- Empty undiluted frozen apple juice into decorative pitcher or 2-quart serving carafe. Fill juice container with club soda (3 times) and pour into the pitcher; stir well.
- Chill, and serve in fluted champagne glasses.

This refreshing blend of apricot, orange, and grapefruit juices is a step up from plain juice but no more difficult to make. Sparkling mineral water adds bubbles without alcohol.

- Place the peelings and cores into a saucepan, and stir in the water. Bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, until the water picks up the apple flavor and color, about 30 minutes. Drain the apple juice, discarding solid pieces, and stir in the sugar until dissolved. Allow to cool before drinking.
