ANCIENT HONEY CAKES (RICE FLOUR COOKIES WITH NUTS OR POPPY SEEDS)



Ancient Honey Cakes (Rice Flour Cookies with Nuts or Poppy Seeds) image

In Ancient temples, they offered 'Honey Cakes' to the goddess. I Imagine that they were something like this! I adapted the rice flour for modern tastes, although you can try barley flour if you wish. Gluten-free! Sugar-free!

½ cup butter, softened
½ cup honey
2 eggs, slightly beaten
2 cups rice flour
¼ teaspoon baking powder
¼ teaspoon ground cardamom
2 teaspoons hemp seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Beat butter and honey together in a bowl using an electric mixer until smooth and creamy; add eggs and mix well. Mix rice flour, baking powder, and cardamom into creamed butter mixture until dough is just mixed. Roll dough into small balls, about 1 heaping teaspoon each.
  • Pour hemp seeds into a bowl and press each dough ball into the seeds, coating half of each ball. Transfer dough balls to the baking sheet, gently pressing to 1/4-inch thickness.
  • Bake in the preheated oven until edges are golden, about 20 minutes.

2/3 cup sugar
3/4 cup honey, lukewarm
1 egg
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground coriander
1/2 teaspoon ground aniseed
1/2 teaspoon nutmeg
1/2 cup kirsch (or milk)
4 1/2 cups flour
2 teaspoons baking powder
milk (for brushing)

Steps:

  • Beat sugar, honey, egg, spices and Kirsch (or milk) until smooth and well blended.
  • Sift the flour with the baking powder. Stir it into the egg mixture until a stiff dough forms.
  • Knead lightly on a floured board. Cover the dough and let it rest one hour.
  • Roll dough to 1/2-inch thickness. Cut into 3-inch rounds. Brush with a little additional milk.
  • Bake at 325 for 15 - 20 minutes or until lightly browned.

3 egg whites
1/4 teaspoon cream of tartar
3/4 cup granulated sugar
2 Toblerone chocolate bars, fruit & nut finely chopped (100 g each)
3 tablespoons flour
3 tablespoons icing sugar

Steps:

  • Heat oven to 300°F
  • Beat egg whites and cream of tartar in large bowl with mixer on high speed 3 to 5 minute or until soft peaks form.
  • Beat in granulated sugar, 1 tablespoons at a time, until stiff peaks form.
  • Mix chocolate and flour; gently stir into egg whites.
  • Drop tablespoonfuls of egg white mixture, 1 inch apart, onto 2 parchment paper-covered baking sheets.
  • Bake in top and bottom thirds of oven 24 to 26 minute or until light golden brown, rotating baking sheets after 12 minute
  • Transfer to wire racks; cool completely.
  • Sprinkle with icing sugar.
