Steps:
- Place chocolates in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolates; whisk until smooth. Stir in Amaretto and vanilla. Cool to room temperature, stirring occasionally. Cover and refrigerate for 1-1/2 hours or until easy to handle., In a small bowl, combine sugar and cocoa. Shape chocolate mixture into 1-in. balls; roll in cocoa mixture. Store in an airtight container in the refrigerator.

QUICKIE AMARULA TRUFFLES
Quickie = work time, not chill time. Cook time equals chill time. I was looking around for a way to use up the last of a box of oreo cookie crumbles and found the recipe Kahlua Balls by user Dallas and Rina. Well, my boyfriend doesn't like coffee, so that was nixed, I don't like nuts in my candies, so those were out, and the powedered sugar was too sweet for a coating, aaand I had more oreos than it called for, soooo, rather than do an injustice to the OP, we ended up with this recipe instead...

- Mix all ingredients into a large bowl.
- Roll into one inch balls.
- Coat with cocoa powder.
- Chill for several hours or over night.

Steps:
- Grate the Chocolate and melt it together with the Coffee granules and the cream in a saucepan slowly stirring until melted and blended over low heat.
- Remove from heat and whisk in the Amarula Cream Liqueur.
- Remove mixture to glass or porcelain dish and refrigerate covered until it is thick and fudgy, about 2 to 3 hours.
- Now make small one inch or larger balls by rolling them in the palms of your hands and set aside on waxed paper.
- Roll the balls in the crumbs or chocolate granules and place individually into candy cases.
- Keep in a sealed container in the fridge at least overnight or until needed.
