BLUEBERRY COBBLER
Blueberry Cobbler gives fresh blueberries the center stage in the most amazing way! This simple, from-scratch cobbler recipe, whips up in just minutes and is bursting with flavor!

Steps:
- Preheat the oven to 350°F.
- In a medium bowl, combine sugar, flour, baking powder, salt, and milk. Slowly whisk in the melted butter.
- Pour the batter into a 10-inch cast-iron skillet.
- In a medium bowl, combine blueberries and sugar.
- Add the blueberry mixture evenly over the top of the batter.
- Bake for 40 minutes. Carefully remove from the oven.
- Sprinkle the turbinado sugar over the top and RETURN to the oven; bake for 5-10 additional minutes. Cobbler is done when the edges are golden brown and the center doesn't jiggle. A toothpick inserted near the center should be removed with some crumbs and moist blueberry.
- Serve warm.
BROWN BUTTER BLUEBERRY COBBLER

- Spray a 9×11 or 9×13 dish with nonstick cooking spray. Mix the blueberries and sugar and pour into the bottom of the prepared dish. Whisk together butter and cake mix. Crumble over blueberries.
- Bake at 350 degrees for 40 minutes, until bubbly and browned on top.

BLUEBERRY COBBLER
This Blueberry Cobbler has fresh, ripe blueberries with a crisp, biscuit on top. It's wonderful on it's own or served with vanilla ice cream or whipped cream!

- Preheat oven to 400 degrees F.
- For Biscuit Topping:
- In a large bowl, stir together the flour, 2 tablespoons sugar, baking powder, salt and 1/2 tsp. Saigon cinnamon. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until mixture looks like course crumbs. Set aside.
- In a small-medium mixing bowl, stir together milk and egg. Add to the flour mixture and stir until just combined.
- For Blueberry Cobbler filling:
- In a large saucepan, over medium heat, add the blueberries, 1 cup sugar, 1/4 tsp. Saigon cinnamon, and cornstarch. Cook until the blueberry release their juices, stir continuously. The mixture should be bubbly.
- Transfer filling to a 2 quart (9 x 9 inch baking dish) and using a large spoon, drop the biscuit dough in 5-6 mounds on top of the hot filling. Sprinkle 1/2 tablespoon Demerara sugar over the top of the biscuits.
- Bake 20 to 25 minutes (25 minutes always works for me!) or until the top of the biscuit topping is golden brown. When it's done, allow to cool in pan on a wire rack or trivet for 1 hour (to allow the filling to thicken). Serve with Vanilla Whipped Cream and/or No-Churn Vanilla Ice Cream. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
- Sift flour, sugar, baking powder, and salt together in a bowl. Cut 1/4 butter into flour mixture with two knives or a pastry blender until mixture resembles coarse crumbs.
- Whisk milk and egg together in a bowl; stir into flour mixture until just moistened.
- Spread blueberries in the bottom of the prepared baking dish. Sprinkle tapioca powder over blueberries; drizzle lemon juice over the top. Dot remaining butter pieces over blueberries. Drop batter in mounds over the blueberry mixture.
- Bake in the preheated oven until cobbler is golden and bubbling, about 30 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Spray an 8x8-inch baking dish with cooking spray.

ANITA'S BLUEBERRY COBBLER

- Preheat the oven to 350 degrees F. Coat a 9 by 12-inch baking pan with cooking spray.
- In a large bowl, combine the blueberries and 1/2 cup of the sugar. Toss to combine and set aside.
- In a medium bowl, combine the remaining 1 cup sugar, the flour, and baking powder.
- In a large bowl, beat the butter and milk together until smooth. Gradually beat in the flour mixture until smooth. Pour the batter into the prepared pan, then scatter the blueberries over the batter, letting them sink in, without mixing. Bake until the top is golden brown, 35 to 45 minutes. Let cool slightly before serving. Spoon the cobbler into bowls and top with ice cream and/or blueberries, if using.
GRILLED BLUEBERRY-ALMOND COBBLER
Steps:
- Heat a well cleaned grill to 350 degrees F.
- For the fruit: Combine all ingredients except butter in a nonreactive bowl and toss to coat. Turn into an 8 by 8-inch disposable aluminum cake pan and dot with butter; set aside.
- For the biscuits:
- Combine flour, 1 tablespoon of the sugar, baking powder, and salt in a medium bowl and mix until evenly combined. Grate the butter into the bowl and toss to coat in flour mixture.
- Add 1/4 cup of the cream and almond extract and mix to moisten thoroughly. Knead until dough just comes together and is smooth. Divide into 8 pieces and place on top of fruit. Brush biscuits with remaining 1 tablespoon of the heavy cream, sprinkle remaining 1 tablespoon of the sugar on top, and scatter with almonds. Place on the grill, close cover, and grill until fruit is bubbling and biscuits are risen and golden brown, about 25 to 30 minutes.
AMANDA'S BLUEBERRY COBBLER
There are only 6 ingredients to it and you can use any pie filling you like, apple, cherry, peach etc. Tastes great with some vanilla icecream! It is so simple, you won't believe how good it turns out!

Steps:
- Whip oil and milk together with a fork in a bowl.
- Combine flour, sugar and salt in another bowl.
- Add oil/milk mixture to the flour mixture and blend well with a fork.
- Press 2/3 of the mixture into a 9x13 pan and set the rest of the mixture aside.
- Pour pie filling on top of crust.
- Crumble remainder of dough on top of pie filling.
- Sprinkle 2 tbs of sugar on top
- Bake in the oven for 30 minutes at 400 Degrees.
- Place a piece of wax paper on top of the dish (do not seal) while it is cooling and let it cool for at least one hour before serving so it can set up. If not, it will become soggy.
- Vanilla ice cream is a nice addition to it if you like!
