ULTIMATE SCALLOPED POTATOES

Ultimate Scalloped Potatoes image

I was asked to bring a potato dish for Christmas and this is what I came up with. Everyone loved them and the dish was empty by the end of dinner...which I took as the ultimate compliment. As with all my creations I am usually inspired by other great chefs on this site. The inspiration for these came from "Twice Baked Potato Casserole #26043" by MizzNezz.

Provided by Tooltime

Categories     Potato

Time 1h35m

Yield 10-12 serving(s)

Number Of Ingredients 14

6 -8 medium potatoes, sliced thin
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 teaspoon granulated garlic
1 tablespoon prepared horseradish
1 (12 ounce) can fat-free evaporated milk
3 cups sour cream
1 lb bacon, cooked drained and crumbled (reserve grease)
2 cups pre-shredded cheddar cheese
2 cups pre-shredded mozzarella cheese
4 medium onions, sliced
2 green onions, chopped
3 tablespoons butter
1 pinch sugar

Steps:

  • Grease 13x9" casserole dish with reserved bacon grease.
  • In bowl wisk together the evaporated milk, sour cream, salt, pepper, horseradish, and garlic.

SCALLOPED POTATOES

Scalloped Potatoes image

The perfect side dish to an elegant or celebratory main course, or the welcome addition to any potluck supper, scalloped potatoes are one of those dishes that seem complicated, but are deceptively simple. You'll need to put in a bit of "peeler time" to get the spuds ready for the oven, but after that it's just a long bake and a short standing period to let the sauce thicken. Then, voila! you're ready to serve.

Provided by By Betty Crocker Kitchens

Categories     Side Dish

Time 2h5m

Yield 6

Number Of Ingredients 7

4 tablespoons butter
1 small onion, finely chopped (1/3 cup)
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
6 medium peeled or unpeeled potatoes, thinly sliced (6 cups)

Steps:

  • Heat oven to 350°F. Grease 2-quart casserole with shortening or cooking spray.
  • In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  • Spread potatoes in casserole. Pour sauce over potatoes. Cut remaining 1 tablespoon butter into small pieces; sprinkle over potatoes.
  • Cover; bake 30 minutes. Uncover; bake 1 hour to 1 hour 10 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving (sauce thickens as it stands).

Categories     side-dish

Yield 4 servings

Number Of Ingredients 10

4 large Russet potatoes, scrubbed
2 tablespoons olive oil
1 stick unsalted butter
1/2 cup milk
1/2 cup cream
1/4 cup grated fresh horseradish
Salt and pepper

Add the butter, milk, cream and horseradish and mash until smooth, if the mixture is too dry add more milk. Season well with salt and pepper to taste. Fill each of the 4 skins with the mashed potato mixture. Place the filled potatoes on a baking sheet and return to the oven, bake until lightly golden brown, about 8 to 10 minutes. Remove from the oven and top with a dollop of sour cream, a tablespoon of caviar and sprinkle with chives.

POTATO AND HORSERADISH GRATIN

Potato and Horseradish Gratin image

Categories     Potato     Bake     Roast     Horseradish     Simmer     Boil

Yield 4 servings

Number Of Ingredients 5

1 pound fresh horseradish, peeled and thinly sliced (use a mandoline if you have one)
1 pound potatoes, preferably Yukon Gold
Salt and black pepper to taste
4 tablespoons (1/2 stick) butter
2 to 3 cups half-and-half or milk, or more

Steps:

  • Put the horseradish in a saucepan with water to cover and bring to a boil; simmer for about 5 minutes, then drain and rinse with cold water. Meanwhile, peel the potatoes and rinse them; slice them thinly with a knife or mandoline.
  • Preheat the oven to 400°F. Layer the potatoes and horseradish in a large nonstick, ovenproof skillet or roasting pan, sprinkling the layers with salt and pepper. Dot with the butter, then add enough half-and-half to come about three-quarters of the way up to the top.
  • Turn the heat under the gratin to high and bring to a boil. Turn the heat to medium-high and cook for about 10 minutes, or until the level of both liquid and vegetables has dropped somewhat. Put in the oven and cook, undisturbed, until the top is nicely browned, about 10 minutes. Turn the oven down to 300°F and continue cooking until the potatoes and horseradish are tender (a thin-bladed knife will pierce them with little or no resistance), about 10 minutes more. Serve immediately or keep warm in the oven or over very low heat for up to 30 minutes.
  • Potato and Gruyère Gratin (France)
  • Substitute 1/4 pound of good-quality Gruyère, grated, for the horseradish and add an additional pound of potatoes. Layer the two as described in step 2, but instead of bringing the whole mixture to a boil on top of the stove, put the pan directly into the preheated oven and bake for 1 to 1 1/2 hours, until tender. Run the gratin under the broiler for 30 seconds or so to crisp, then serve hot or warm.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 50m

Number Of Ingredients 7

4 1/2 pounds russet potatoes (about 7), peeled and cut into 1-inch pieces
Coarse salt and ground pepper
1 cup heavy cream
1 cup whole milk
1/2 cup (1 stick) unsalted butter
1/4 to 1/3 cup prepared horseradish
1/2 cup sour cream

Steps:

  • In a large pot, bring potatoes to a boil in salted water over high, then reduce to a rapid simmer and cook until potatoes are tender when pierced with a knife, about 15 minutes. Drain and return potatoes to pot. With a potato masher, mash until potatoes are fluffy and free of large lumps. (For a smoother texture, pass potatoes through a ricer or food mill into pot.)
  • Meanwhile, in a small saucepan, heat cream, milk, and butter over medium-low until butter melts. Slowly pour cream mixture into potatoes, stirring until combined. Whisk in horseradish to taste and sour cream, and season with salt and pepper.
