APPALACHIAN GRAVY BREAD

Appalachian Gravy Bread image

This is a classic Appalachian meal. Not especially healthy but cheap, uses up leftovers, and very satisfying! When I was growing up, we would (individually) eat gravy bread several times a week -- as a result, we never had any leftover gravy to feed to the dogs. It was also the reason that we never had any bread heels that went to waste. If you've never tried this, then I'd say that you're in for a special treat, especially if you're a "meat and potatoes" type of person. Enjoy! big pat.

TRADITIONAL APPALACHIAN SPOON BREAD

Traditional Appalachian Spoon Bread image

Creamy and comforting side dish that goes well with a hearty beef stew or winter-time soup. My grandfather made this and shared his recipe with me. Dish out with a spoon and serve with plenty of real butter. Enjoy!

Provided by GagesMom2

Categories     Bread     Quick Bread Recipes

Time 1h

Yield 6

Number Of Ingredients 9

2 ¾ cups milk
1 cup white cornmeal
2 tablespoons butter, softened
1 teaspoon salt
4 large eggs, separated
1 tablespoon white sugar
½ teaspoon cream of tartar
⅛ teaspoon cream of tartar
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an oven-proof cast iron Dutch oven or a deep baking dish.
  • Heat milk and cornmeal in the top of a double boiler over simmering water, stirring frequently, until thick and creamy, about 5 minutes. Remove cornmeal mixture from heat and stir in butter and 1 teaspoon salt until well combined.
  • Beat egg yolks, sugar, and 1/2 teaspoon cream of tartar together in a bowl until smooth; stir into cornmeal mixture.
  • Beat egg whites, 1/8 teaspoon cream of tartar, and 1 pinch salt together in a separate bowl using an electric mixer until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak. Gently fold egg white mixture into cornmeal mixture until well mixed and fluffy; pour into prepared Dutch oven.
  • Bake in the preheated oven until golden brown with a moist center, about 30 minutes. Allow to rest for 10 to 15 minutes before serving.

APPLE-SAUSAGE GRAVY BOATS

Apple-Sausage Gravy Boats image

Step outside the box and style up your sausage gravy with a bit of sweet apple flavor and serve in a crusty French bread boat. But if you still prefer biscuits with sausage gravy, just try a new gravy flavor.

Provided by lutzflcat

Yield 6

Number Of Ingredients 8

1 (16 ounce) loaf French bread
1 (16 ounce) package bulk pork breakfast sausage (such as Jimmy Dean®)
1 small apple - peeled, cored, and finely chopped
⅓ cup all-purpose flour
2 cups whole milk, or more to taste
1 cup apple juice
1 teaspoon Dijon mustard
salt and ground black pepper to taste

Steps:

  • Cut bread into six 4-inch pieces. Hollow out an oval shape in the top of each piece; scoop out some of the bread inside with your fingers or a spoon and discard. Set bread "boats" aside.
  • Heat a large skillet over medium-high heat. Add sausage and apple. Cook, breaking up sausage with a spoon, until crumbly and no longer pink, about 8 minutes. Sprinkle flour over the sausage mixture and cook, stirring constantly, until it has been absorbed by the fat, about 3 minutes.
  • Reduce heat to medium-low and gradually pour in 2 cups milk and apple juice; bring to a simmer. Stir and simmer until gravy thickens, 5 to 7 minutes. If gravy is too thick, add more milk to thin it out to your desired consistency. Stir in Dijon and season with salt and pepper.
  • Ladle the sausage gravy into the bread boats, allowing some to spill over the sides.

APPALACHIAN BREAD BAKING | SIMPLY APPALACHIAN
2015-12-06 Fry bread is made by mixing wheat, water and salt into a doughy substance and then frying it in an inch-deep pan of hot lard. While many cooks today eschew the dish for its high fat content, the fry bread of old is one of the reasons the Indian nation thrived. Many restaurants in Western North Carolina still make and serve fry bread.
