HOMEMADE COOKIE CAKE
Homemade cookie cake is so easy and so much tastier than the store-bought version! Perfect for special occasions and simple enough for an everyday treat! Food coloring can be added to the buttercream, if desired.

- Beat brown sugar, unsalted butter, and white sugar together in a bowl using an electric mixer until light and fluffy, 3 to 4 minutes. Mix in egg and 2 teaspoons vanilla extract until smooth. With the mixer on low speed, add flour, baking soda, and salt and blend until batter is just mixed. Fold chocolate chips into batter. Batter will be thick. Chill in refrigerator at least 30 minutes to overnight.
- Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch cake pan with parchment paper.
- Spread batter into the prepared cake pan.
- Bake in th preheated oven until edges are golden brown, about 20 minutes. Slightly cool cake in the pan before transferring to a wire rack to cool completely, about 30 minutes.
- Beat shortening and butter together in a bowl using an electric mixer until smooth. Slowly beat in 3 cups confectioners' sugar until smooth. Mix water and 1 teaspoon vanilla extract into confectioners' sugar mixture; add remaining confectioners' sugar and mix until buttercream is smooth. Add more water to thin, if needed.
- Spread buttercream onto cookie cake.

- Heat oven to 375°. Grease cookie sheet with shortening. Beat brown sugar, butter and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, nutmeg, salt and baking soda. Stir in apple.
- Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet.
- Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to wire rack; cool. Store loosely covered.

- 1. Cream together the butter and sugar till the mixture is light and fluffy. Beat in the egg. Fold in he sour cream. Stir in the flour a little at a time, beating till the mixture is well blended. Wrap the dough and chill thoroughly Roll the dough on a lightly floured surface to 3/8 an inch thickness. Cut with a floured 2 inch round cutter. Place rounds on an ungreased baking sheet. Bake at 350 till edges are golden, 8-10 minutes.

- 1. Preheat oven to 350 degrees. Grease and flour 4 6-inch pie or 7-inch cake pans.
- 2. Combine sugar flour and salt. Mix baking soda in buttermilk. Stir into the dry ingredients.
- 3. Gradually add the melted shortening, beating well. Batter will be moist but very stiff.
- 4. Divide evenly and press into prepared pans. (Batter should not stick to your hands; add a little flour if it does.)

- Preheat oven to 350°F (177°C). Spray a 9-inch pie dish or cake pan with nonstick spray. Set aside.
- In a large bowl using a hand-held mixer or stand mixer fittedwith paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and beat on medium speed until creamy, about 1 minute. Mix in egg, egg yolk, and vanilla on medium-high speed until combined. Scrape down the sides and bottom of the bowl as needed.
- In a separate bowl, combine flour, cornstarch, baking soda and salt. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be quite thick. Add 1 and 1/4 cups chocolate chips and mix for about 5 seconds until evenly disbursed.
- Press the cookie dough evenly into the prepared pan. Bake for 20-25 minutes or until the cake is lightly golden brown (could be up to 30 minutes, depending on your oven). Use a toothpick to test for doneness. You may want to cover the cake loosely with aluminum foil after 15 minutes to avoid heavy browning around the edges. Remove from the oven and set the pan on a wire rack to cool completely. Once cooled, use a sharp knife or metal spatula to loosen the sides of the cookie cake from the pan and transfer to a serving dish. (Or use can serve directly from the pan.)
