Amish Bread image

My husband's ancestors were Amish and Mennonite. This delicious recipe is adapted from an old Amish recipe, but made in the bread machine.

2 ¾ cups bread flour
¼ cup canola oil
1 teaspoon active dry yeast
¼ cup white sugar
½ teaspoon salt
18 tablespoons warm water

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select White Bread cycle; press Start.
  • When the dough has raised once and second cycle of kneading begins, turn machine off. Reset by pressing Start once again. This gives the dough two full raising cycles before the final raising cycle prior to baking.

This is my favorite home baked bread recipe. I got it from an Amish cookbook years ago and no other bread recipe I have tried beats it. It is a standard in our house with beef stew.

Number Of Ingredients 8

1/4 ounce dry yeast
1/2 cup water
1/3 cup sugar
2 teaspoons salt
2 cups water
2 1/2 tablespoons shortening
6 -7 cups all-purpose flour or 6 -7 cups bread flour
1/8-1/4 cup butter

Steps:

  • Dissolve yeast in 1/2 cup warm water.
  • In large bowl, combine sugar, salt, 2 cups water and shortening.
  • Stir in yeast mixture.
  • Gradually add flour to form a soft dough.
  • Turn onto floured surface and knead until smooth.
  • Place in a greased bowl and cover and let rise for about 2 hours.
  • Punch down and divide into 2 portions and form loaves.
  • Place in greased 9 x 5 loaf pans and prick tops with fork.
  • Let rise until higher than pans (about 2 hours).
  • Bake at 375 degrees for 25 to 30 minutes.
  • Cool for ten minutes.
  • Rub butter all over tops of loaves.
  • Place pans on sides until loosened.
  • Remove bread from pans and cool completely on racks.

2 cups warm water (110 degrees F/45 degrees C)
⅔ cup white sugar
1 ½ tablespoons active dry yeast
1 ½ teaspoons salt
¼ cup vegetable oil
6 cups bread flour

Steps:

  • In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  • Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
  • Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.

This bread is very light and airy. It is due to the fact the bread is put through the rising cycles twice.

1/2 teaspoon salt
1/4 cup oil
1/4 cup sugar
2 3/4 cups bread flour
1 teaspoon yeast

Steps:

  • Add ingredients in order given.
  • Select basic bread cycle. Let it go until the bread completes the 2nd rising. Then turn off the machine and restart it on basic cycle again.
  • Let cook as normal.

2 c. warm water (110 degrees)
2/3 c. sugar
1 1/2 Tbsp dry active yeast
1 1/2 tsp salt
1/4 c. oil
6 c. flour

Steps:

  • 1. Mix warm water, sugar and yeast into bowl, allow to rest for about 10 minutes (it will be frothy). 2. Add in salt, oil and 3 c. flour and mix well. 3. Add flour, one cup at a time, dough will be a nice ball with a soft velvety touch. Knead by hand for 8-10 minutes or 1-2 minutes with the Kitchen Aid 4. Allow bread to rise covered, free from draft until doubled in size. (about an hour) Punch down and briefly knead by hand (30-45 seconds) 5. Divide into equal parts place two in well-greased loaf pans. 6. Loosly cover and allow to rise for an addiitonal 30 minutes. 7. Bake in preheated 350 degree oven for approx 30 minutes (it will be golden on the top. Make sure the center is not gooey and cooked, avoid overbaking.
