ALMOND SNOWBALL COOKIES RECIPE

These almond snowball cookies just melt in your mouth. They are perfect Christmas cookies and look like darling little snowballs.

1/2 lb unsalted butter ((16 Tbsp) softened at room temperature)
1/2 cup powdered sugar (plus 1 1/2 cups more for rolling cookies)
1 tsp vanilla extract
2 cups all-purpose flour (*measured correctly)
1/2 tsp fine salt (I used fine sea salt)
1 cup almond flour (or fine almond meal)
1/2 Tbsp orange zest (from 1 medium orange)

Steps:

  • Preheat the oven to 400°F. Line a 3/4 size cookie sheet or 2 regular cookie sheets with parchment paper.
  • In the bowl of a stand mixer fitted with whisk attachment, cream together 1/2 lb butter, 1/2 cup powdered sugar and 1 tsp vanilla, until smooth.
  • Switch to paddle attachment and gradually mix in 2 cups all purpose flour and 1/2 tsp salt. Once incorporated, add 1 cup almond meal and 1/2 Tbsp orange zest and mix until well blended. The dough will stick slightly to the spatula but not to finger tips. If very sticky, add 1-2 Tbsp more flour.
  • Shape dough into 1-inch balls (a small ice cream scoop makes it easy and exact). Place them on prepared baking sheet 1 inch apart. You should get 38-40 cookies. Don't make them too large or they won't bake through properly. Bake 11-13 min, or until bottoms are golden and edges are barely golden (I bake 11 min for softer cookies). Remove from baking sheet and cool 5 min.
  • Fill a bowl with powdered sugar and roll the cookies in it while they are still warm (not hot). Transfer cookies to wire rack to cool completely.
  • Once cookies are at room temp, roll in powdered sugar again or dust the tops with a mini sieve for a snowy look.

3/4 cup sliced almonds
3/4 cup sugar
3/4 cup unsalted butter, sliced and softened (1 1/2 sticks)
1/2 teaspoon pure vanilla extract
1/8 teaspoon almond extract
1 2/3 cups all-purpose flour
1/2 teaspoon fine salt
1 cup confectioners' sugar

Steps:

  • Pulse the almonds and sugar in a food processor until very finely ground. Add the butter and process until smooth, about 1 minute. Scrape the dough off the inside of the bowl, if needed. Add the vanilla and almond extracts and pulse to combine. Add the flour and salt and pulse to make a soft dough. Turn the dough out onto a large piece of waxed paper and roll into a log about 15 inches long and 1 1/2 inches wide. Wrap and refrigerate for 30 minutes.
  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper.
  • Cut the chilled dough into 1/2-inch pieces and roll by hand into balls. Space the cookies evenly on the prepared baking sheets and bake until slightly golden, rotating the sheets once, 15 to 20 minutes. Put the confectioners' sugar in a pie plate. Briefly cool the cookies on a rack, then gently toss in the confectioners' sugar until evenly coated. Return to rack, cool to room temperature, and then toss again in the confectioners' sugar.

8 ounces unsalted butter
1/2 cup sugar
1 tablespoon vanilla extract
1 teaspoon almond extract
2 eggs

Steps:

  • Preheat the oven to 350 degrees F. Line a half-sheet pan with parchment paper.
  • Sift the flour into a medium bowl. In a stand mixer fitted with the paddle attachment, cream together the butter, sugar, vanilla extract and almond extract, 3 to 5 minutes. Add the eggs, one at a time, scraping down the sides of the bowl after each addition. Decrease the speed to low, add the flour and mix to incorporate. Scrape down the sides of the bowl and increase the speed to medium for 30 seconds. Chill the dough for 1 hour in the refrigerator.
  • Lightly dust a clean surface with flour. Using a rolling pin, roll out the dough between 1/4-inch and 1/2-inch thick. Cut the dough with a snowman cookie cutter and place on the prepared sheet pan (about 24 cookies). Refrigerate the dough for 15 minutes. Bake for 10 to 15 minutes. Cool completely, then serve the cookies as-is, or frost the cookies and then serve.

1 16 ounce package powdered sugar (4-1/4 cups)
3 tablespoons meringue powder

Steps:

  • In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, baking powder, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in eggs, milk, vanilla, and almond extract until combined. Beat in the ground almonds and as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Divide dough in half. Cover and chill dough about 2 hours or until easy to handle. 2. Preheat oven to 350 degrees F. On a lightly floured surface, roll half the dough at a time to 1/8-inch thickness. Using a 3- to 4-inch round cookie cutter, cut out dough. Place cutouts 1 inch apart on ungreased cookie sheets. 3. Bake for 7 to 9 minutes or until edges are light brown. Transfer cookies to a wire rack and let cool. To decorate: 1. Outline and flood cookies with glaze-consistency white Royal Icing. While icing is still wet, use a decorating bag fitted with a small round tip to pipe lines and dots of glaze-consistency blue-tinted Royal Icing on cookies. Swirl a toothpick through lines and dots to create desired designs. Royal Icing 1. In a large mixing bowl stir together the powdered sugar, meringue powder, and cream of tartar. Add the water and vanilla. Beat with an electric mixer on low speed until combined; beat on high speed for 7 to 10 minutes or until icing is very stiff. If not using right away, cover bowl with a damp paper towel and cover paper towel with plastic wrap; chill for up to 48 hours.

1 cup granulated sugar
3/4 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs
2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
3 cups powdered sugar
4 teaspoons light corn syrup
1/4 cup hot water
1/2 teaspoon almond extract
1/8 teaspoon salt
White coarse sugar crystals (decorating sugar), powdered sugar or white edible glitter
1 cup powdered sugar
3 to 5 teaspoons water

Steps:

  • In large bowl, mix granulated sugar, butter, vanilla and eggs until well blended. Stir in flour, baking powder and salt. Cover and refrigerate at least 1 hour but no longer than 24 hours.
  • Heat oven to 400°F. On lightly floured surface, roll about one-third of dough 1/8 inch thick. Cut with 1 1/2 to 2-inch star-shaped cookie cutter. Place 1 inch apart on ungreased cookie sheet.
  • Bake about 6 minutes or until light brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Repeat with remaining dough.
  • In medium bowl, mix all glaze ingredients except coarse sugar crystals until smooth, glossy and pourable. Place cooled cookies together in pairs with about 1 teaspoon glaze, with points of top cookie between points of bottom cookie. Place cookies on cooling rack on cookie sheet to catch excess glaze. Pour 1 tablespoon glaze evenly over top and sides of each cookie, glazing only a few at time. When glaze is set but still soft, move cookies to another rack or waxed paper; sprinkle with sugar crystals. (Occasionally remove glaze from cookie sheet, and add a few drops of hot water as necessary to make glaze smooth and thin enough to pour; continue glazing.)
  • In small bowl, mix frosting ingredients to make a frosting that can be easily drizzled or used in a decorating bag, yet holds its shape. Pipe snowflake designs on cookies. Let cookies dry completely before storing.

1 ½ cups white sugar

3 ¾ cups all-purpose flour

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large bowl, cream the shortening with the sugar. Add the eggs and vanilla and mix well. Sift the flour and salt into the creamed mixture and stir in gradually. Chill dough for at least one hour.

3/4 cup/170 grams unsalted butter (1 1/2 sticks), softened
2 1/2 cup/305 grams confectioners' sugar
1 egg yolk
1 tablespoon brandy, pastis or ouzo
1/2 teaspoon almond extract
1 1/2 cups/190 grams all-purpose flour
1/4 teaspoon fine sea salt

Steps:

  • In a medium skillet over medium heat, toast the almond flour, stirring constantly, until golden brown and fragrant, 6 to 8 minutes. Immediately pour flour into a small bowl to cool. Watch carefully: Once the flour begins to toast, it will happen very quickly.
  • Using an electric mixer fitted with the paddle attachment or a handheld electric mixer, beat butter and 1 cup confectioners' sugar on low speed until fluffy, 1 to 2 minutes. Beat in egg yolk, brandy and almond extract until well combined.
  • Reduce speed to low and gradually add all-purpose flour, salt and toasted almond flour until just incorporated.
  • Scrape the dough into an airtight container and refrigerate for at least 2 hours or overnight.
  • When ready to bake, heat oven to 350 degrees and line 2 baking sheets with parchment paper.
  • Using your hands, roll dough into 1-inch balls and place balls 1 inch apart on the prepared baking sheets. Bake for 12 to 18 minutes, until cookies begin to brown at edges. Rotate cookie sheets halfway through for even baking.
  • Place 3/4 cup confectioners' sugar into a sieve. As soon as the cookies come out of the oven, sift a thick layer of confectioners' sugar over the tops. Once cookies are cool, put remaining 3/4 cup confectioners' sugar (plus any sugar in the sieve) into a shallow bowl and toss cookies again in confectioners' sugar.
