I was in Santa Fe for a weekend more than 10 years ago and tried to get a reservation at Mark Miller's Coyote Café for dinner with no luck. The bar downstairs served appetizers and I had this great chili. As it happened the Sous Chef was in the bar having a Corona and I asked him if chocolate was the secret was to his GREAT chili - he said well maybe! He wouldn't give me the recipe but this is close.

1 lb ground turkey or 1 lb beef
1/2 lb dried black beans (or 2 small cans)
3 tablespoons olive oil
1 yellow onion, chopped fine
2 minced garlic cloves
4 tablespoons new mexico red chili powder (Medium hot, toasted)
2 tablespoons ground cumin, toasted
1/2 teaspoon Greek oregano
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
3 cups chicken stock (more if the chili is too thick)
2 tablespoons cocoa
1/2 cup sour cream
1/4 cup chevre cheese

Steps:

  • Rinse the dry beans, cover with water and simmer till tender. Drain the water and set aside. You can also use 2 cans of black beans.
  • Brown the onions and garlic in the olive oil. Add the meat and continue browning, about 5 to 7 minutes.
  • In a small non-stick skillet toast the chile and cumin till fragrant - takes about 5 minutes. Do not skip this step as the toasting process brings out all the flavor of the spices.
  • Add the toasted spices to the meat and onions. Add the oregano and 2°C of the chicken stock and all the beans. Season with salt and pepper. Simmer for about 20 minutes or until you reach the consistency you like for the chili. Start with only 2°C of the stock and gradually add to reach the consistency you like. Right before serving add the cocoa and blend well. Do not heat over a slight simmer as the chocolate will become bitter.
  • Serve with the sour cream and Chevre that you have blended together. Make some jalapeno cornbread and you have a dynamite meal! This recipe can easily be doubled.

1/4 cup vegetable oil
1 large onion, peeled and chopped
10 medium garlic cloves, smashed, peeled and chopped
2 tablespoons ground cumin
1 eggplant, cut in 1/4-inch dice
1 medium red bell pepper, stemmed, seeded, deribbed and cut in 1/4-inch dice
4 to 4 1/2 jalapeno peppers, stemmed, seeded, deribbed and minced
3 medium zucchini, cut in 1/4-inch dice
2 cups black beans, cooked (see Micro-Tip) or 4 1/2 cups canned black beans, drained and rinsed
1 (28-ounce can) tomatoes, drained and coarsely chopped (liquid reserved)
2 bunches coriander, chopped
1/4 cup fresh lime juice
2 tablespoons kosher salt
Black pepper to taste

Steps:

  • Stir together the oil, onion, garlic and cumin in a 5-quart dish with a tightly fitted lid. Cook, uncovered, at 100 percent power in a 650- to 700-watt oven for 7 minutes.
  • Stir in eggplant. Cook, covered, for 5 minutes.
  • Stir in bell pepper and jalapeno. Cook, covered, for 1 minute.
  • Stir in zucchini, beans, tomatoes, and reserved tomato liquid. Cook, covered, for 14 minutes, stirring once halfway through cooking.
  • Stir in coriander. Cook, covered, for 2 minutes.
  • Remove from oven. Uncover. Stir in lime juice, salt and pepper.

¼ cup olive oil
2 cups chopped onions
2 medium red bell peppers, coarsely chopped

Steps:

  • Drain black beans, reserving 1/2 cup liquid. Set aside.
  • Heat oil in a large, heavy pot over medium-high heat. Add onions, bell peppers, and garlic; saute until onions are soft and translucent, about 10 minutes. Add chili powder, oregano, cumin, and cayenne pepper; cook and stir until fragrant, about 2 minutes.

1 tablespoon olive oil
1 onion, chopped
2 red bell pepper, seeded and chopped
1 jalapeno pepper, seeded and minced
10 fresh mushrooms, quartered
6 roma (plum) tomatoes, diced

1 teaspoon ground cumin
1 tablespoon chili powder

Steps:

1 pound cremini or portobello mushrooms, or both, minced (see Tip)
1/3 cup neutral oil, such as grapeseed
Salt and black pepper
1 medium yellow onion, finely chopped
2 red bell peppers, finely chopped

3 garlic cloves, minced
1 teaspoon ground mild chile, such as chile California
3/4 teaspoon chipotle powder

Steps:

  • Spread the minced mushrooms on a clean dish towel or paper towel and squeeze out excess liquid. Heat the oil in a medium pot over high. Add the mushrooms with a pinch each of salt and pepper and cook, stirring every minute or so, until the mushrooms sear to a darker color and any remaining water in the mushrooms has cooked off, about 5 minutes.
  • Lower the heat to medium and add the onion. Cook, stirring occasionally, until the onion softens and browns slightly, about 5 minutes. Add the bell peppers, jalapeño and garlic and cook for an additional 2 minutes, stirring frequently, until fragrant and beginning to brown. Add the chile powder, chipotle powder, cumin and cinnamon and stir until fragrant, about 1 minute, then add the tomato paste and mix.
  • Lower the heat to medium-low and add the canned diced tomato and its juices, beans, broth, sugar and porcini mushrooms, if using. Season with salt and pepper to taste. Cover with the lid ajar and simmer, stirring occasionally, for 20 minutes to allow the flavors to meld. Divide among bowls and serve with sour cream and cilantro.

1 pound (about 2 1/2 cups) dried black beans, picked over and rinsed
2 medium onions, chopped
6 garlic cloves
3 tablespoons vegetable oil
1 tablespoon ground cumin
7 1/2 cups water
3 ounces (about 6) dried ancho chilies*, stemmed, seeded, and torn into pieces (wear rubber gloves)
a 28-ounce can tomatoes including the juice, puréed coarse
1 cup chicken broth
1 red bell pepper, chopped
1 teaspoon dried orégano, crumbled
1/3 cup chopped fresh coriander, or to taste
2 tablespoons fresh lime juice, or to taste
avocado salsa (recipe follows) as an accompaniment if desired
sour cream as an accompaniment if desired
For salsa
1 avocado (preferably California)
1 1/2 tablespoons fresh lime juice, or to taste
1/2 cup finely chopped red onion
1 fresh or pickled jalapeño, seeded and minced (wear rubber gloves)
*available at Hispanic markets, some specialty foods shops, and some supermarkets

Steps:

  • Make salsa:
  • Halve and peel the avocado and cut it into 1/4-inch dice. In a bowl toss the avocado with the juice, the onion, the jalapeño, and salt and pepper to taste. Makes 1 1/2 cups.
  • Make chili:
  • In a large bowl let the beans soak in enough water to cover them by 2 inches for 1 hour and drain them. In a large heavy kettle cook the onions and 4 of the garlic cloves, minced, in the oil over moderate heat, stirring, until the onions are softened, add the cumin, and cook the mixture, stirring, for 30 seconds. Add the beans and 6 cups of the water and simmer the mixture, uncovered, adding more water if necessary to keep the beans barely covered, for 1 hour, or until the beans are tender.
  • While the beans are simmering, in a small saucepan bring the remaining 1 1/2 cups water to a boil, add the chilies, and remove the pan from the heat. Let the mixture stand for 20 minutes and in a blender puree the chilies with the liquid. Add the chili puree, to the bean mixture with the tomato puree, the broth, the bell pepper, the orégano, and salt to taste and simmer the mixture, uncovered, stirring occasionally, for 30 minutes. Stir in the coriander, the lime juice, and the remaining 2 garlic cloves, minced, and simmer the chili for 5 minutes.
  • The chili may be frozen or made 4 days in advance, cooled, uncovered, and kept covered and chilled. Serve the chili with the avocado salsa and the sour cream.
