Almond Dukkah image

This dukkah uses almonds and has a hint of fennel to make it a bit different. Great served with oil and Turkish bread, but also nice as a crust for chicken or fish. Australian measurements used. Time includes 15 mins for toasted ingredients to cool.

50 g sesame seeds
1 tablespoon coriander seed
2 teaspoons cumin seeds
1 teaspoon ground cumin
1 pinch fennel seed
1/2 teaspoon flaked sea salt
1/2 teaspoon ground black peppercorns
80 g blanched almonds, toasted

Steps:

  • Place all seeds, spices, salt and pepper in a fry pan. Stir over low heat for 5 minutes, or until the seeds are toasted and fragrant. Cool completely.
  • Place almonds and spice/seed mix in your food processor bowl. Process until mix resembles a coarse powder.

Almond Dukkah image

A spicy, crumbly seasoning mix made from sesame seeds, coriander, cumin, and almonds makes a tasty flavoring for pita bread. Dip the bread in olive oil, then into the almond dukkah to serve.

¼ cup coriander seeds
¼ cup sesame seeds
2 tablespoons whole cumin seeds
1 tablespoon black peppercorns
1 teaspoon fennel seeds
½ cup prepared dry-roasted almonds
1 teaspoon fresh thyme
2 teaspoons kosher salt or sea salt
3 (7 inch) Pita bread or hearty, crusty dipping bread
¼ cup Olive oil

Steps:

  • Heat a heavy skillet over medium-low heat. Stirring frequently, toast coriander seeds, sesame seeds, cumin seeds, peppercorns and fennel seeds until slightly brown and fragrant, about 5 minutes. Cool and transfer to food processor. Add almonds, thyme and salt. Grind until crumbly; do not allow mixture to become a paste.
  • Serve Dukkah in a bowl or plate, along with a bowl or plate of olive oil and bread. Dip bread first in olive oil and then in Almond Dukkah so it adheres to the olive oil; serve as an appetizer or hearty and nutritious snack.

  • Toast almonds and fennel seeds in a small skillet over low, stirring often, until fragrant and slightly darkened, about 5 minutes. Transfer to a small plate, and let cool 5 minutes. Roughly chop almonds.
  • Place cumin seeds in skillet, and toast over low, stirring often, until fragrant, about 45 seconds. Transfer to a work surface, and lightly crush with the flat side of a large knife.
  • Stir together chopped almonds, fennel seeds, crushed cumin seeds, sunflower seed kernels, sesame seeds, maple syrup, paprika, and salt in a small bowl until thoroughly combined. Store in an airtight container at room temperature.
