble the sausage over medium-high heat until no longer pink. Drain. Set the sausage aside.
- In the same skillet, melt the butter. Saute the red onion and bell pepper for 2-3 minutes. Add the mushrooms and continue to saute for an additional 2-3 minutes.
- In a large bowl (or the same pan the pasta was cooked in), combine the pasta, sausage, veggies and Alfredo sauce. Mix well. Spread evenly into the prepared 9x13-inch pan. Top with Mozzarella cheese.

- Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, 2 to 3 minutes. Drain and set aside.
