These chewy oatmeal cookies are packed with the refreshing flavors of orange and lemon, plus dates, raisins and coconut. When our children, grandchildren and great-grandchildren ask me to make "Grandma's Cookies", these are the ones they're referring to.

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 large eggs
1 tablespoon grated lemon zest
1 tablespoon grated orange zest
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/2 cups quick-cooking oats
1-1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon baking powder
1 cup chopped walnuts
1 cup raisins
1 cup chopped dates
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the eggs, zest and vanilla. Combine the flour, oats, baking soda, salt and baking powder; gradually add to creamed mixture until well blended. Stir in remaining ingredients., Drop by heaping tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 375° for 8-10 minutes or until golden brown. Remove to wire racks to cool.

½ cup heavy cream
1 Tbsp sugar
4 oz sour cream
6 oz mini marshmallows, homemade approximately 3 cups
1 cup clementine orange, segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
½ cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

Steps:

  • In a mixing bowl, cream butter and sugars. Add the eggs, one at a time, beating well after each addition. Beat in peels and vanilla. Combine flour, oats, baking soda, baking powder and salt; gradually add to the creamed mixture. Stir in remaining ingredients.
  • Drop by heaping tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 375 degrees F for 8-10 minutes or until golden brown. Remove to wire racks to cool.

2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups quick-cooking oats
1 teaspoon grated orange peel
1 cup chopped dates
1 cup golden raisins
1 cup flaked coconut
1 cup chopped pecans

Steps:

  • Heat oven to 375°F. Spray cookie sheets with cooking spray.
  • In medium bowl, mix flour, baking powder, baking soda and salt; set aside. In large bowl, beat butter with electric mixer on medium speed until creamy. Gradually add granulated sugar and brown sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in vanilla. On low speed, gradually beat in flour mixture just until blended.
  • Stir in oats, orange peel, dates, raisins, coconut and pecans. Onto cookie sheets, drop dough by teaspoonfuls 2 inches apart.
  • Bake 8 to 10 minutes. Remove from cookie sheets to cooling racks.
