Mother prepared these soft cookies for holidays and special-occasion meals. My seven siblings and I gobbled them up as fast as she made them. I still can't resist the cinnamon-sugar coating. -Jerri Moror, Rio Rancho, New Mexico

Number Of Ingredients 10

2 cups shortening
1 cup sugar
2 large eggs
2 teaspoons aniseed
6 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup apple juice
1/2 cup sugar
1 teaspoon ground cinnamon

Steps:

  • In a bowl, cream shortening and sugar until fluffy; add eggs and aniseed. Combine flour, baking powder and salt; add to the creamed mixture. Add apple juice and mix well. , On a floured surface, knead until well blended, about 4-5 minutes. Roll dough to 1/2-in. thickness; cut into 2-in. shapes. Place on greased baking sheets. , Bake at 375° for 12-16 minutes or until lightly browned. Combine sugar and cinnamon; roll cookies in the mixture while still warm. Cool on wire racks.

1/2 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon aniseed

Steps:

  • In a bowl, cream shortening and sugar. Add eggs and vanilla; mix well. Combine flour, baking powder and salt; add to creamed mixture. Stir in aniseed. Chill for 2 hours or until dough is easy to handle. , On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with a 2-1/2-in. cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake at 325° for 7-10 minutes. Cool on wire racks.

1/4 cup apple juice

Steps:

  • In a mixing bowl, cream shortening and sugar until fluffy; add eggs and aniseed.
  • Combine flour, baking powder and salt; add to the creamed mixture; Add apple juice and mix well.
  • On a floured surface, knead until well blended, about 4-5 minutes; Roll dough to 1/2-inch thickness; cut into 2-inch shapes.
  • Place on greased baking sheets; bake at 375F for 12-16 minutes or until lightly browned.
  • Combine sugar and cinnamon; roll cookies in the mixture while still warm; cool on wire racks.

This recipe has been in my family for generations. I remember the wonderful scent of the cookies baking drifting throughout the house. Now my sons and I carry on the tradition every Christmas. Hope you enjoy them.

1 cup shortening
1 cup light brown sugar
2 eggs
1 teaspoon anise extract
4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
½ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening and sugar until smooth. Beat in the eggs one at a time, then stir in the anise extract. Combine the flour, baking powder and salt; stir into the creamed mixture alternately with the milk. Mix until just blended. Over-mixing will result in tough cookies.
  • On a lightly floured surface, roll out the dough to a thickness of 1/4 inch. Cut into desired shapes with cookie cutters. Place cookies at least one inch apart onto the prepared cookie sheets.
  • Bake in the preheated oven for about 12 to 15 minutes or until firm. Cookie will not turn a golden brown. If they do, they're over-done. Turn out onto rack to cool. Wait until cool if frosting.
