4 skinless boneless chicken breast halves, cut into 3/4-inch pieces
1/2 cup plus 1 1/2 teaspoons cornstarch
1/2 cup canned chicken broth
1 tablespoon rice vinegar
1 tablespoon oyster sauce
1 tablespoon soy sauce
2 teaspoons sugar
1/2 cup vegetable oil
5 green onions, thinly sliced
1 tablespoon chopped peeled fresh ginger
1 tablespoon chopped garlic
1/2 red bell pepper, diced

Steps:

  • Place chicken in medium bowl; season with salt and pepper. Add 1/2 cup cornstarch and toss until chicken is well coated. Transfer chicken to colander and toss to remove excess cornstarch.
  • Place chicken broth in small bowl. Add remaining 1 1/2 teaspoons cornstarch and stir until dissolved. Add vinegar, oyster sauce, soy sauce and sugar and mix thoroughly.
  • Heat oil in heavy large skillet over high heat until oil is very hot, about 5 minutes. Add chicken and fry until just cooked through, stirring occasionally, about 5 minutes. Using slotted spoon, transfer chicken to plate. Pour off all but 1 tablespoon oil from skillet. Add green onions, ginger and garlic, then bell pepper to skillet and stir-fry over high heat until bell pepper is crisp-tender, about 2 minutes. Return chicken to skillet; add broth mixture and stir until sauce thickens, about 1 minute.

This recipe is my mother's and it was handed down to me. It's one of my favorite recipes. It's really good.

2 lbs boneless chicken breasts
1 (16 ounce) spaghetti sauce
1 cup cheese, any kind, shredded
Italian seasoned breadcrumbs
2 -3 eggs
3 tablespoons milk
oil, for frying

Steps:

  • Preheat oven 375°.
  • Take a medium bowl beat eggs with 3 tablespoons of milk and set aside.
  • In another medium bowl put bread crumbs in the bowl.
  • Take a skillet put some oil in the skillet.
  • Turn the stove on medium heat.
  • Take the chicken and roll it in the egg mixture and then roll it in the bread crumbs.
  • Cook chicken on both side till lightly brown.
  • When that's done, put in a 9x13-inch baking dish or pan.
  • Open the spaghetti sauce and pour it on top of the chicken; sprinkle cheese on top.
  • Put it the 375° oven and bake for 15 to 20 minutes.

6 cups chicken chopped cooked
2 (10 1/2-ounce) cans cream of mushroom soup
1 (10 1/2-ounce) can cream of chicken soup
1/2 pound mushrooms fresh mushrooms, sliced and sautéed in 2 tablespoons butter or 1 6-ounce can sliced mushrooms
4 cups celery chopped
2 (8 1/2-ounce) cans water chestnuts sliced
1 cup almonds sliced, lightly toasted
Paprika
1 teaspoon soy sauce, to taste

Steps:

  • 1. Mix the first 6 ingredients together in a large bowl. Pour into a 12 x 16-inch baking dish which has been buttered. Bake 45 minutes in a 350° oven.2. Leave in oven to keep warm while preparing the following: Place almonds in shallow pan with a lot of room. Toast about 10 to 12 minutes in 325° oven. Watch carefully, as they get too dark or burn easily. Put toasted nuts on top of baked chicken and toss together just before serving. Add no salt, but sprinkle generously with paprika. Serve with soy sauce, if desired.

1/4 cup salad oil

Steps:

  • Place one cut up fryer or 4 breasts in a casserole.
  • Combine All other Ingredients.
  • Pour sauce over chicken.
  • Place in 350 degree Oven.
  • After 1 hour turn chicken.
  • Back another 30-45 minutes.
  • Serve with white rice.
