Grandma's White Bean Soup (The Best) image

This recipe for white bean soup tastes just like it came from grandma's kitchen. Perfectly paired with crusty bread!

1 large onion (for marinade )
1 lb pork
1 large onion (for the soup)
2 large carrots
1 1/2 cup white beans
qt boiled water
2 tbsp salt (adjust to taste)
1 tbsp ground black pepper (adjust to taste)
3 tbsp dill (to garnish )
2 bay leaves (optional)

Steps:

  • Cut pork into 2-inch cubes. Slice one of the onions into rings and place directly on top of the pork. Press down on the onions lightly to squeeze out some of their juice. Place in the fridge to marinate overnight.
  • Take the pork out of the refrigerator. Remove the onions and throw them away. In an oiled soup pot over medium heat, sear the sides of the pork until they brown.
  • Add the diced onions and sliced carrots. Sauté until the veggies turn golden brown.
  • Add the white beans, bay leaves and boiled water. Lower the heat to a simmer and cook for an hour and a half. Season with salt and pepper. Note: You may need to add more water, as the beans tend to absorb liquid.
  • Remove the soup from heat. Garnish with fresh dill and enjoy!

2 tablespoons salted butter
2 tablespoons olive oil
1/2 cup diced carrots
1/2 cup diced celery
2 teaspoons minced fresh oregano, plus more for garnish
2 teaspoons minced fresh thyme
4 cloves garlic, minced
1 onion, diced
Kosher salt and freshly ground black pepper
1/2 cup white wine, optional
4 cups low-sodium pork stock (see Cook's Note)
Two 15-ounce cans white beans, drained and rinsed
2 cups shredded hearty greens, such as kale or collards
2 cups shredded Perfect Paprika Pork Shoulder, recipe follows
1 cup grated white Cheddar
1 small loaf sourdough, torn into 1- to 2-inch chunks
3 tablespoons salted butter, melted
Kosher salt and freshly ground black pepper
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
6 to 7 pounds bone-in pork shoulder
3 tablespoons olive oil
10 cloves garlic
1 onion, sliced
6 sprigs fresh rosemary
4 sprigs fresh thyme
2 bay leaves
1 cup white wine
4 cups chicken broth
1 to 2 canned chipotles, chopped, plus 2 tablespoons adobo sauce

Steps:

  • Preheat the oven to 400 degrees F.
  • For the white beans with pork: Heat the butter and oil in a large pot over medium heat. Add the carrots, celery, oregano, thyme, garlic and onion and season with a good pinch of salt and pepper. Cook until the vegetables soften and the flavors develop, 4 to 5 minutes. Deglaze with the white wine, if using, allowing the liquid to reduce for a minute or so. Add the stock, beans, greens and Perfect Paprika Pork Shoulder. Bring to a boil and cook until the greens are tender, about 10 minutes.
  • For the croutons: Meanwhile, toss the torn bread with the melted butter on a sheet pan. Season with salt and pepper. Toast in the oven until golden and crisp, 7 to 8 minutes.
  • Serve the beans and pork in bowls garnished with the torn croutons, grated white Cheddar and fresh oregano.
  • Preheat the oven to 300 degrees F.
  • Mix the salt, pepper and paprika in a small bowl. Season the pork all over with the mix, sprinkling it on and then rubbing it in with your hands.
  • Heat the olive oil in a large Dutch oven over medium heat. Sear the pork on all sides until browned, 3 to 5 minutes. Remove and set aside. Stir the garlic and onion into the pot and cook for 1 minute.
  • Tie together the rosemary, thyme and bay leaves with butcher's twine. Add to the pot and stir. Deglaze with the white wine, scraping up any brown bits on the bottom. Stir in the broth, chipotle and adobo sauce. Add the pork to the pot fat-side up and bring to a boil. Cover and transfer to the oven. Cook until very tender, 4 to 5 hours.
  • Remove the pork from the liquid, shred with 2 forks and serve with the accompaniments of your choice, spooning over the liquid as a sauce.
  • Place any leftovers in a container and transfer any liquid to a separate container. Allow both the pork and the liquid to cool slightly before covering and refrigerating. Once the liquid has chilled, the fat will solidify at the top and make it easy to separate and discard. You can then reheat the pork as you'd like, using the stock to keep the pork from drying out.

An awesome veggie soup with small white beans. this freezes well and makes lots of servings! One serving is about 2 cups.

* white beans, 1 package, 12 servingfat, raw, .5 lb
* green chiles, 1 small can, 2 serving
* *Tomatoes, red, ripe, canned, whole, no salt added, 1 can
* *Onion (Yellow), 1 med, raw, .5 serving
* Carrots, raw, 1 cup, chopped
* Celery, raw, 1 cup, diced
* Garlic, 4 cloves
Salt and Pepper to taste

Steps:

  • cook beans according to package directions. Add your chopped veggies. Brown then roast your pork shoulder blade steak and then add it to your soup. continue to simmer on low for another hour or two, although it can go longer. Remove pork from pot, trim fat and bone away and separate into chunks and add back into soup. Add S&P to taste.
  • Makes about 12 2 cup servings.

1 package (16 ounces) dried great northern beans, rinsed and drained
1 large sweet onion, chopped
3 medium carrots, chopped
3 celery ribs, chopped
1 pork tenderloin (1 pound)
1 teaspoon garlic powder
1 tablespoon fresh minced chives or 1 teaspoon dried chives
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon pepper
1 carton (32 ounces) reduced-sodium chicken broth
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 bottle (12 ounces) extra pale ale
1 can (14-1/2 ounces) diced tomatoes, drained
5 ounces fresh spinach
1-1/2 to 2 teaspoons salt

Steps:

  • Place beans in a large bowl; add cool water to cover. Soak 5 hours or overnight. Drain beans, discarding water; rinse with cool water., In a 6-qt. slow cooker, layer beans, onions, carrots, celery and pork. Add seasonings, broth and ale. Cook, covered, on low 6-8 hours or until beans and pork are tender. , Remove pork; shred with 2 forks. Stir in tomatoes, spinach and salt. Return pork to slow cooker. Cook, covered, on low for 15-20 minutes or until heated through.

1 - 20 oz. package of dried beans
1 pound(s) ham, ham hocks, smoked sausage, or pork butt (which i use)
1 cup(s) onion, chopped
1 can(s) (14.5 oz) diced tomatoes
1 teaspoon(s) chili powder
- juice from 1 lemon, or 1 tblsp. lemon juice
- 1-2 cloves garlic, minced
- water to cover beans and meat.
OPTIONAL:
- you may use 1/2 water and 1/2 chicken broth to cover beans
- you may also add 1 or 2 potatoes, cubed, to soup, along with sliced carrots

Steps:

  • The prep-time includes soaking the beans 8 hours or overnight. After soaking, drain water, add fresh water to cover beans and piece of pork butt (I add butt whole, and shred the meat just before serving soup).
  • Bring beans and meat to a boil, reduce heat, and simmer uncovered for 2 1/2 hours.
  • After simmering, add onions, tomatoes, chili powder, lemon juice, and garlic. Simmer for another 30-60 minutes. Season to taste with salt and pepper. You may use contents of flavor packet that comes with beans in the last 2 minutes of cooking. (I don't use it).

1 tablespoon extra virgin olive oil
1 lb pork tenderloin, trimmed and cut into 1-inch pieces
3/4 teaspoon salt
1 medium onion, finely chopped
4 garlic cloves, minced
2 teaspoons paprika, preferably smoked
1/4 teaspoon crushed red pepper flakes (optional)
1 cup white wine
4 plum tomatoes, chopped
4 cups reduced-sodium chicken broth
1 bunch kale, ribs removed, chopped (about 8 cups lightly packed)
1 (15 ounce) can white beans, rinsed (see Tip)

Steps:

  • Heat oil in a Dutch oven over medium-high heat. Add pork, sprinkle with salt and cook, stirring once or twice, until no longer pink on the outside, about 2 minutes. Transfer to a plate with tongs, leaving juices in the pot.
  • Add onion to the pot and cook, stirring often, until just beginning to brown, 2 to 3 minutes. Add garlic, paprika and crushed red pepper (if using) and cook, stirring constantly, until fragrant, about 30 seconds. Add wine and tomatoes, increase heat to high and stir to scrape up any browned bits. Add broth and bring to a boil.
  • Add kale and stir just until it wilts. Reduce heat to maintain a lively simmer and cook, stirring occasionally, until the kale is just tender, about 4 minutes. Stir in beans, the reserved pork and any accumulated juices; simmer until the beans and pork are heated through, about 2 minutes.

1 onion, chopped
3 garlic cloves, minced

Steps:

  • Heat olive oil in a heavy soup pot and add bacon until it's crisp, not burned. Remove bacon with slotted spoon and set aside.
  • Add onion, carrot and celery to pot and cook over medium heat to soften, not brown about 5 minutes or more. Add garlic, rosemary, thyme, ground pepper and stir for about a minute until garlic is fragrant.
  • Add potato, cabbage, beans and pork, stir and cook for a minute or two and then add water -I add a lot but if you want it to be more stewy than soupy, don't add as much.
  • Turn heat to high and bring to boil, turn down to low and simmer for 15 minutes or until your vegetables are cooked. Take off heat and add salt 1/4 teaspoon at a time, stirring after adding and tasting until it's seasoned.
