ANDOUILLE AND BLACK BEAN SOUP RECIPE

Steps:
- In a large soup pot, toast the cumin and coriander seeds over a medium heat. Shake often to keep seeds from burning. Once the seeds start to brown and become aromatic, transfer to a mortar and grind to a powder.
- Add the oil to the pot and heat over medium low heat. When the oil is hot, add the onion and garlic and sweat until onion is clear.
- Add the stock and bring to a boil.
- Add the andouille, beans, tomatoes, poblano, and potatoes. Return to a boil, then reduce to a simmer.
- Add the oregano and 1/2 tsp. of the cumin/coriander powder.
- Simmer for 30 minutes. Taste. Add salt and pepper if needed.
- Remove from heat and add the cilantro is desired.
- Ladle into bowls and top with chopped green olives.
- Serve with cornbread, tortillas, or crackers.
SPICY BLACK BEAN SOUP WITH CAJUN SAUSAGE
Steps:
- Gather the ingredients.
- Heat olive oil in a large saucepan or Dutch oven . Add the sausage and cook over medium heat until browned.
- Add onion, celery, red bell pepper, and jalapeno peppers to the pan and sauté for about 3 minutes, or until tender.
- Add garlic and sauté for 1 minute longer.
- Add the beef broth, beans, tomatoes, lemon juice, and remaining seasonings. Bring to a boil.
- Cover, reduce heat to low and simmer for about 45 minutes.
- Serve with freshly baked cornbread or crusty rolls.
- Enjoy!

BLACK BEAN AND KALE SOUP

- In a Dutch oven, heat the olive oil over medium heat. Add the onion and saute until tender and translucent, 7 to 8 minutes. Stir in the garlic and cook 1 minute. Add the broth, beans (do not drain) and kale. Bring to a low boil, reduce to a simmer, cover and cook until heated through, about 25 minutes.
- Serve with sour cream, shredded cheese and diced avocado, if desired.

- In a 6-qt. stockpot, heat oil over medium heat. Add onions, carrots and green pepper; cook and stir until tender, 8-10 minutes. Add garlic; cook 1 minute longer. - Heat oil in a large pot over medium-high heat. Add leeks and red-pepper flakes; season with salt and pepper. Cook until leeks are softened, about 6 minutes. Add sausage and thyme; cook until sausage is golden brown in places, about 5 minutes more.

A tasty, nutritious soup that freezes well. I found the recipe in a magazine but no longer remember which one. I always use already prepared collards, either frozen or fresh. Add the salt and pepper at the end of cooking, so the beans don't get tough.

- In a 4 to 6 quart slow cooker, combine the beans, sausage, onion, celery, and thyme. Add the broth and stir to combine.
- Cover and cook until the beans are tender, on low for 7 to 8 hours or on high for 4 to 5 hours.
- Twenty minutes before serving, discard the thyme stems, add the collard greens, cover, and cook until the greens are tender, 15 to 20 minutes. (If you are using frozen, you'll have to cook longer). Add the vinegar and 1/2 teaspoon each salt and pepper.

- Heat oil in a medium saucepan over medium-high; add sausage and cook, stirring, until crisp, about 3 minutes. Transfer to a plate. Add scallions, celery, and thyme to pan; cook until tender, about 4 minutes. Stir in tomatoes; bring to a boil and cook 3 minutes. Drain and rinse one can of beans, leaving the second in its liquid; add both to pan with 1 cup water.
- Return to a boil, then reduce heat to low and simmer 15 minutes. If desired, remove 1 cup of mixture and purée in a blender or food processor until smooth, about 15 seconds, then return to pan. Season with salt and pepper.
