This has become a family favorite! The key to the delicious flavor is letting the chicken sit in the marinade overnight, and then letting the cooked chicken sit in the green onion-butter bath! Suggested sides would be steamed rice, green salad, and sliced fresh pineapple for a meal that will transport you to the islands!

1 ½ cups unsweetened pineapple juice
¾ cup low-sodium soy sauce
¾ cup brown sugar
3 cloves garlic, peeled and thinly sliced
1 (1/2 inch) piece fresh ginger, thinly sliced
4 pounds boneless, skinless chicken thighs, trimmed of fat
1 stick unsalted butter
3 green onions, including green tops, thinly sliced

Steps:

  • Whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger together in a bowl until brown sugar has dissolved. Pour marinade into a resealable plastic bag. Add chicken thighs and coat with the marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator, 4 hours to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Reduce heat to low on one burner of the preheated grill. Place oven-safe dish over the low burner; add butter and green onions to the dish and allow to slowly melt. Remove chicken from the marinade and shake off excess. Discard the remaining marinade. Grill chicken in batches over the medium burners, turning once, until juices run clear, about 10 minutes per batch.
  • When chicken is cooked, place each piece into the butter and onion "bath", turning a couple of times to ensure it is well coated. Continue to grill remaining chicken, adding each piece to the butter and onion "bath", pushing already-coated pieces to the side until all pieces have been coated.

1-1/4 pounds boneless skinless chicken breasts, cut into 1-inch cubes
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil, divided
1 large carrot, diced
2 tablespoons butter
1 medium onion, chopped
1 celery rib, diced
3 large garlic cloves, minced
2 cups heavy whipping cream
5 bacon strips, cooked and crumbled
3 tablespoons lemon juice
1 teaspoon Italian seasoning
1 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the chicken, salt and pepper in 2 tablespoons oil until no longer pink. Remove and keep warm. , In the same skillet, saute carrot in butter and remaining oil for 1 minute. Add onion and celery; saute 3-4 minutes longer or until tender. Add garlic; cook for 1 minute., Stir in the cream, bacon, lemon juice and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until slightly thickened, stirring constantly. Return chicken to the pan., Drain pasta; toss with chicken mixture. Garnish with cheese.

You may substitute the macadamia nuts for sliced almonds if you wish. Note* The marinating time is included in the prep time.

1 lb linguine or 1 lb vermicelli
1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch by 3-inch strips
1 1/2 cups light soy sauce
1 cup dark brown sugar, packed
4 tablespoons dark oriental sesame oil
1 tablespoon grated fresh ginger, root
1 (20 ounce) can pineapple chunks in juice, drained and reserve juice
2 medium onions, cut into 1-inch chunks
2 medium red bell peppers, cored and cut into 1-inch pieces
2 medium yellow peppers, cored and cut into 1-inch pieces
1/4 cup toasted chopped macadamia nuts

Steps:

  • Mix together the soy sauce, brown sugar, ginger, sesame oil, and the juice drained from the canned pineapple. Reserve 1 Celsius of sauce for the pasta. Pour remaining sauce over the chicken, pineapple, onion, and pepper chunks and marinate for approximately 20 min., stirring Meanwhile, light grill with mesquite charcoal and allow coals to start. While waiting for grill, cook pasta according to package directions. Drain and toss with remaining sauce and place in large serving dish.
  • Skewer marinated chicken and vegetables and grill until cooked through; turning occasionally. Remove from skewers and arrange over pasta. Sprinkle with macadamia nuts and serve.

1 cup packed brown sugar
3/4 cup ketchup
3/4 cup reduced-sodium soy sauce
1/3 cup sherry or chicken broth
2-1/2 teaspoons minced fresh gingerroot
1-1/2 teaspoons minced garlic
24 boneless skinless chicken thighs (about 6 pounds)

Steps:

  • In a small bowl, mix the first 6 ingredients. Reserve 1-1/3 cups for basting; cover and refrigerate. Divide remaining marinade between 2 large shallow dishes. Add 12 chicken thighs to each; turn to coat. 1 (8 ounce) package angel hair pasta
2 teaspoons olive oil
½ cup finely chopped onion
1 clove garlic, chopped
2 ½ cups chopped tomatoes
2 cups boneless chicken breast halves, cooked and cubed
¼ cup chopped fresh basil
½ teaspoon salt
⅛ teaspoon hot pepper sauce
¼ cup Parmesan cheese

Steps:

  • In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
  • In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
  • Toss sauce with hot cooked angel hair pasta to coat. Serve with Parmesan cheese.
