It's a tradition in our house to start baking Christmas cookies early in the season and try some new recipes every year. These nutty, glazed, melt-in-your-mouth almond sugar cookies are one of my favorites. -Lisa Hummell, Phillipsburg, New Jersey

1 cup butter, softened
3/4 cup sugar
1 teaspoon almond extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Additional sugar
GLAZE:
1 cup confectioners' sugar
1-1/2 teaspoons almond extract
2 to 3 teaspoons water
Green food coloring, optional
Sliced almonds, toasted

Steps:

  • Preheat oven to 400°. In a large bowl, cream butter and sugar until light and fluffy. Beat in almond extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Roll into 1-in. balls. , Place 2 in. apart on ungreased baking sheets. Coat bottom of a glass with cooking spray; dip in sugar. Flatten cookies with prepared glass, dipping glass in sugar again as needed. , Bake until edges are lightly browned, 7-9 minutes. Cool for 1 minute before removing to wire racks., In a small bowl, whisk together the confectioners' sugar, almond extract and enough water to achieve glaze consistency. Tint with food coloring if desired; drizzle over cookies. Sprinkle with almonds.

1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, softened
1 cup packed light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 cup whole blanched almonds (2 1/2 ounces)

Steps:

  • Whisk together flour, baking soda, and salt. Beat together butter and brown sugar in a large bowl with an electric mixer until pale and fluffy, then beat in egg and vanilla. At low speed, mix in flour mixture until a dough just forms. Stir in whole almonds. Divide dough in half. Using a sheet of plastic wrap or wax paper as an aid, form each piece of dough into a log 9 to 9 1/2 inches long (about 1 1/4 inches in diameter). Chill, wrapped in plastic wrap, until very firm, at least 4 hours. Freeze 30 minutes to facilitate slicing.
  • Preheat oven to 350°F with racks in upper and lower thirds. Line 2 large baking sheets with parchment paper. Cut 1 log of dough crosswise into slices less than 1/8 inch thick with a thin sharp knife, rotating log after each slice to help keep round shape. (If dough gets too soft to slice through nuts easily, freeze briefly.) Arrange cookies about 1/2 inch apart on baking sheets.
  • Bake cookies, switching position of sheets halfway through, until golden brown all over, 12 to 15 minutes total. Transfer cookies on parchment to racks to cool.
  • Repeat with remaining dough (cool baking sheets and line with fresh parchment).

Steps:

  • Sift together flour, baking powder, and salt. Set aside. Place butter and sugar in large bowl of electric stand mixer and beat until light in color. Add egg and milk and beat to combine. Put mixer on low speed, gradually add flour, and beat until mixture pulls away from the side of the bowl. Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours.
  • Preheat oven to 375 degrees F.
  • Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill. Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on wire rack. Serve as is or ice as desired. Store in airtight container for up to 1 week.

2 cups powdered sugar
1/4 teaspoon almond extract
3 to 7 teaspoons half and half or milk
1/3 cup almond slices, toasted if desired

Steps:

  • Make cookie dough by blending cookie mix, butter, almonds, extract and egg until soft dough forms.
  • Roll dough into about 40 (1-inch) balls. Place about 2 inches apart on Reynolds Parchment Paper lined cookie sheets. Bake at 375°F 7 to 9 minutes or until set. Cool; place cookies on cooling racks. Cool completely.

⅔ cup shortening
⅔ cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Mix shortening, butter or margarine, sugars, eggs and vanilla thoroughly. Stir in all purpose or unbleached flour, baking soda and salt.
  • Turn dough onto lightly floured board. Shape dough into ball with lightly floured hands, pressing to make dough compact. Cut dough in half.
  • Shape each half into a roll 2 inches in diameter and about 8 inches long by gently rolling dough back and forth on floured board. Roll dough onto plastic wrap: wrap and twist ends tightly. Dough can be refrigerated up to 1 month or frozen up to 3 months.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut roll into 1/4-inch slices. (It is not necessary to thaw frozen dough before slicing.) Place slices about 2 inches apart on ungreased baking sheet. Bake 9 to 11 minutes. Immediately remove cookies from baking sheet onto wire rack.
  • CHOCOLATE CHIP: Add 1 cup mini semisweet chocolate chips and 1 cup chopped nuts with the flour. OATMEAL-COCONUT: Reduce flour to 2 3/4 cups. Add 1 cup flaked coconut and 1 cup quick-cooking oats with the flour. PEANUT BUTTER: Add 1 cup creamy or chunky peanut butter with the shortening. CHOCOLATE-NUT: Add 1 cup chopped nuts and 1/2 cup cocoa with the flour. FRUIT SLICES: Add 1 cup whole candied cherries, 1/2 cup chopped nuts and 1/2 cup cut-up mixed candied fruit with the flour.

420 grams (3 cups) all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon kosher salt
2 sticks (227 grams) unsalted butter, at cool room temperature (60 to 65 degrees F)
200 grams (1 cup) sugar
1 large egg
1 tablespoon (15 milliliters) whole milk
About 1/3 cup (40 grams) confectioners' sugar, for rolling out the dough

Steps:

  • Sift the flour, baking powder, and salt together into a medium bowl and set aside.
  • Place butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Start the mixer on low, then gradually increase the speed to medium and continue to beat, scraping down the sides of the bowl as needed, until light and fluffy, 3 to 5 minutes, depending on the temperature of the butter.
  • Slow the mixer to low and add the egg, followed by the milk, then return to medium speed and beat until smooth, about 30 seconds. Then, slow the mixer yet again, gradually add the flour, and mix until dough comes together, about 30 more seconds.
  • Remove the dough from the bowl and split into two equal portions. Form these into balls, wrap each piece in plastic wrap, and refrigerate for 1 hour.
  • Preheat oven to 375 degrees F with the oven racks in the upper middle and lower middle positions. Line two half sheet pans with parchment paper.
  • Use a small strainer or sifter to sprinkle your rolling surface with confectioners' sugar. Remove 1 dough from the refrigerator, place on the sugar-dusted counter, and dust with a little additional sugar. Working quickly (so the butter doesn't have time to melt), roll the dough to a quarter-inch thickness. (I use pastry guides for this.)
  • Cut dough into desired shapes and place at least 1 inch apart on the prepared sheet pans. Re-roll the scraps one time and cut into additional cookies. Discard any remaining dough; do not re-roll a second time. (Okay, I admit I eat it raw, but that's me.) Bake both pans of cookies, rotating halfway through baking time, until the cookies are just brown around the edges, about 10 minutes. Remove from oven and cool on the pans for 2 minutes, then transfer to a wire rack to cool completely.
  • While the first batch is baking, roll and cut the second half of the dough. Bake and cool the second batch, then decorate as desired...or don't. Frankly, they're plenty good with no icing at all.

  • Preheat the oven to 350 degrees. Place nuts in a single layer on a rimmed baking sheet; toast until golden and aromatic, about 8 minutes. Shake the pan halfway through baking to make sure the nuts toast evenly. Remove from oven; cool. Reduce oven temperature to 200 degrees. Line two 11-by-17-inch baking sheets with parchment; set aside.
  • In the bowl of an electric mixer, combine egg whites and sugar. Place bowl over a pan of simmering water. Whisk until sugar dissolves and mixture is warm, 3 minutes.
