Baked Pork Chops and Apples image

I found this in a pamphlet from the orchard (about Maryland apple orchards) a few years ago when we were picking apples. It is one of the tastiest things I have ever made!

2 tablespoons butter
6 pork chops
4 apples
1/4 cup brown sugar
1/2 teaspoon cinnamon

Steps:

  • Peel, core, and slice the apples.
  • Preheat the oven to 350 degrees.
  • Melt the butter in a skillet.
  • Brown the pork chops on both sides in the butter.
  • Grease (or spray) a large baking dish.
  • Put the apple slices in the bottom of the dish.
  • Mix the brown sugar and cinnamon.
  • Sprinkle the cinnamon and sugar over the apples.
  • Place the pork chops on top of the apples.
  • Cover with foil and bake for 1 and 1/2 hours.

1 medium unpeeled cooking apple, sliced
2 tablespoons packed brown sugar
1/4 teaspoon ground cinnamon
2 bone-in pork rib chops, about 3/4 inch thick (about 1/4 pound each)

Steps:

  • Heat oven to 350°F. Place apples in 1 1/2-quart rectangular casserole. Sprinkle with brown sugar and cinnamon. Cover with foil; bake 15 minutes.
  • Trim fat from edge of pork. Spray 8- or 10-inch nonstick skillet with cooking spray; heat over medium heat 1 to 2 minutes. Cook pork in hot skillet about 6 minutes, turning once, until light brown.
  • Place pork in single layer on apples. Cover and bake 10 to 12 minutes or until pork is no longer pink when cut near the bone, meat thermometer reads 145°F and apples are tender.

4 loin pork chops (thick)
1 tablespoon butter
Salt to taste
Pepper to taste
2 Granny Smith apples (cored, peel left on, sliced into thin wedges)
1/2 teaspoon cinnamon (ground)
3 tablespoons brown sugar (packed)
1/4 cup apple juice (cider, apple brandy, or white wine)

Steps:

  • Gather the ingredients. Heat the oven to 350 F.
  • Arrange the apple slices in a buttered 13 x 9-inch baking dish . Sprinkle with the cinnamon and brown sugar.
  • Melt the butter in a skillet over medium heat. Sprinkle the pork chops with salt and pepper, then brown on both sides in the butter. Transfer the pork chops to the prepared baking dish, arranging over the apples.
  • Add the apple juice, cider, brandy, or wine to the hot pan; swirl and scrape up any browned bits. Pour over the chops.
  • Cover the baking dish tightly with foil and bake for 35 to 45 minutes, or until pork chops register at least 145 F-the minimum safe temperature for pork -on an instant-read thermometer inserted into the thickest part of a pork chop.

4 1 1/2-inch center-cut loin pork chops, about 1 1/2 pounds total weight
Salt to taste if desired
Freshly ground pepper to taste
2 Golden Delicious apples, about 3/4 pound
1 tablespoon corn, peanut or vegetable oil
1/4 cup finely chopped onion
1 tablespoon brown sugar
2 tablespoons red-wine vinegar
1 red ripe tomato, peeled, seeded and cut into 1/4-inch cubes, about 3/4 cup
1/2 cup fresh or canned chicken broth

Steps:

  • Trim most of fat from chops andsprinkle on both sides with salt and pepper.
  • Quarter, core and peel apples.
  • Heat oil in skillet large enough to hold chops in one layer. Cook until nicely browned on one side, 2 or 3 minutes. Turn and cook again until browned, 2 or 3 minutes more.
  • Continue cooking chops about 15 minutes, turning often. Arrange quartered apples around the chops. Cover closely and continue cooking 5 minutes.
  • Transfer chops and apples to warm platter and cover with foil. Pour off fat from skillet. Add onions and stir until wilted.
  • Add brown sugar and vinegar and stir. Add cubed tomato and broth. Stir to dissolve brown particles that cling to skillet. Cook, stirring, 2 minutes. Add any liquid that accumulated around the chops. Cook until sauce is reduced to about 3/4 cup.
  • Pour hot sauce over chops and apples and serve.

1 dash garlic powder
4 -6 baking potatoes (optional)

Steps:

  • Place pork chops in deep baking dish.
  • Mix soup, apple juice or cider, onion, thyme, soy sauce and garlic powder and pour over chops.
  • Bake at 325 degrees Fahrenheit for approximately 1 1/2 hours or until chops are no longer pink.
