CRISPY VEGETABLE PAKORAS

Crispy Vegetable Pakoras image

These are very yummy, and if any of you have ever had Japanese tempura coated veggies, you'll love this recipe. It's similar, yet it is unique in it's taste. Serve with a chili sauce, mint yogurt sauce, or sweet and sour sauce. Try other vegetables for dipping, such as sweet potatoes, broccoli and asparagus.

Time 25m

Yield 6

Number Of Ingredients 11

1 cup chickpea flour
½ teaspoon ground coriander
1 teaspoon salt
½ teaspoon ground turmeric
½ teaspoon chili powder
½ teaspoon garam masala
2 cloves garlic, crushed
¾ cup water
1 quart oil for deep frying
½ head cauliflower florets
2 onions, sliced into rings

ALOO (POTATO) PAKORA

Aloo (Potato) Pakora image

I got this recipe from my friend Rupali. It's good for a fast and easy side dish to an indian meal. Also, if it is made with less chilli powder, it is excellent as a snack for kids. They'll eat them right up.

Provided by alice Dave

Categories     Lunch/Snacks

Time 10m

Yield 6-8 serving(s)

Number Of Ingredients 10

4 large potatoes
2 cups corn oil (for frying)
1 cup besan (chickpea flour)
1/2 cup water
1 teaspoon red chili powder
2 teaspoons cumin powder
4 cloves of crushed garlic
3 inches of crushed ginger
salt
2 tablespoons chopped coriander (optional)

Steps:

  • Add water to the Besan.
  • Besan has a tendency to be very clumpy, so you should add just a few tablespoons at a time to keep the batter smooth.
  • Add the Chilli powder, cumin powder, garlic, ginger, salt and chopped coriander and stir the batter.
  • The potatoes should be sliced very thinly.
  • No thicker than 1/4 of an inch.
  • At this point test one slice of potato in the batter.
  • There should just be a thin coat of batter.
  • Heat the oil in a pan.
  • Use a larger frying pan so that you have more surface area.
  • The oil doesn't need to be too deep since the potato slices are very thin.
  • Dip the potato slices in the batter and fry them till they are golden brown.
  • Remove them from the oil with a slotted spoon and set them on a paper towel for a minute to soak up the excess oil.

ALOO PARATHA

Aloo Paratha image

This is a traditional Indian aloo paratha that is very popular for every age group. It's a heavenly dish to serve on a rainy day. It's an easy recipe and a definite group pleaser. Garnish each paratha with a thin slice of butter and serve with plain yogurt.

Provided by Aavi1325

Categories     Bread     Quick Bread Recipes

Time 1h25m

Yield 6

Number Of Ingredients 10

3 medium potatoes, peeled and cubed
4 teaspoons vegetable oil, divided, or as needed
¼ teaspoon cumin seeds
2 peppers green chile peppers, minced
6 leaf (blank)s fresh curry leaves
½ teaspoon minced fresh ginger
1 pinch ground turmeric, or to taste
salt to taste
5 cups whole wheat flour, divided
1 ¼ cups water

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add potatoes, cover, and steam until tender, 10 to 15 minutes. Remove from the heat.
  • Heat 1 1/2 teaspoons vegetable oil in a medium skillet over medium heat. Add cumin seeds and cook until light brown, 2 to 3 minutes. Add chile peppers, curry leaves, and ginger; cook and stir for about 1 minute. Add potatoes, turmeric, and salt; cook and stir carefully for about 5 minutes.
  • Transfer potatoes to a bowl and allow to cool, about 15 minutes.
  • Place 1/2 cup flour into a shallow bowl. Combine the remaining flour and 1 1/2 teaspoons oil in a large mixing bowl; salt to taste. Mix with your hands while gradually adding water. Knead dough until a smooth ball forms. Divide into 6 evenly round balls.
  • Roll each dough ball into a thick, circular shape. Form the cooled potato mixture into 6 round balls and place a potato ball on top of each dough circle. Fold all the dough sides over the potato filling to cover. Flatten each stuffed dough slightly while dipping both sides into the bowl of flour.
  • Roll each dough to a thin, circular shape and set a few inches apart on parchment paper.
  • Set a large skillet over medium heat and lightly spread with remaining oil. Place a stuffed paratha on the hot skillet and cook for 2 to 3 minutes. Flip over and cook the other side for 2 to 3 minutes. Remove to a serving plate and continue this same process for all the parathas. Serve hot.
