Sugar-Free Strawberry Sauce for ice cream, waffles, french toast, peanut butter toast you name it! I've been using this sauce on top of the banana ice cream and it is to die for.

1 lb of strawberries, sliced1 tsp of lemon juice3 tablespoons of water

Steps:

  • Slice strawberries. Pour into medium sized saucepan. Add water and lemon juice and cook the strawberries on low to medium heat for 20 minutes.
  • Check and stir the sauce frequently. Make sure to keep an eye on it so it doesn't burn.

"He was tired of eating the flavorless jams and jellies for diabetics in the grocery store, so I came up with this recipe. With its fresh flavor, it makes a nice gift."

3/4 cup diet lemon-lime soda
1 package (.3 ounce) sugar-free strawberry gelatin
1 cup mashed fresh or frozen unsweetened strawberries
1-1/2 teaspoons lemon juice

Steps:

  • In a saucepan, bring soda to a boil. Remove from the heat; stir in gelatin until dissolved. Stir in strawberries and lemon juice. Pour into jars or plastic containers; cover and refrigerate up to 3 weeks. Do not freeze.

I tried this on a whim since we had some strawberries sitting in the refrigerator. I served with some white chocolate pudding and brownies for dessert one night. It tasted pretty darn good. So I thought I'd share.

1/2 cup water
1/4 cup Splenda Sugar Blend for Baking (You can also use 1/2 cup of granulated Splenda)
1 -1 1/2 cup of chopped strawberry
1/2 tablespoon light corn syrup

Steps:

  • Add 1/2 cup of water to the saucepan
  • Slowly stir in Splenda and continue to do so until fully incorporated
  • Add the strawberries and allow mixture to boil
  • Continue to boil mixture until the syrup takes on the strawberries' color and the fruit begins to cook down
  • Stir in the corn syrup
  • Remove from heat and allow it to at least cool slightly before serving.

I have not tried this recipe. I'm posting this recipe for safe keeping. I got this recipe from Fruit Sweet And Sugar Free cookbook.

2 1/2 cups frozen unsweetened strawberries
1 tablespoon cornstarch
1/3 cup cold water
1/4 cup fruit sweetener (store prepared or homemade)

Steps:

  • Place the strawberries in a bowl to thaw, saving their juice. In a small bowl, dissolve the cornstarch in the cold water, and stir in the sweetner. Place everything in a medium size saucepan over medium heat. Bring the sauce to a boil, stirring gently and frequently with a wooden spoon. Reduce the heat and simmer for 5 minutes.
  • Store frozen strawberry sauce under refrigeration for 7-10 days.
  • Note: To make homemade Fruit Sweeteners place for example frozen apple juice concentrate in a small pan and bring to a boil, then simmer for 10 minutes to evaporate the excess liquid and concentrate the flavor.
