STICKY APPLE AND GINGER CAKE
Deliciously sticky, fruity easy-to-make cake bars. They're like a cross between gingerbread and fruit cake, and make a great easier alternative to Christmas cake.

Steps:
- Pre-heat oven to 200C / 390F and line a 8 x 8 inch square baking pan with baking paper.
- Sift the flour, baking powder and ginger together in a medium bowl.
- Melt the butter, syrup and sugar together in a saucepan. Add to the flour together with the stem ginger, dried fruit, apple and egg. Stir it all together with a wooden spoon until just combined.
- Pour the batter into the prepared tin, then bake for 30 minutes until risen and golden. Cover with foil half way through cooking to prevent over-browning.
- Optional: Melt the white chocolate in a jug in the microwave (in 30-second spurts - I find 3 times does it), then drizzle all over the cake.
- When cool (and the chocolate - if you've used it - is set), slice into 8 bars.

APPLE-GINGER SCONES

Steps:
- Heat oven to 400°F. Spray cookie sheet with nonstick cooking spray. In medium bowl, combine flour, sugar, baking powder and salt; mix well. With pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Stir in apple and ginger.
- Beat egg in small bowl. Stir in cream and lemon peel. Add to dry ingredients; stir just until moistened.
- On floured surface, gently knead dough 5 or 6 times. Place dough on sprayed cookie sheet; press to form 8-inch round, about 1 inch thick. Cut into 8 wedges; separate wedges slightly.
- Bake at 400°F. for 15 to 20 minutes or until light golden brown and center is set.
- In small bowl, combine powdered sugar and lemon juice; blend well. Drizzle warm scones with glaze. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch pan. Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
- In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
- Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.

EXCELLENT APPLE GINGERBREAD
This is a traditional Polish Christmas gingerbread with apple filling. Believe me, it is excellent and easy to make!

- Melt 1/4 cup of butter in a large skillet over medium heat. Add the apples; cook and stir until tender. Set aside and allow to cool.
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
- In a large bowl, mix 3/4 cup of butter, honey, brown sugar and white sugar until light and fluffy using an electric mixer. Beat in the eggs one at a time, mixing each one until blended. Combine the flour, baking soda, cinnamon, pumpkin pie spice, cloves, ginger and salt; stir into the batter, alternating with the milk. Stir in the walnuts and cooked apples just until evenly distributed. Divide evenly between the prepared pans and spread evenly.
- Bake the cake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Cool the cakes on a wire rack. Keep the oven on for the walnuts.
- To make the candied walnuts for the top of the cake, whip the egg whites in a clean bowl until foamy. Stir in the brown sugar, cinnamon and walnuts. Spread the nuts out on a baking sheet.
- Bake in the preheated oven until toasted and fragrant, about 10 minutes. Cool completely before using.
- To make the frosting, mix together the butter, confectioners' sugar and cream cheese until smooth. Place one layer of cake on a serving plate and spread with a thin layer of the cream cheese icing. Top with most of the apple filling and spread evenly. Place the other layer of cake on top with the bottom facing up. Spread remaining cream cheese icing over the top and sides. Decorate the top with remaining apple filling and sprinkle with candied walnuts.

GINGER SQUARES

- Preheat the oven to 350.
- Butter a 9-inch square pan.
- In a medium saucepan, melt the butter.
- Remove from heat and stir in the brown sugar.
- When cool, beat in the egg and vanilla extract.
- In a mixing bowl combine the flour, chopped ginger, baking powder, ground ginger and salt.
- Add the butter-sugar mixture.
- Stir well.
- Scape batter into pan.
- Bake the squares for 20-25 minutes.
- The edges should be slightly bubbled and glazed-looking, and there will be a tissue-thin layer on top of the (baked) batter.
- Glaze: While the squares are baking, stir together the lemon juice and confectioner's sugar.
- As soon as the ginger squares come out of the oven, spread the glaze over them.
- Cut into squares when cool.

APPLE CRISP WITH FRESH GINGER
This recipe came to us in 1987 from Eric Michael Gillett, then the ringmaster for the Ringling Brothers and Barnum & Bailey Circus. Citrus zest and fresh, grated ginger set this recipe apart from the rest.

- Peel, quarter and core apples and slice each into sixteenths.
- Mix slices with lemon juice, zest and grated ginger.
- Cut butter into small bits and mix with flour, sugar and cinnamon until mixture resembles coarse crumbs.
- Place apples in bottom of 4 buttered baking dishes (1 1/2- to 2-cup capacity) and sprinkle butter mixture over top.
- Bake at 350 degrees for 35 to 40 minutes, or until apples are cooked but still hold their shape.
- Serve with clotted cream or heavy cream alongside.

CHICKEN WITH APPLES AND GINGER

- Remove as much skin and external fat as possible from chicken. Heat 1 tablespoon oil in nonstick skillet or 2 tablespoons oil in regular skillet large enough to hold chicken pieces in single layer. Brown chicken on both sides in hot oil over medium heat; remove and set aside.
- Saute onion and garlic in same pan until onion is soft. Add wine, apple juice and ginger to pan and cook over medium-high heat until liquid is reduced to 1 cup.
- Stir cornstarch into yogurt. Add to pan with apples and chicken and season with pepper. Cook, covered, for about 20 minutes, until chicken is cooked through.
- Arrange noodles on each of 4 plates. Spoon chicken and sauce over noodles.

This recipe came from a culinary arts teacher in London. She gave a piece of the dessert to my mother to sample, along with the recipe. That was back in the early 1970's, and I'm still making it today! I still have the yellowed paper that the recipe was typed on!) If you don't have Golden Syrup (a British product), maple syrup or honey can be used instead.

- Preheat oven to 350°F, Grease and flour an 8-inch square cake pan and set aside.
- Peel, core and chop the apples.
- In a bowl, cream butter and sugar until light and fluffy.
