Steps:
- Prepare and measure all the ingredients. I recommend using a kitchen scale for this recipe. Also, check the video in the post for visual instructions.
- Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius) and line a baking pan with parchment paper. My baking pan measures 9"x6" (23 x 15 cm).
- Put all wet ingredients into a food processor and mix until smooth.
- Add all dry ingredients (except the chocolate chips) and mix again, just for a few seconds (don't over mix).
- Now add the dairy-free chocolate chips and stir with a spoon.
- Spoon the batter into the lined baking pan. Top with more chocolate chips or chocolate chunks.
- Bake in the oven for about 28-35 minutes (it can take some minutes more or less, depending on your oven and the size of your baking dish). I have a gas oven and baked them for exactly 35 minutes. You can insert a toothpick into the middle after 28 minutes. When it comes out dry, the dessert is done!
- Let it cool and cut into bars. Enjoy for breakfast or as a dessert!

GLUTEN-FREE ALMOND FLOUR CHOCOLATE CHIP COOKIES
Almond flour is the secret ingredient in these crisp and tender chocolate chip cookies. For chewiest cookies, enjoy these warm from the oven. If you prefer them a bit crisp, wait until they've cooled before biting into one (or several). Store any remaining cookies at room temperature - a cookie jar keeps them handy!

Steps:
- Preheat the oven to 350 degrees F. Lightly grease a baking sheet, or line it with parchment.
- Combine the brown sugar, baking soda, salt, and butter, and mix until smooth.
- Mix in the vanilla, egg, and almond flour, stirring to combine. Scrape the bottom and sides of the bowl, then mix for 1 minute at medium speed.
- Stir in the chocolate chips.
- Scoop the dough one level tablespoon at a time onto the prepared baking sheet; a tablespoon cookie scoop works well here.
- Gently flatten the cookies to about 3/8-inch thick.
- Bake the cookies for 9 to 12 minutes, until golden brown.
- Remove the cookies from the oven. Allow them to cool on the pan for 2 minutes, then carefully transfer them to a rack to cool completely.

- In a large mixing bowl, stir together almond flour, oats, coconut, vegan chocolate, baking powder, salt, and sugar.
- In a separate bowl, beat aquafaba (using a handheld mixer or by whisking vigorously) until light and fluffy and loose peaks have formed. (Add a little cream of tartar to help them along if not whipping.)
- To the aquafaba, add the almond butter, oil, and vanilla (optional) and beat or whisk to combine. (The mixture will deflate a little - that's OK). Then add to dry ingredients and mix until combined. You should have a firm, semi-tacky dough (see photo). Cover and chill in the refrigerator for at least 30 minutes or overnight.

- Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper. Set aside.
- In a large bowl, whisk together the brown sugar, vanilla, flaxseed meal and almond milk until well combined and wet. Next, whisk in the melted and cooled coconut oil until completely smooth and creamy, about 1 minute.
- Add the dry ingredients to the bowl: almond flour, oat flour, baking soda and salt. Mix with a wooden spoon until well combined. Fold in chocolate chips.
- Use a medium cookie dough scoop to grab cookie dough, or use your hands to grab about 2 tablespoons of dough and roll into a ball. Place cookie dough 2 inches apart on the baking sheet to prevent cookies from baking into each other. Bake for 10-12 minutes. Allow cookies to sit on the baking sheet for at least 10 minutes before removing them from the pan. You should get approximately 15 cookies.
