BAKED ALICE SPRINGS CHICKEN
This chicken is loaded with flavors of honey mustard, mushrooms, onions and topped off with bacon and cheese and made all in one casserole dish@ This dish will have you licking your plate when you are done.

Steps:
- Lay the chicken breast flat in a large casserole dish. Season with 1/4 tsp of each, salt, pepper and garlic powder.
- Spread 1-2 tbsp of honey mustard on top of each chicken breast to make a nice thick layer.
- Combine the chopped mushrooms, thinly sliced onions, oil, and remaining salt, pepper, and garlic powder in a bowl and stir to coat. Then spread the mixture over the top of the chicken and top with cheese.
- Bake uncovered at 375˚F for about 30 minutes. Then remove the dish, crumble the bacon over the top then sprinkle cheese evenly over the dish and return to oven for 5-10 minutes, or until the chicken is cooked though (internal temp of 165˚F.)
- Garnish with parsley and serve with mashed potatoes, rice, or your favorite side dish. Enjoy!

- Spray baking dish with non-stick spray. Cut chicken bite-sized and sprinkle with spices and mix well. Layer in bottom of casserole dish. Saute mushrooms in a little olive oil until all water has been released, then layer mushrooms on top of chicken. In same frying pan, saute Canadian bacon a few minutes, just to release flavor and slightly crisp it. Layer bacon on top of mushrooms. Heat chicken stock to boiling in saucepan. Mix flour with 2 tablespoon cold water, then whisk into chicken stock and cook 5 minutes, or until slightly thickened. Whisk in Alfredo Sauce, and heat through, then pour sauce over the chicken mixture in casserole dish, letting sauce run down to bottom of pan. Cover with foil and bake at 375 degrees F for 20 minutes. Uncover, sprinkle with cheese, bake 10-20 minutes, until cheese is slightly browned and casserole is bubbly. cook's notes Inspired by Outback Steak House dish called "Alice Springs Chicken".

Steps:
- Place chicken in a glass dish or bowl; poke with a fork several times, then pour Worcestershire sauce in and turn to coat. Cover dish or bowl and refrigerate for about 1 hour.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
- Heat butter in a small skillet over medium heat. Add mushrooms, and saute for about 10 minutes, or until soft; set aside.
- Preheat oven to Broil.
- Remove chicken from marinade (discard any remaining liquid), and broil for about 5 minutes each side. When chicken is almost finished, top each breast with 2 slices bacon, then cheese. Continue to broil until cheese has melted, then remove from oven. Serve with mushrooms and salad dressing for topping.

- Preheat oven to 350°F. Sprinkle and rub the chicken breasts with seasoned salt. Cover and refrigerate for 30 minutes. While the chicken is in the refrigerator, cook bacon in a large skillet until crisp. Remove bacon, crumble and set aside. Reserve bacon grease. Saute chicken in the bacon grease for 3 to 5 minutes per side, or until browned. Place chicken in a 9 by 13 inch casserole dish or pan. In a small bowl, mix the mustard, honey, mayonnaise and dried onion flakes. Spread some of the honey mustard over each piece of chicken. Set aside leftover sauce for serving. Layer with mushrooms, crumbled bacon, and shredded cheese. Bake 30 minutes, or until cheese is melted and chicken is done. Serve with remaining honey mustard sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts in a baking dish. Season with salt and pepper.
- Bake chicken in the preheated oven until it is just slightly pink in the center, about 25 minutes. Remove from the oven.
- Place bacon in a large skillet and cook over medium heat, turning occasionally, until most of the fat has rendered, about 5 minutes. Drain bacon slices on paper towels. Wrap around chicken breasts.

Steps:
- Preheat oven to 350°.
- On each piece of chicken, carefully layer the mushrooms first and then the bacon (position the bacon on the mushrooms so that it holds the mushrooms in place).
- Cover and bake for 30-45 minutes or until chicken is cooked through.
- Remove from oven; add cheese and bake for 15 minutes uncovered.
- Serve with a side of honey mustard salad dressing for a real treat!

- Whisk together honey, Dijon mustard, mayonnaise, and lemon juice in a small bowl until smooth. Reserve ½ cup of sauce and set aside. Pour remaining honey mustard sauce into a gallon-sized Zip lock bag and add chicken. Marinade for 1 hour, up to 24 hours.
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a heavy-bottomed skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.
- Remove chicken from the marinade with tongs and place into hot skillet. Season each side with salt and pepper and cook until golden brown but not cooked through, working in batches as not to over-crowd the pan.
- Place browned chicken on prepared baking sheet.
- In the same skillet, add butter and melt over medium heat. Stir in mushrooms and a pinch of salt, and cook until tender and starting to brown. Remove from heat.
- Divide and spoon mushrooms over the chicken breasts, followed by 2 slices of bacon, and the Monterrey jack cheese.
- Bake for 10-15 minutes or until the thickest part of the chicken reaches 165 degrees.
- Top with fresh parsley and serve with reserved honey mustard sauce for dipping.
